Steps:
- Place garlic, vinegar, and oil in bowl, seasoning with salt and pepper.
- Whisk for 1 minute.
- Slice potatoes thick and add remaining salad ingredients. Toss.
- Pour in vinaigrette and toss again.
- Marinate 15 minutes before serving.

Steps:
- Add salt (about 2 tablespoons) to a large pot of water and bring to a boil. Add the potatoes and cook until fork tender, about 10 to 15 minutes. Drain and set aside.
- While the potatoes are cooking, mix together the Miracle Whip, red onion, parsley, dill, scallions and lemon juice. Season with salt and pepper to taste.
- In a large bowl, combine the potatoes and dressing mixture to coat. Store in the refrigerator until ready to serve.
COUNTRYSIDE PASTA SALAD
I found this recipe on a can of tomatoes. It tastes great right after it is made or even the next day. The addition of bacon adds a nice smokey flavor to this pasta salad. You could easily add some chopped cooked chicken and serve this on a bed of lettuce for a complete lunch.
