8 cinnamon sticks
1 (750 milliliter) bottle 190 proof grain alcohol

Steps:

  • In a large pot, combine apple juice, apple cider, sugar and cinnamon sticks. Bring to a boil, remove from heat, and let cool completely.
  • When juice mixture is cool, stir in the grain alcohol.

1 ½ cups white sugar, or to taste
1 (1 liter) bottle 190 proof grain alcohol (such as Everclear™)

Steps:

  • Place the apple cider, apple juice, cinnamon sticks, and sugar into a large pot. Bring to a boil over medium-high heat, stirring until the sugar has dissolved. Remove from the heat, and discard the cinnamon sticks. Allow the mixture to cool to room temperature, then stir in the grain alcohol. Pour into quart-size canning jars, seal with the lids and rings, and refrigerate until ready to serve.

1 graham cracker crust (9 inches)
1 package (8 ounces) cream cheese, softened
1/4 cup sour cream
4 envelopes (.74 ounce each) instant spiced cider mix
1-3/4 cups whipped topping
1 package (1.5 ounces) crunchy granola bars without raisins, crushed

Steps:

  • Pour pie filling into the crust. In a small bowl, beat cream cheese until smooth. Beat in the sour cream and cider mix until light and fluffy. Fold in whipped topping. Pour over pie filling. Chill until set. Just before serving, sprinkle with granola.

This is another dish I found in Ohio Magazine this month (October 2005). I can't wait to try it. The description says it's an old Vermont recipe. Boiled cider is apple cider that has been boiled down to a thick, syrupy consistency. To get one cup of boiled cider, you need to boil six cups of sweet cider. The best cider is made from a variety of different apples. One good mix is Foxwhelp (sharp and bitter), Wickson (sweet and juicy), Golden Russet (sweet and juicy) and Winter Banana (aromatic).

3 eggs, separated

  • Preheat the oven to 450 degrees. Let boiled cider cool. Line a 9-inch glass pie plate with piecrust.

1 pastry for 9" pie, 2 Crust
6 cups apples (Use cooking apples like Macs or Granny Smith's. Core and peel them)
1 cup apple cider or 1 cup juice
2/3 cup sugar
apple cider or juice
2 tablespoons cornstarch
2 tablespoons water
1/2 teaspoon cinnamon, Ground
1 tablespoon butter or 1 tablespoon regular margarine

Steps:

  • Divide the pastry almost in half and roll out the larger half on a lightly floured surface to a 13-inch circle.
  • Line a 9-inch pie tin with the pastry.
  • Trim the edge to 1/2-inch beyond the rim of the pie tin.
  • Combine the apples, 1 cup of apple cider and the sugar in a 3-quart saucepan and cook, over high heat, until the mixture comes to a boil.
  • Reduce the heat to low and simmer for 8 minutes or until the apples are tender.
  • Drain the apples, reserving the syrup.
  • Add enough additional apple cider to the syrup to make 1 1/3 cups.
  • Return the syrup and apples to the saucepan.
  • Combine the cornstarch and water in a small bowl and stir until well blended.
  • Stir the cornstarch mixture and the cinnamon into the apple mixture.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Remove from the heat and stir in the butter, then pour the mixture into the pastry lined pie tin.
  • Roll out the remaining pastry to an 11-inch circle.
  • Fold the pastry gently, so as not to tear it, into quarters and cut slits in the folds.
  • Gently unfold the pastry on to the top of the filling and trim the edge to 1-inch beyond the rim of the pie tin.
  • Fold the top crust under the lower crust and form a ridge by fluting the edge of the pie.
  • Bake in a 400 degree F. oven for 40 to 45 minutes or until golden brown.
  • Cool on a wire rack until slightly warm before cutting and serving.
  • NOTE:
  • This is the perfect pie to serve with the rich cheddar sauce in this file.

10 apples
1 orange (quartered)
4 cinnamon sticks
1 1/2 teaspoon nutmeg
2 teaspoons whole cloves
14 cups water
1/3 cup sugar
1/4 cup agave nectar
1/4 cup caramel sauce
1/2 cup caramel vodka (optional)
cinnamon sticks, apple slices, and orange slices for garnish (optional)

Steps:

  • Add sliced apples and oranges to large slow cooker. Don't worry about peeling them, you will strain later. Add cinnamon sticks, nutmeg, and cloves to the slow cooker. Fill the slow cooker with water almost all the way to the top. For me it was about 14 cups, but you can use more or less.
  • Cover slow cooker and cook on low 8 hours or high 4 hours.
  • After the cooking time, take a potato masher and mash the fruit fully in the slow cooker. Go slowly so you do not spill the water over the sides.
  • Pour cider through a strainer to remove any of the large fruit chunks and spices.
  • Follow by straining again through a fine-mesh strainer to make even more refined. Press the mixture through the mesh to get all the juice out that's possible. Return the remaining cider to the slow cooker.
  • Stir in sugar, agave nectar, and caramel sauce. Stir in alcohol if desired.
  • Keep on low while serving, or refrigerate for up to 4-5 days in an airtight container.
  • Serve hot, garnished with apple slices, orange slices, and cinnamon sticks. I dipped the rim of the glass in caramel sauce for some extra fun. Enjoy

  • In a food processor, combine the flour, cornstarch, sugar and salt. Add the butter and pulse in 1-second bursts until the mixture resembles coarse meal. Combine the milk and vinegar and drizzle it on top. Pulse in 1-second bursts until the dough just comes together. Turn the dough out onto a work surface, gather up any crumbs and pat into a disk. Wrap in plastic and refrigerate until chilled, about 30 minutes.
  • On a floured work surface, roll out the dough to an 11-inch round, a scant 1/4 inch thick; ease it into a 9-inch glass or ceramic pie plate. Trim the overhanging dough to 1 inch and fold it under itself. Crimp decoratively and chill the crust until firm, about 15 minutes.
  • Preheat the oven to 425°. Line the crust with parchment paper and fill with pie weights or dried beans. Bake in the lower third of the oven for about 15 minutes, until the crust is barely set.
