Serve this thick, moreish dip of roasted courgettes and Greek yogurt with crudités or flatbread as part of a Lebanese meze spread

Number Of Ingredients 7

2 large courgettes , washed
1 small garlic clove , crushed
1 tbsp tahini
juice 0.5 lemon
1 tbsp Greek yogurt
handful of mint , leaves picked and chopped
½ tsp olive oil , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Wrap the whole courgettes in foil, then put in the oven and roast for 20 mins or until soft when pricked with a fork. Remove from the oven and allow to cool completely.
  • Put the courgettes in a food processor, with the garlic and blend until it has a fluffy texture. Add the tahini and lemon juice and season, then blitz again. Transfer to a bowl, then stir through the yogurt and a little of the mint. Drizzle with olive oil and scatter over the remaining mint to serve.

Super creamy with the nutty flavor of sesame seeds, this homemade tahini sauce recipe is a popular way to begin a meal in Cyprus. Serve with crudités and pita.

½ cup tahini
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil, plus more for garnish
1 clove garlic, crushed
¼ teaspoon salt
6 tablespoons water
3 tablespoons chopped fresh parsley
Toasted sesame seeds for garnish

Steps:

  • Combine tahini, lemon juice, oil, garlic and salt in a food processor. Pulse, scraping down the sides as needed, until smooth. With the motor running, add water in a thin stream until the mixture is pale and smooth. Transfer the dip to a serving bowl and top with parsley. Garnish with sesame seeds and more oil, if desired.

  • Heat the oil in a large sauté pan and add the chopped courgettes. Cover the pan with a lid and fry over a low heat for 12-15 minutes until the courgettes are very soft. Toss them every now and then so they cook evenly and don’t stick to the pan.
  • Cool a little, then put into a food processor. Add the tahini and yogurt. Pull the leaves from the mint sprigs (discard the tough stalks) and put them into the food processor with the salt, 1⁄4 teaspoon black pepper, and the cumin. Blitz to make a smooth purée.

  • While the zucchini and eggplant are cooking, heat the olive oil in a small pan and add the mashed or finely diced garlic. Lightly sauté the garlic for about 30 seconds, stirring frequently. When it is just beginning to turn golden, add the garlic to the tahini, along with the lemon juice. Blend those ingredients and set them aside.
  • Once the zucchini and eggplant are cool enough to handle, scoop out their insides and discard the skins. Chop the (squishy) insides in a wooden bowl with a rounded chopper or use a food processor fitted with a metal blade. Add the parsley and mix thoroughly.

  • Cut zucchini into ½ inch thick strips, brush with a little olive oil and grill on medium heat until charred and tender. Place in foil for a few minutes to let them steam and get more tender.
