Cowboy Beans are a great side dish or main course...it makes the perfect dish for potlucks, cookouts, camping trips, or parties. This delicious recipe is made with a variety of beans, ground beef, and delicious bacon. Cooked over a grill in a skillet adds even more flavor, but isn't required.

1 lb ground beef, browned
1 lb bacon
2 tbsp bacon drippings
3 15 oz cans kidney beans
3 15 oz cans white beans
3 15 oz cans pork and beans
3 small onions, diced
1 cup brown sugar
1 cup ketchup
1/2 cup molasses
3 tbsp yellow mustard

Steps:

  • In a large cast iron skillet, fry bacon until crisp. Drain and crumble.
  • In the same cast iron skillet, cook the ground beef and onions until the meat is no longer pink, drain off excess liquid.
  • Drain off all the beans except for one can of pork and beans, Combine the beans, cooked beef, bacon, and onions and remaining ingredients.
  • Cook on grill until hot and beans are tender. Optional: Cook in oven on 350 until beans are cooked well if grill not available.

2 - 28 oz cans Pork & Beans (I used B&M original baked beans)
1/2 large sweet onion (diced (Vidalia or other sweet onion is fine))
1 large bell pepper (finely diced (I used yellow, use whatever color you like))
1/2 lb bacon (uncooked chopped into pieces (I prefer uncured, nitrate, nitrite free))
8 oz 1 cup organic tomato sauce (or 1/2 15 oz can)
1 cup organic Ketchup
1/2 cup molasses (unsulphured)
1/4 cup apple cider vinegar (or replace with white vinegar)
1/8 cup spicy brown mustard (heaping)
1/8 cup yellow mustard (heaping (making with only yellow mustard increase to rounded 1/3 cup))
2 Tablespoons Worcestershire Sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Dash of Cayenne Pepper (more if you like heat)
Pinch of Kosher Salt
Couple Grinds of Black Pepper

Steps:

  • Preheat oven to 350°F. In a large mixing bowl, add all of the sauce ingredients and stir to combine, whisking if needed.
  • Add pork and beans (undrained), tomato sauce, and diced onion and bell pepper. Using a large spoon or spatula stir to combine beans with sauce.
  • Pour into casserole baking dish or cast iron skillet or dutch oven. Bake uncovered for 1 1/2 - 2 hours until bubbly and bacon is crispy. If crisper bacon is desired, with beans on middle rack, broil for 2-3 minutes until desired crispness is reached. Allow to rest for 10 minutes and serve warm.
  • Baked beans can be made ahead of time, refrigerate. Remove from fridge for 1 hour prior to baking, bake as directed.
  • Baked beans may be frozen, but only after they've been baked. Cool completely and transfer to freezer storage container. Beans are good up 7 days refrigerated; 6 months frozen.

Cowboy Baked Beans (aka Calico Beans) are loaded with ground beef and applewood smoked bacon. A great party food recipe for large groups.

1 lb bacon (applewood smoked )
1 large yellow onion (chopped)
2 cloves garlic (minced)
1 lb ground beef
48 ounces baked beans ((don't drain))
32 ounces kidney beans ((drain))
16 ounces cannellini beans ((drain) )
32 ounces black beans ((drain))
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 cup ketchup
2 tablespoons yellow mustard

Steps:

  • Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.
  • Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!
  • Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don't remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.
  • Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.
  • Next, add 3 cans of baked beans (don't drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).
  • Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.
  • Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn't all fit in one standard 9 x 13, you need a deeper dish.
  • Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

1 lb Ground Hamburger (93/7% Lean)
1 Cup Ham (Cubes)
1 Can Kidney Beans (Rinsed and Drained)
1 Can Navy Beans (Rinsed and Drained)
2 Cans Pork and Beans
1/4 Cup Brown Sugar
1 Bottle Chili Sauce
1 Cup Beef Broth
1 tbl Yellow Mustard
1 Cup Yellow Onion (Diced)
1 Bell Pepper (Red, Green, Yellow, OR Orange Diced)

Steps:

