POTATO SALAD
I made this potato salad recipe when I worked in a small hospital. It was served in the cafeteria and to patients that were on diabetic, AHA and regular diets. -Dorothy Bayes, Sardis, Ohio

Steps:
- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and cool to room temperature., In a large bowl, combine the potatoes, celery, onion and relish. In a small bowl, combine the mayonnaise, mustard, salt, celery seed and pepper. Pour over potato mixture and toss to coat. , Cover and refrigerate until chilled. Top with eggs and sprinkle with paprika.

Steps:
- Cook potatoes ib jackets until tender.
- Peel and dice.
- Combine potatoes, onions carrots celery olives and egg, set aside.
- Add flour to grease from fried bacon and stir until it makes a smooth paste.
- Combine sugar, eggs mustard, water vinegar, salt and pepper, mix well.
- Add to flour paste.
- Place over low heat.
- Cook until thick, stirring constantly.
- Pour over potatoe mixture, mix lightly.
- Let stand in cold place for several hours.
COVERED BRIDGE BROCCOLI SALAD
This recipe comes from an old cookbook, and before you ask, I have no idea why they call it "covered bridge." But it is really good and always disappears quickly.

- In a large bowl, layer the vegetables, bacon, raisins and seeds. Combine salad dressing with sugar and vinegar. Spread over salad.
- Cover and refrigerate at least 24 hours. Mix well before serving.

- Boil potatoes with peel on for about 25-30 minutes until potatoes are tender, but still firm. After potatoes are cooked, remove from water and allow to cool until cool enough to handle. Peel and dice into small cubes and place in a large mixing bowl.
- Peel and dice 6 of the eggs (save 2 eggs for garnish) and place in the bowl with the potatoes. Add salt and pepper and lightly toss.
- In a small bowl, mix together mayonnaise, sour cream, sugar, mustard, relish, dill and any other mix-ins. Fold mixture into the eggs and potatoes until well combined.
- Slice remaining 2 eggs and layer on top of salad. Garnish with dill weed or paprika. Refrigerate overnight (or at least 6-8 hours).
