CHERRY TOMATO COUSCOUS SALAD



Cherry Tomato Couscous Salad image

This fresh mediterranean couscous salad recipe is packed with raw & roasted cherry tomatoes, feta, chickpeas & herbs. Perfect for a picnic or packing for lunch! I like to roast the tomatoes in advance for quicker assembly.

4 cups cherry tomatoes ((half for roasting, half raw))
Extra-virgin olive oil (for drizzling)
1 cup dry Israeli couscous
1 tablespoon lemon juice (more if desired)
1 garlic clove (minced)
Leaves from 6 sprigs fresh thyme (more for garnish)
1½ cups roasted chickpeas (tossed with 1/4 teaspoon smoked paprika before roasting)
¼ cup fresh basil (more for garnish)
2 Persian cucumbers (thinly sliced)
⅓ cup crumbled feta cheese
Sea salt and freshly ground black pepper

Steps:

  • Roast 2 cups of the cherry tomatoes according to this recipe. These can be made in advance and stored in the fridge for a few days.
  • Cook the couscous according to the package directions until al dente, about 9 minutes. Drain and set aside to cool.
  • In the bottom of a large bowl, combine 1 tablespoon of olive oil, the lemon juice, garlic, thyme, ¼ teaspoon salt, and several grinds of black pepper. Add the cooled couscous and toss. Slice the remaining raw cherry tomatoes in half and add them to the bowl with the roasted tomatoes, the chickpeas, basil, cucumbers, and feta. Top with more fresh herbs and a generous drizzle of olive oil. Season to taste.

This keeps well for days - I usually make a big batch and have it for lunch through the week.

2 leaves kale
1 teaspoon olive oil, or as needed
½ pint cherry tomatoes, diced
kosher salt to taste
⅛ pound crumbled feta cheese
⅓ cup dried cranberries
½ cup cooked couscous
¼ cup roasted pumpkin seeds
¼ cup sunflower seeds
½ lemon, juiced

Steps:

  • Remove kale leaves from stems; finely chop leaves and massage with oil in a large bowl until dark green and fragrant, about 30 seconds. Add cherry tomatoes and sprinkle with kosher salt. Add feta cheese, cranberries, couscous, pumpkin seeds, and sunflower seeds.
  • Squeeze lemon juice over ingredients and toss until blended.

This recipe is great hot or cold. I invented it in grad school when I had no time to cook. It's a quick and easy one dish recipe. I use it as a side dish for nice meals or a full meal for lunch. You can make it in 5 minutes or less and eat immediately. For extra protein you can add chicken breast.

⅓ cup couscous
⅓ cup dried cranberries
⅔ cup boiling water
½ cucumber, diced
2 tablespoons crumbled feta cheese
2 teaspoons balsamic vinaigrette salad dressing, or to taste

Steps:

  • Place the couscous and cranberries in a heatproof bowl. Pour in the boiling water, and stir with a fork. Cover the bowl with plastic wrap, and set aside 5 to 10 minutes.
  • Fluff the couscous with a fork, and fold in the cucumber and feta cheese. Season to taste with balsamic vinaigrette and salt.

Simple and so tasty, this kale salad has feta cheese, dried cranberries, and sliced almonds all tossed in a tangy lemon vinaigrette. It's our go-to recipe because of the simplicity and perfect blend of salty, sweet, soft and crunchy.

8 cups kale (loosely packed; washed & torn into bite-sized pieces; see note 1)
1/3 cup feta cheese (crumbled)
1/3 cup dried cranberries
1/4 cup sliced almonds
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon honey (or maple syrup)
1/4 teaspoon dijon
1 teaspoon lemon juice
salt & pepper

Steps:

  • Tear kale into bite-sized pieces (making sure to remove the thick part of the stem). Wash, then spin dry.
  • In a large bowl, massage the kale with clean hands for 1-2 minutes, until soft and bright green.
  • Add the feta, cranberries and almonds.
  • Shake together vinaigrette ingredients. Add to salad and toss. Serve immediately.

1 cup whole wheat Israeli couscous (also called pearl couscous)
1 lemon (zested)
3 tablespoons freshly squeezed lemon juice (from about 1 large lemon)
3 tablespoons extra virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon smoked paprika
1 teaspoon kosher salt
1/4 teaspoon black pepper
2 cups arugula
1 medium English seedless cucumber (sliced and quartered)
1 pint cherry tomatoes (or grape tomatoes, halved)
1/2 cup crumbled reduced fat feta cheese
1/4 cup lightly packed fresh mint leaves (chopped)

Steps:

  • Bring 1 1/4 cups water to a boil in a medium (2-quart) saucepan. Add the couscous, return to a boil, then cover and reduce the heat to a simmer. Let cook until the liquid is absorbed, about 20 minutes. Fluff with a fork and set aside.
  • In the bottom of a large bowl, whisk together the lemon zest, lemon juice, olive oil, mustard, smoked paprika, salt, and pepper. Taste and add additional seasoning as desired. While the couscous is still warm, add it to the bowl and toss to coat. Place in the refrigerator for 5-10 minutes to allow the couscous to cool.
  • When ready to serve, add the remaining ingredients: arugula, cucumber, tomatoes, feta, and mint. Toss to combine. Serve cold or at room temperature.

Recipe VIDEO above. A 12 minute, no cook, giant Couscous Salad with sun dried tomato, feta, rocket / arugula, herbs and the added nutty tastiness of chickpeas. My shortcut-flavour tip is to use the oil from the sun dried tomato jar as the dressing - free flavour! The flavour pops from the sun dried tomato and feta are quite intense, so this truly is satisfying to have as a meal, or as a substantial side. This makes quite a lot - serves 5 as a main, or 8 - 10 as a side. Keeps very well.

1 1/4 cups dried couscous ((Note 1))
1 1/4 cups / 315 ml boiled water
1 tsp vegetable stock powder ((or 1 cube crumbled) (Note 2))
1 garlic clove (, minced)
1 tsp coriander powder (or cumin - I interchange)
400 g / 14 oz chickpeas (1 can) (, drained)
1/2 cup coriander (, finely chopped)
1/2 cup parsley (, finely chopped (or mint))
1 red onion (, chopped)
220 g / 7 oz jar sun dried tomato strips in OIL ((Note 3))
120 g / 4 oz rocket / arugula lettuce (, chopped into 5 cm / 2" pieces)
Zest of 1 large lemon
5 tbsp fresh lemon juice ((2 large lemons))
1/2 tsp coarsely ground black pepper
60 g / 2 oz feta (, crumbled)
Salt and pepper (, to taste)

Steps:

  • Place chickpeas, couscous, vegetable stock powder, coriander and garlic in a large bowl. Pour over hot water, shake to level out couscous (chickpeas should mostly settle on top). Cover with plate or cling wrap, set aside for 5 minutes.
  • Fluff couscous with fork. Cool a bit.
  • Add coriander, parsley, onion, sun dried tomatoes (including all oil), rocket, lemon juice and black pepper. Sprinkle zest across surface. Toss well to combine.
  • Adjust salt and pepper to taste.
  • Transfer to serving bowl, sprinkle with feta. Serve.

  • In large bowl, combine the remaining tablespoon olive oil, the jalapeno, lemon juice, red onion, and salt and pepper, then transfer the cooled couscous to the bowl and toss to combine and coat the grains. The grains may have clumped up a bit – tossing them with the dressing should separate them. Toss in the sautéed kale, taste, and adjust the seasonings as needed. Serve slightly warm or at room temperature.
