- Cook couscous according to package instructions. Put aside and allow to cool slightly.
- Meanwhile, place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.
- Toss the asparagus, tomatoes, and feta with couscous. Add the olive oil, balsamic vinegar, and black pepper and toss to incorporate.

SAUTéED CHICKEN BREASTS WITH FRESH CORN, SHALLOTS AND CREAM
When you've eaten your fill of corn on the cob, here's another delightful way to enjoy one of summer's best vegetables: Build it into a quick sauce with shallots, white wine, Dijon mustard and cream, to spoon over butter-sautéed chicken. It's a fresh yet luxurious weeknight meal you're going to make all season long.

Steps:
- Sprinkle chicken breasts on both sides with salt and pepper.
- Cut the kernels from the ears of corn. There should be about 1 cup. Set aside.
- Heat butter in a skillet large enough to hold the breasts in one layer. Add the chicken, cook 3 minutes and turn. Cover and cook 5 minutes longer.
- Transfer chicken pieces to a hot serving dish. To the skillet add shallots and cook briefly. Add wine and bring to the boil. Add the corn and stir in mustard.
- Add cream and stir to blend. Bring to the boil and add the chervil or parsley. Pour and scrape the sauce over the chicken pieces and serve.

- Melt 25g (1oz) butter and grease six 150ml (5floz) ramekins and refrigerate them. Reserve 12 small asparagus spears for garnish and roughly chop the remainder. Finely chop the shallots.
- Bring a large pan of salted water to the boil, add the chopped asparagus or peas, cook for 4-5 min or until tender. Drain, plunge into iced water, drain again. Cook the reserved spears for 1-2min, cover and set aside. Place the chopped asparagus or peas in a food processor or blender with the eggs and yolks, process until smooth. Sieve and stir in the chopped herbs and 450ml (15fl oz) cream. Season well.
- Pour the asparagus mixture into the ramekins and place in a large roasting tin with enough boiling water to come halfway up the sides of the ramekins. Cover the tin loosely with foil.
- Cook at 180°C (350°F) mark 4 for 30-40min or until just set.
- Melt the remaining butter in a saucepan, add the shallots and cook, stirring, for 10 min, until soft. Add the wine and stock, bring to the boil and simmer for 10min. Add the remaining cream, season and simmer for 10mm.
- To serve, reheat the asparagus spears in the hot sauce for 1min. Turn the ramekins out on to six heated plates and spoon round the sauce and asparagus spears. Garnish with chervil sprigs. - Cook frozen peas, asparagus, carrots and snow peas in large pot of boiling salted water until vegetables are crisp-tender, about 3 minutes. Drain. Transfer vegetables to bowl filled with ice water. Drain vegetables and set aside.
- Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add shrimp and sauté until pink and cooked through, about 1 1/2 minutes. Transfer shrimp to medium bowl. (Vegetables and shrimp can be prepared up to 1 day ahead. Cover each separately with plastic wrap and then refrigerate.)
- Heat remaining 3 tablespoons oil in heavy large pot over medium-high heat. Add onion and shallots and sauté until soft, about 5 minutes. Stir in couscous and tomatoes. Add wine and simmer until liquid is reduced by half, stirring often, about 10 minutes. Add vegetable stock and simmer until liquid is reduced by half and couscous is just tender, stirring often, about 8 minutes. Mix in reserved vegetables and whipping cream. Cook couscous over medium heat until mixture thickens and is creamy, about 3 minutes.
- Stir Parmesan, butter and parsley into risotto. Add shrimp and mix until heated through and butter and cheese are melted and well blended, about 2 minutes. Season risotto to taste with salt and pepper. Divide risotto among 8 bowls and serve.
