Chickpea and Couscous Delight image

This simple recipe is so enjoyable, I tend to make it frequently when I find I don't have time to make anything else!

1 cup water
1 cup uncooked couscous
1 (15 ounce) can garbanzo beans, drained
2 roma (plum) tomatoes, thinly sliced
1 cucumber, peeled and sliced
¼ teaspoon olive oil
¼ teaspoon white vinegar
garlic powder to taste
salt and pepper to taste

Steps:

  • Bring water to boil in a medium saucepan. Stir in couscous, and remove from heat. Cover, and let stand about 5 minutes, until liquid has been absorbed. Fluff with a fork.
  • In a large bowl, mix couscous and garbanzo beans. Toss in tomatoes and cucumbers. Stir olive oil and vinegar into the mixture. Season with garlic powder, salt, and pepper.

Our Favorite Lemon Herb Couscous Salad image

We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

Number Of Ingredients 12

1 1/2 cups dried Israeli couscous, also called pearl couscous
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, or mint
1/4 cup chopped walnuts, toasted
1/4 cup raisins, we love golden raisins

Steps:

  • Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.
  • While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

Easy, fresh and delicious! This came from my June 2007 issue of Cooking Light, and I don't want to lose this recipe. It is filled with fresh veggies and dressed with a light olive oil and red wine vinegar dressing.

1 cup chicken or 1 cup vegetable broth
1 cup uncooked whole wheat couscous
2 cups chopped seeded tomatoes (about 2 medium)
1 cup diced cucumber (about 1)
1 cup thinly sliced green onion (about 6)
1/2 cup grated carrot (1 medium)
1/2 cup red bell pepper
1 (15 1/2 ounce) can chickpeas, drained (garbanzo beans)
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh oregano or 1 teaspoon dried oregano
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes

Steps:

  • Bring broth to a boil in medium saucepan, and gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Place couscous in a large bowl, and cool completely. Fluff with a fork.
  • Stir in tomato, cucumber, and next 4 ingredients (through chickpeas); toss well.
  • Combine oil and the remaining ingredients in a small bowl; stir with a whisk. Add vinegar mixture to couscous mixture just before serving; toss gently.

MOROCCAN-INSPIRED COUSCOUS-CHICKPEA SALAD



Moroccan-Inspired Couscous-Chickpea Salad image

Number Of Ingredients 10

1⅓ cups couscous
1 teaspoon each: ground ginger and cumin
¼ teaspoon ground turmeric
1 can (15 to 16-ounces) garbanzo beans, drained
1 cup each: diced red bell pepper, grated carrots, sliced radishes
¾ cup each: diced apricots and roasted pistachios
4 scallions (white and green parts), sliced thin (about ½ cup)
¼ cup chopped fresh cilantro
Dressing: ⅓ cup each: olive oil, rice wine vinegar, and orange juice concentrate
Salt and ground black pepper

Steps:

  • Mix couscous ginger, cumin, and turmeric in a large bowl. Add 1¾ cups boiling water cover with plastic wrap, and let stand until water has completely absorbed, about 7 minutes. Fluff with a fork, and let cool slightly.
  • Add garbanzo beans, peppers, carrots, radishes, apricots, pistachios, scallions, cilantro. Whisk oil, vinegar, and orange juice concentrate in a medium bowl. Add desired amount of dressing to salad, along with a sprinkling of salt and pepper; toss to coat. Taste, adjust seasonings, and serve.
