Sausage Peppers and Potatoes Skillet image

One pan Italian sausage peppers and potatoes skillet made with just 7 ingredients. Ground sausage, peppers, onions, and potatoes are all cooked together with pasta sauce and then topped with cheese for an healthy and hearty dish. Makes a perfect weeknight dinner the whole family will love!

1 pound ground sausage
1/2 tablespoon avocado oil ((or more if needed)*)
1 1/2 pounds yukon gold potatoes, diced into 1/2-1 inch pieces**
1 1/2 cups thinly sliced onion (150 grams)
5 cups diced peppers (600 grams) ((I used red, yellow, and green))
1 tablespoon Italian seasoning
1 1/2 cups marinara sauce
1/2 cup packed shredded mozzarella cheese (2 ounces)
salt and pepper, to taste
optional toppings: fresh basil, fresh parsley, red pepper flakes....

Steps:

  • Heat a large cast iron skillet over medium heat. Once hot, add ground pork with a little salt and pepper and break it up with the back of a spoon. Sauté for 5-7 minutes until browned and cooked through. Remove from pan, leaving the grease behind, and place in a bowl.
  • There should be some leftover pork grease in the pan. Add avocado oil and let it get hot.* Add potatoes with a little more salt and pepper and cook for 10-15 minutes until browned and almost cooked through. I covered them with a lid and added a little water every so often to the pan to help speed up the process. When the potatoes are geting close to being done, add onion and saute for another 5 minutes.
  • Add the peppers with the Italian seasoning and saute for 5-7 minutes until softened. Add the pork back in with the pasta sauce and mix well to combine. Let everything warm through, about 1-2 minutes. Top with the shredded cheese let it melt, about 1-2 minutes. Top with fresh herbs if using and enjoy!

1 tablespoon olive oil
1 lb smoked sausage (I use Eckrich skinless smoked sausage)
3 cups yukon gold potatoes, peeled and diced, approx. 1 lb
1 large green bell pepper, cut into 1/2 inch strips
1 large red bell pepper, cut into 1/2 inch strips
1 small red onion, peeled and finely diced
1 (2 ounce) envelope Lipton Recipe Secrets onion soup mix
1 1/2 cups water

Steps:

  • In a 12 inch skillet, heat oil over medium-high heat. Brown sausage on all sides and remove.
  • Cut sausage into 1-inch slices (when slightly cooled) and set aside.
  • Add peppers and onion to sausage drippings and saute, stirring frequently, approximately 2 minutes until tender.
  • Blend onion soup mix with water, add to pan and add diced potatoes. Bring to a boil over high heat.
  • Reduce heat to low and simmer, covered, 10 minutes.
  • Return sausage to skillet and simmer, covered, an additional 10 minutes or until sausage is done and potatoes are fork tender.

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
  • Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.
