This Mediterranean Couscous and Chickpeas is filled with salty feta, juicy tomatoes, and fresh parsley. It only takes 15 minutes to make, so it's perfect for busy weeknights!

1 ½ cups water
1 cup dry couscous
1 tablespoon olive oil
1 15oz can chickpeas, rinsed and drained
1 large cucumber, chopped (about 1 cup)
1 large tomato, chopped (about 1 cup)
1/2 cup chopped curly parsley leaves (about 1/3 bundle, large stems removed)
¼ cup crumbled feta (optional)
Salt to taste

Steps:

  • In a medium sized pot, bring the water to a boil.
  • Add the couscous, remove from heat, and cover with a lid. Set aside for 5 minutes while the couscous absorbs the water.
  • While your couscous is cooking you can prep the rest of your ingredients.
  • Once the couscous has absorbed all the water, fluff with a fork.
  • In a large bowl, gently toss all ingredients together.
  • Serve at room temperature or store in the fridge and serve cold.

This fresh mediterranean couscous salad recipe is packed with raw & roasted cherry tomatoes, feta, chickpeas & herbs. Perfect for a picnic or packing for lunch! I like to roast the tomatoes in advance for quicker assembly.

4 cups cherry tomatoes ((half for roasting, half raw))
Extra-virgin olive oil (for drizzling)
1 cup dry Israeli couscous
1 tablespoon lemon juice (more if desired)
1 garlic clove (minced)
Leaves from 6 sprigs fresh thyme (more for garnish)
1½ cups roasted chickpeas (tossed with 1/4 teaspoon smoked paprika before roasting)
¼ cup fresh basil (more for garnish)
2 Persian cucumbers (thinly sliced)
⅓ cup crumbled feta cheese
Sea salt and freshly ground black pepper

Steps:

  • Roast 2 cups of the cherry tomatoes according to this recipe. These can be made in advance and stored in the fridge for a few days.
  • Cook the couscous according to the package directions until al dente, about 9 minutes. Drain and set aside to cool.
  • In the bottom of a large bowl, combine 1 tablespoon of olive oil, the lemon juice, garlic, thyme, ¼ teaspoon salt, and several grinds of black pepper. Add the cooled couscous and toss. Slice the remaining raw cherry tomatoes in half and add them to the bowl with the roasted tomatoes, the chickpeas, basil, cucumbers, and feta. Top with more fresh herbs and a generous drizzle of olive oil. Season to taste.

My shortcut-flavour tip is to use the oil from the sun dried tomato jar as the dressing - free flavour! The flavour pops from the sun dried tomato and feta are quite intense, so this truly is satisfying to have as a meal, or as a substantial side. This makes quite a lot - serves 5 as a main, or 8 - 10 as a side. Keeps very well.

1 1/4 cups dried couscous ((Note 1))
1 1/4 cups / 315 ml boiled water
1 tsp vegetable stock powder ((or 1 cube crumbled) (Note 2))
1 garlic clove (, minced)
1 tsp coriander powder (or cumin - I interchange)
400 g / 14 oz chickpeas (1 can) (, drained)
1/2 cup coriander (, finely chopped)
1/2 cup parsley (, finely chopped (or mint))
1 red onion (, chopped)
220 g / 7 oz jar sun dried tomato strips in OIL ((Note 3))
120 g / 4 oz rocket / arugula lettuce (, chopped into 5 cm / 2" pieces)
Zest of 1 large lemon
5 tbsp fresh lemon juice ((2 large lemons))
1/2 tsp coarsely ground black pepper
60 g / 2 oz feta (, crumbled)
Salt and pepper (, to taste)

Steps:

  • Place chickpeas, couscous, vegetable stock powder, coriander and garlic in a large bowl. Pour over hot water, shake to level out couscous (chickpeas should mostly settle on top). Cover with plate or cling wrap, set aside for 5 minutes.
  • Fluff couscous with fork. Cool a bit.
  • Add coriander, parsley, onion, sun dried tomatoes (including all oil), rocket, lemon juice and black pepper. Sprinkle zest across surface. Toss well to combine.
  • Adjust salt and pepper to taste.
  • Transfer to serving bowl, sprinkle with feta. Serve.

Turmeric highlights the golden hue of couscous while adding a welcome bit of flavor. The grains are paired with tomatoes, which have been left to sit in red wine and vinegar, infusing them with flavor and making the dressing even more juicy for the couscous-chickpea mix. If you want the onion to be nice and crisp and to take its raw edge off, put the slices in a bowl of ice and water before you cook the couscous. Drain them right before tossing them in. You can add even more crunch by topping the salad with sliced celery or chiles, if you like your food spicy. Either thinly sliced fresh chiles, such as fresno or jalapeños, or preserved ones, like peppadews or hot cherry, work well.

Lemon zest and fresh herbs make it bright, while feta, added at the end, gives the whole thing a creamy richness. Save leftovers to bring to work for lunch the next day; they pack up perfectly. If you feel like you need more vegetables here to round out the meal, serve this on a bed of baby spinach, some of which will wilt on contact with the hot couscous.

Steps:

  • Heat oven to 450 degrees. In a 9-inch baking dish, cake pan or gratin dish, toss together tomatoes, scallions, 2 tablespoons oil, 1 tablespoon vinegar, garlic, 1/2 teaspoon salt, pepper and oregano sprigs. Roast until tomatoes are tender, about 15 minutes.
  • While tomatoes roast, heat the stock until it boils, then stir in remaining 1 teaspoon salt, adding more to taste. (You want a well-seasoned broth here to flavor the couscous.) Stir in cilantro, lemon zest and cumin.
  • Remove tomatoes from oven and fold in couscous, chickpeas and hot stock mixture. Cover pan tightly with foil, and return to oven for 20 minutes.
  • Remove foil and fold in about 3/4ths of the feta (save the rest for garnish) and Parmesan. Bake uncovered until feta starts to melt, another 5 minutes.
  • To serve, pull out and discard herb sprigs if you like, and spoon couscous into bowls. Top with remaining feta, lots more herbs, pepper and a drizzle of olive oil and balsamic vinegar.

1/3 cup shelled pine nuts
1 tablespoon olive oil
1/2 teaspoon kosher salt
1 1/2 cup couscous
1/3 cup sun-dried tomatoes in oil, drained and diced
1/3 cup crumbled feta cheese
1/4 cup chopped green onion

Steps:

  • In a dry, non-stick fry pan over medium-high heat, toast the pine nuts, tossing often, until golden brown, about 3-4 minutes. Be sure to watch them closely as they can burn quickly once they get hot. Set aside.
  • In a medium saucepan, bring 1 1/4 cup water to a boil. Stir in the couscous, olive oil and kosher salt, cover, and remove from the heat. Let stand for 5 minutes.
  • Fluff the couscous with a fork and stir in the sun dried tomatoes, feta cheese, chopped green onion, and pine nuts. This dish can be served warm or at room temperature.

1 tablespoon olive oil
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon dried oregano or 1/2 teaspoon basil
4 garlic cloves, minced
2 1/4 cups vegetable broth, divided
1 (16 ounce) can chickpeas, drained and rinsed
3 medium ripe tomatoes, seeded and chopped
1 teaspoon salt
1 cup couscous, uncooked
2 cups green onions, coarsely chopped
1 cup feta cheese, crumbled

Steps:

  • Heat olive oil in a medium saucepan or large skillet over medium heat.
  • Add red pepper and garlic and cook for three minutes, stirring frequently.
