CHICKPEA AND COUSCOUS DELIGHT
This simple recipe is so enjoyable, I tend to make it frequently when I find I don't have time to make anything else!

Steps:
- Bring water to boil in a medium saucepan. Stir in couscous, and remove from heat. Cover, and let stand about 5 minutes, until liquid has been absorbed. Fluff with a fork.
- In a large bowl, mix couscous and garbanzo beans. Toss in tomatoes and cucumbers. Stir olive oil and vinegar into the mixture. Season with garlic powder, salt, and pepper.

OUR FAVORITE LEMON HERB COUSCOUS SALAD
We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

Steps:
- Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.
- While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.
- Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

COUSCOUS-GARBANZO SALAD
Easy, fresh and delicious! This came from my June 2007 issue of Cooking Light, and I don't want to lose this recipe. It is filled with fresh veggies and dressed with a light olive oil and red wine vinegar dressing.

Steps:
- Bring broth to a boil in medium saucepan, and gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Place couscous in a large bowl, and cool completely. Fluff with a fork.
- Stir in tomato, cucumber, and next 4 ingredients (through chickpeas); toss well.
- Combine oil and the remaining ingredients in a small bowl; stir with a whisk. Add vinegar mixture to couscous mixture just before serving; toss gently.

MOROCCAN-INSPIRED COUSCOUS-CHICKPEA SALAD

- Mix couscous ginger, cumin, and turmeric in a large bowl. Add 1¾ cups boiling water cover with plastic wrap, and let stand until water has completely absorbed, about 7 minutes. Fluff with a fork, and let cool slightly.
- Add garbanzo beans, peppers, carrots, radishes, apricots, pistachios, scallions, cilantro. Whisk oil, vinegar, and orange juice concentrate in a medium bowl. Add desired amount of dressing to salad, along with a sprinkling of salt and pepper; toss to coat. Taste, adjust seasonings, and serve.

- Read the couscous packet's instructions to determine the right amount of liquid you need, this may vary from brand to brand.
- Place the couscous in a bowl. Whisk the green curry paste into the hot vegetable stock and pour the mixture over the couscous. Let stand for 10 minutes or according to the packet's instructions. Fluff the grains with a fork.

- While the couscous cooks, toast the pecans. You can do this in a dry skillet over low heat, or in the microwave. To microwave the pecans, place them on a microwave-safe plate and cook in 30-second increments (stirring each time) until they’re fragrant and just starting to brown. It typically takes a total of about 1 ½ minutes in my microwave, but your cooking time may vary. Allow the pecans to cool before assembling the salad.
- Whisk together all of the dressing ingredients (or shake them in a jar). Pour over the salad and toss to coat. Season with additional salt and pepper, to taste. Serve immediately or cover and refrigerate until ready to enjoy.
