1 (6 1/2 ounce) can tuna, drained and flaked
1 cup cheese, shredded
1 (3 ounce) package cream cheese (optional)
1/2 cup green onion, chopped
2 roma tomatoes, chopped
2 cups milk
1 cup Bisquick
4 eggs
3/4 teaspoon salt
1 dash nutmeg

Steps:

  • Preheat oven to 400 degrees F.
  • Grease a deep pie pan or Pyrex dish.
  • Mix first 5 ingredients in pie pan.
  • Beat remainder of ingredients in blender for 1 minute.
  • Pour into pie pan.
  • Bake until knife inserted comes out clean, about 30 to 40 minutes.
  • Cool for 5 minutes.
  • Serve with tossed salad.

This is a bit different from the usual tuna casserole. It is adapted from the Good Housekeeping Cookbook.

1 lemon, sliced, unpeeled
1 (6 1/2 ounce) can tuna, drained
2 tablespoons minced onions
1 tablespoon minced green pepper
1/4 cup fresh breadcrumb
1/2 teaspoon dry mustard
1/3 cup catsup
1 egg, well beaten
1/4 lb sliced cheddar cheese, about
9 tablespoons milk
1 1/2 cups packaged biscuit mix

Steps:

  • Preheat oven to 400°F.
  • Spray 8" pie plate or other round shallow casserole with vegetable spray.
  • Arrange lemon slices over bottom of pie plate.
  • Mix tuna, onion, green pepper, crumbs, mustard, lemon juice, catsup,& egg.
  • Top with cheese slices.
  • With fork, mix milk and biscuit mix to make a soft dough& spread over cheese layer.
  • Bake uncovered for 15 to 20 minutes, or till light brown.
  • Loosen edges, quickly invert onto a serving dish& cut into wedges.

Number Of Ingredients 16

1 (6-ounce) can water packed tuna
1/4 cup green onion diced
1/3 cup celery diced
1/2 cup carrot diced
1 large potato diced
1 tablespoon organic olive oil
1 tablespoon arrowroot or flour
1 cup fat free low sodium chicken broth
1/4 cup flat Italian parsley diced
1/4 cup roasted red bell pepper minced
1/4 cup shredded Cheddar cheese
EASY OIL CRUST
1 cup whole wheat pastry flour
1/4 teaspoon salt
1/3 cup organic walnuts or macadamia nut oil
2 tablespoons cold water

Steps:

  • 1. Drain tuna; reserve liquid and set aside. 2. Sauté green onion, celery, carrots, and potatoes in olive oil until tender. 3. Sprinkle arrowroot or flour over oil and vegetables. Stir to blend. 4. Add chicken broth and continue to stir until thickened. 5. Stir in flaked tuna, parsley, pepper, and cheese. 6. Blend well and turn into two small casserole dishes. 7. Cover with Easy Oil Crust, leaving two vent holes. 8. Bake in 350°F oven for 45 minutes or until knife inserted in center comes out clean. 9. Let stand 10 minutes before serving. CRUST 1. Stir flour and salt in a bowl. 2. Combine oil with water and add to flour and salt. Mix with a fork. 3. Form into two balls with your hands and let sit covered with a cloth for 5 minutes. 4. Roll out between sheets of waxed paper. 5. Cover tuna and vegetable filling with crusts and bake for 10 to 12 minutes at 400° F. Suggestion : Leftover tuna pie makes a great lunch the next day. Note : A lower-fat, lowercalorie alternative can be made by using leftover garlic mashed potatoes to cover the tuna filling.

This is my old roommates recipe - we used to fix this all the time. It's a tasty, one dish dinner. The "crust" is a "meatloaf" mixture.

2 (8 ounce) cans tomato sauce
1/2 cup breadcrumbs
1/4 cup chopped onion
1 lb ground beef
1/2 cup chopped green pepper
1/8 teaspoon dried oregano
salt & pepper
1 1/3 cups Minute Rice
1 1/2 cups water
1 cup grated cheddar cheese
1 cup water

Steps:

  • Crust: Combine ground beef, 1/2 a can of tomato sauce, bread crumbs, onion, green pepper & spices.
  • Pat mixture down & up sides of a 9 inch pie plate (I use a deep dish).
  • Set aside.
  • Filling: Combine rice, all the remaining tomato sauce (1 1/2 cans), 1 cup water & 1/2 cup of cheese.
  • Pour on top of crust.
  • Cover with foil and bake at 350 for 25 minutes.
  • Sprinkle with rest of cheese & bake 10 -15 more minutes or.
  • until cheese is melted.
