Steps:
- Put the water and beans in a large Dutch oven or a large pot and soak overnight. After soaking, you're ready for cooking.
- Rinse the beans and add fresh water. Add salt, pepper, and chili powder and bring to a boil uncovered. Reduce the heat to low and add chopped onions, tomatoes, bacon fat, and garlic. The beans need to cook very slowly for at least 8 hours with the cover on. You may need to add a little water at different times and you should stir once in a while.

Steps:
- Pick over beans and rinse well.
- Combine beans and water in a large kettle.
- Bring to boiling; cover; cook 2 minutes.
- Remove from heat and let stand 1 hour then pour into crockpot.
- Brown salt pork in a large skillet.
- Remove with a slotted spoon to crockpot.
- Sauté onion, garlic and green pepper in pan drippings; remove with slotted spoon to crockpot.
- Brown beef, a few pieces at a time in pan drippings; remove to crockpot with slotted spoon.
- Stir in salt, oregano, red pepper, cumin and tomato sauce.
- Add more water, if necessary to bring liquid level above beans.
- Cook on LOW for 10 hours or on HIGH for 6 hours, or until beans are tender.

Another of my husband's favorites. I got this recipe out of a cookbook called "Dining with Pioneers". It's apparently a collection of recipes by a group from Tennessee. This one was submitted by someone named Mae Hallum from Memphis.

Steps:
- In a Dutch oven or other large, heavy, oven proof pot fry bacon until crisp and set aside.
- Drain fat.
- In the same pan, cook ground beef, onion and celery until meat in brown and the onion and celery are tender.
- Meanwhile, dissolve bouillon cubes in boiling water.
- Add bouillon to meat mixture with the remaining ingredients and mix well.
- Cover and bake 1 hour and 15 minutes in a 375 degree oven until hot and bubbly.
- Crumble bacon over beans and serve.
- This makes a LOT of beans. I usually halve the recipe.
CHUCK WAGON BEANS
This is a recipe that my Mom fixed for all of us at home. This is from her old Betty Crocker cookbook circa 1971.

- 1. Heat oven to 375 degrees.
- 2. In Dutch oven, fry bacon until crisp; set aside. Drain fat from pan.
- 3. In same pan, cook and stir ground beef, onion and celery until meat is brown and onion and celery are tender. (Drain excess fat if needed).
- 4. Dissolve bouillon cubes in boiling water; stir bouillon and remaining ingredients into meat mixture.
- 5. Cover; bake 1 hour 15 minutes or until hot and bubbly. Crumble bacon; sprinkle over beans.

- In skillet, cook onion, bacon, garlic, and hamburger until bacon is crisp, onion is tender, and meat is browned. Drain.
- In a bowl, combine onion mixture, lima beans, baked beans, red kidney beans, butter beans, garbanzo beans, catsup, molasses, brown sugar, mustard, and Worchestershire sauce.
- Transfer bean mixture to a 3 quart casserole.
- Bake, covered, in a 375°F oven for 1 hour.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large pot over medium-high heat. Cook and stir bacon and onion in pot until the onion is tender, 7 to 10 minutes; add ketchup, dry mustard, brown sugar, Worcestershire sauce, hot pepper sauce, salt, and black pepper.

CHUCK WAGON PINTO BEANS
My husband doesn't care for beans but he really enjoyed these. Recipe is easy to make and reminded me of cooking a pot of beans over an open fire while camping. You can modify to your personal taste, for example, if you prefer ham flavor rather than ground beef; no salt; add a little more red pepper for more heat; etc. Hope you enjoy the recipe. Recipe is a modified version of a County Line BBQ recipe.

- Clean beans by rinsing. Place beans in 4 qrt. pan, cover beans with water, bring to a boil and turn off the stove. Soak for one hour. As beans soften and expand, add more water to cover, if needed.
- While beans are soaking, cook ground beef on stove until browned. Drain grease, remove ground beef from pan and pat with paper towel to absorb any extra grease. Set aside.
- Drain the bean's soak water (leave the bean residue on bottom of pan) and again, add enough water to fully cover.
- Add all remaining ingrediants and stir together.
- Cook on low to medium heat (low, slow boil), stirring every so often, for 2 to 3 hours or until beans are done to your preferred tenderness.
- Just before serving, add a sprinkle of grated sharp cheddar cheese on top.
