Time 2h40m

Yield 24

Number Of Ingredients 10

1 (.25 ounce) package active dry yeast
1 teaspoon sugar
½ cup warm water (110 degrees F/45 degrees C)
1 (12 fluid ounce) can evaporated milk
¼ cup warm water
¼ cup shortening, melted
¼ cup honey
2 teaspoons salt
6 cups bread flour
2 tablespoons butter, melted

Steps:

  • In a small bowl, dissolve yeast and sugar in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the yeast mixture with the evaporated milk, 1/4 cup water, shortening, honey, salt and 2 cups flour. Stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Punch dough down and divide in half. Roll out each half and roll into loaf shapes, sealing seams by pinching. Place in buttered 9x5 inch bread pans. Butter the tops of each loaf with melted butter; cover loosely with plastic wrap. Let rise in warm area until doubled, about 30 minutes.
  • Place a small pan of hot water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).
  • Uncover loaves and bake until tops are golden brown, about 25 to 35 minutes. Brush butter onto crusts while warm. Slice when cool.

COUNTY FAIR BREAD

Time 4h

Yield 2 loaves

Number Of Ingredients 10

5 cups all-purpose flour or 5 cups unbleached hard-wheat flour
1/4 cup granulated sugar
2 teaspoons salt
1 package active dry yeast
1 1/2 cups milk
1/4 cup butter
2 eggs
1 egg white, lightly beaten with
1 tablespoon water
sesame seeds

Steps:

  • In a large mixing bowl combine 1 cup of the flour, sugar, salt, and dry yeast.
  • Heat the milk and butter in a pan just until the milk is warm.
  • The butter does not need to melt.
  • Add the eggs and the warm milk mixture to the flour mixture.
  • Mix very well until thoroughly moistened, and beat with a wooden spoon for about 5 minutes.
  • Stir in the remaining flour to form a stiff dough.
  • Turn out on a floured board, and knead the dough until it is quite smooth and elastic, about 5 minutes.
  • Work into a ball, place in a buttered bowl, and turn to coat with butter on all sides.
  • Cover and let rise in a warm, draft-free place until light and doubled in bulk, 1 to 1 1/2 hrs.
  • Punch the dough down and divide into six equal portions.
  • Roll each of these portions into a thin cylinder about 8 to 10 inches long.
  • Take three strips and braid them together.
  • Place the braid on a baking sheet, which should be buttered or sprinkled with cornmeal.
  • Braid the remaining three strips and place about six inches away from the other loaf.
  • For a more spectacular loaf, make a braid of three large strips and then a braid of three smaller strips, and put one on top of the other.
  • Cover the loaves and let rise in a warm, draft-free space until doubled in bulk, which will take another 1 1/2 hrs.
  • Brush with the egg white and water, sprinkle lavishly with sesame seeds.
  • If you've made two smaller loaves, bake in a preheated 375 F oven for 35-40 minutes or until golden brown.
  • The single, larger loaf will need a good hour in the oven.

21 AWARD-WINNING RECIPES FOR BREAD AND JAM TO ENTER THE …

From morningchores.com
Estimated Reading Time 7 mins
  • Honey Wheat Bread. Adding the potato water would be a very interesting taste to this honey wheat bread. The only thing that I would change is I would not add the vital wheat gluten, instead, I would use high-quality flour such as Bob’s Red Mill or King Arthur Flour.
  • Jalapeño Cheddar Bread. One of the best things about the fair that we enter is they give feedback. This year I had a student enter a loaf bread similar to Red Lobster’s Garlic Cheddar Biscuits.
  • Sourdough baguette. I chose this recipe because it’s a little bit different and I’ve been told that the food taster at County fair, prefers something a little bit different.
  • Award-winning Zucchini Bread. Anything that comes from Sally’s Baking Addiction and we know it’s going to be good. This bread has oats, zucchini, and chocolate chips.
  • Award-winning Pumpkin Bread. I have a hard time doing a pumpkin bread recipe in January, however; I think this one would be a winner if you could do it in the middle of the year or during the pumpkin everything season.