  • Place 16-18 hot coals as a base for the bottom and place 12 inch Dutch Oven over coals. Allow Dutch Oven to heat up. Once hot add sliced bacon. I like to cut bacon in about 3/4in slices and throw them into the hot Dutch Oven and let them cook stirring as needed
  • Remove any excess oil and fat. It's easiest to use a few paper towels to absorb the excess fat.
  • Add 1 lb of ground beef to the cooked bacon. I prefer a lean ground sirloin but choose what you prefer.
  • Chop ground beef and allow to fully cook. You may need to drain excess fat from the hamburger depending on what you choose.
  • Add diced Onion and Diced Bell Pepper. Green Bell Pepper gives a nice bite to this recipe, but Red or Yellow is also a great option! Stir to combine and allow onions and bell pepper to soften for a few minutes.
  • Drain Kidney Beans and Navy Beans. Add Kidney, Navy and Pork and Beans to meat mixture.
  • Pour Chili Sauce, broth, and Yellow Mustard on top.
  • Add ham cubes and brown sugar and stir to combine.
  • Cover with lid and add 12-14 hot coals on top of Dutch Oven
  • Stir every 15 minutes and cook for 60-70 minutes.
  • In a large skillet on the stove over medium/high heat add bacon slices. I like to cut bacon in 3/4in pieces. Stir as needed until fully cooked.
  • Remove excess fat using paper towels to carefully remove.
  • Add 1 lb Lean Ground Sirloin to bacon and chop to break up beef. Feel free to use any ground beef. You may need to remove excess fat after cooking.
  • Dice Onion and Bell Pepper. Green Bell Pepper gives a nice bite to this recipe, but Red or Yellow is also a great option! Stir to combine and allow onions and bell pepper to soften for a few minutes.
  • Pour meat mixture into Slow Cooker or Dutch Oven
  • Drain Kidney Beans and Navy Beans. Add Kidney, Navy and Pork and Beans to meat mixture.
  • Pour Chili Sauce, broth and Yellow Mustard on top.
  • Add ham cubes and brown sugar and stir to combine.
  • Cover Dutch Oven or Slow Cooker with Lid
  • Bake in 350 Degree Pre-heated Oven for 1 hour stirring every 15 minutes OR - Use Slow Cooker and set to low for 4 hours.

10 slices thick-cut bacon
30 ounces pinto beans (, rinsed and drained)
15 ounces black beans (, rinsed and drained)
3/4 cup BBQ sauce
1 jalapeno (, finely minced)
1 yellow onion (, chopped)
1 cup light brown sugar
1 tablespoon yellow mustard

Steps:

  • Heat a large skillet or cast iron pan over medium heat. Add bacon strips. Cooke until nearly crispy. Remove to a paper towel lined plate. When cool, cut into 1-inch pieces.
  • Drain excess bacon grease from cast iron, carefully wiping out with a paper towel.
  • Add black and pinto beans, BBQ sauce, jalapeno, yellow onion, brown sugar and yellow mustard. Mix well.
  • Bring to a simmer over low heat, stirring frequently. Cook for 20 minutes.

1 lb Thick cut bacon, diced

Steps:

  • Place the dried navy beans in a large pot covered by a few inches of water and leave to soak overnight. Drain the beans then place them back in the pot with fresh water and bring to a boil. Simmer the beans for one hour, or until tender, then drain, reserving all the liquid. Preheat your oven to 325 degrees F. In a 6 qt Dutch oven fry the bacon until crispy. Add the onions and cook until soft and translucent, stirring often. Add the garlic and cook for one minute. Add ground beef and cook until the beef is no longer pink. Drain the fat from the pan. Stir in the BBQ sauce, molasses, brown sugar, Worcestershire sauce, smoked paprika, and salt. Add 2 cups of the reserved bean water and all the beans. 1 ham hock
2 dried guajillo chiles
2 garlic cloves (minced)
2 white onions (coarsely chopped)
2 jalapeno peppers (chopped)
¼ cup dried cilantro
1 - 2 tablespoons chile powder
2 tablespoons smoked paprika
1 tablespoon cumin
1 - 2 tablespoons Kent's Mesquite Seasoning (see substitute)
1 tablespoon Kent's Original Seasoning (see substitute)

Steps:

  • Add the beans to a large pot and cover with about 1 inch of warm water.
  • Stir in the ham hock , guajillo chiles, garlic, onion and jalapenos.
  • Bring the beans to a boil for about 10 minutes.

4 cups dry pinto beans
1 pound thick-cut bacon, cut into pieces
2 whole green bell peppers, diced
1 whole onion, diced
1 cup brown sugar
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon chili powder, optional
2 teaspoons salt, more to taste
2 teaspoons black pepper, more to taste

Steps:

  • Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
  • In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.
