AMISH COUNTRY CASSEROLE

Super cozy and creamy, a few staple ingredients combine to create a veggie-filled casserole easy enough for a busy weeknight.

1 pound lean ground beef
1 medium onion, diced
1 medium green bell pepper, diced
1 teaspoon salt
½ teaspoon black pepper
1 (8 ounce) package uncooked egg noodles
1 (14.5 ounce) can petite diced tomatoes
1 (10.75 ounce) can condensed tomato soup, undiluted
1 cup cottage cheese
1 cup sour cream
2 teaspoons Worcestershire sauce
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, onion, and bell pepper in a large skillet over medium heat. Cook and stir until vegetables are tender and beef is browned and cooked through, 10 to 15 minutes. Season mixture with salt and pepper while cooking.
  • Meanwhile, fill a 5-quart Dutch oven or other oven-safe pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain noodles and return to the pot.
  • Add diced tomatoes, condensed soup, cottage cheese, sour cream, and Worcestershire sauce to the egg noodles; stir to blend. Stir in ground beef mixture until evenly combined. Taste and adjust seasonings. Sprinkle Cheddar cheese over the top.
  • Bake uncovered in the preheated oven until heated through and cheese is melted and golden, 25 to 30 minutes. Serve immediately.

1 (10 3/4 ounce) can cream of potato soup
1 cup milk
1/4 teaspoon dried thyme leaves, crushed
1/8 teaspoon ground black pepper
4 cups cooked cut-up vegetables
2 cups cubed cooked turkey or 2 cups chicken
1 1/2 cups water
4 tablespoons margarine or 4 tablespoons butter
4 cups pepperidge farm herb seasoned stuffing mix

Steps:

  • Mix soups, milk, thyme, black pepper, vegetables and turkey in a 3-qt shallow baking dish.
  • Heat water and margarine to a boil in a medium saucepan over high heat.
  • Add stuffing and mix lightly.
  • Spoon stuffing over turkey mixture.
  • Bake at 400F for 25 minutes or until hot.

2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3/4 cup mayonnaise
1/2 cup milk
3 tablespoons honey
2 tablespoons Dijon mustard
4 cups cubed fully cooked ham or cubed cooked chicken
1 package (26 ounces) frozen shredded hash brown potatoes
3 cups frozen sliced carrots, optional

Steps:

  • In a large bowl, combine the first five ingredients. Stir in the ham, hash browns and carrots if desired. Transfer to a greased 13-in. x 9-in. baking dish. , Cover and bake at 350° for 45-50 minutes. Uncover; bake 15-20 minutes longer or until bubbly.

¾ cup elbow macaroni
1 pound ground turkey
1 (15 ounce) can baked beans with pork
½ cup chopped green pepper
1 (10 ounce) can refrigerated biscuit dough
1 (5.5 ounce) can tomato-vegetable juice cocktail
salt and pepper to taste
6 slices American cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Bring a small saucepan of lightly salted water to a boil. Add macaroni, and cook for 8 minutes, or until tender. Drain, and set aside.
  • Place ground turkey and green pepper in a large skillet. Cook over medium-high heat until browned. Drain grease, and return skillet to heat. Stir in the beans, cooked macaroni, vegetable juice, salt and pepper. Heat through, and pour into a 9x9 inch baking dish or casserole dish. Separate biscuits, and cut into quarters. Place the biscuits on a baking sheet.
  • Bake the casserole uncovered, and at the same time bake the biscuits for 15 minutes in the preheated oven, or until the biscuits are done. Just before the biscuits are done, remove the casserole from the oven, and lay slices of cheese over the top. Return to the oven to melt.
  • To serve, dish the mixture out onto serving plates, and press a few biscuit quarters into each helping.

1/2 pound extra wide egg noodles
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices bacon or turkey bacon, chopped
1 1/3 pound, the average weight of 1 package, ground turkey breast
1 pound white mushrooms, wiped, trimmed and sliced
1 medium onion, chopped
Black pepper
2 teaspoons dried thyme or poultry seasoning
1/2 cup dry white wine
1 cup chicken stock, available on soup aisle, eyeball it
1/2 cup heavy cream, 3 turns of the pan
1/4 teaspoon freshly grated nutmeg
2 tablespoons softened butter
2 cups grated Gruyere, about an 8-ounce brick
1 cup plain bread crumbs
2 to 3 tablespoons chopped parsley leaves

Steps:

  • Bring a large pot of water to a boilfor your egg noodles. When it boils, salt the water and cook noodles to al dente.
  • Preheat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan, and bacon or turkey bacon. Render the bacon fat 2 to 3 minutes, until bacon begins to brown at edges. Add meat and brown it, crumbling it with a wooden spoon. Move the meat over to 1 side of the pan and add mushrooms and onions to the opposite side. Cook mushrooms and onions 3 to 5 minutes, then combine the meat with veggies and season the mixture liberally with salt and pepper, then sprinkle in the ground thyme or poultry seasoning. Cook another 5 minutes then add wine. Deglaze the pan, lifting up pan drippings and bits. Stir in stock and bring to a bubble, then stir in cream and reduce the heat to low. Add nutmeg to sauce and stir. Taste to adjust seasonings.
  • Preheat broiler to high. Combine noodles with turkey and sauce. Grease a flameproof casserole dish with a little softened butter nested in a piece of paper towel then transfer the turkey noodle mixture to the dish. Top the casserole with Gruyere then bread crumbs. Place the casserole 8 to 10 inches from the broiler and brown 2 to 3 minutes until cheese is melted and the crumbs are brown. Remove from oven and garnish the casserole with parsley.
