Steps:
- Preheat the oven to 400 degrees F.
- Combine the flour, walnuts, and sugar in a large bowl. Add the butter and the egg yolk. Mix, either by hand or with an electric mixer, until crumbly.
- Press 1 1/2 cups of the crumb mixture in an even layer into the bottom of a 9 1/2-inch springform or tart pan. Arrange the plums in the pan, skin side down, to form a flower pattern; begin at the outside and work your way in.
- Sprinkle the rest of the crumb mixture evenly over the plums. Bake the tart for 40 to 50 minutes, or until it's lightly browned and the plum juices are bubbling. Remove from the oven and cool for 10 minutes. Remove from the pan and transfer the tart to a flat plate. Serve warm or at room temperature.
BROWN SUGAR PLUM TART
This tart comes from my cousin Marie. I love plums - although you can make this recipe with other fruits, it's best with plums.

- Preheat the oven to 350 degrees F (175 degrees C).
- Roll pastry out onto a flat work surface. Line a tart tin with the pastry.
- Bake in the preheated oven for 15 minutes. Leave oven on.
- Sprinkle semolina evenly over the pastry. Place plum halves on top in a circular pattern. Sprinkle brown sugar over plums.
- Return tart to the oven and bake until plums are tender and pastry is golden, about 30 minutes. Serve warm or cold.

- For crust:
- Blend flour, sugar, and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add 2 tablespoons ice water; blend until moist clumps form, adding more water by teaspoonfuls if mixture is dry. Gather dough into ball; flatten into disk. Wrap dough in plastic and refrigerate at least 1 hour.
- For topping:
- Preheat oven to 400°F. Toss plums, 4 tablespoons sugar, ginger and cinnamon in bowl. Roll out dough on floured surface to 12 1/2-inch round. Transfer to rimmed baking sheet. Mix 1 tablespoon sugar and 1 tablespoon flour in small bowl; sprinkle over dough, leaving 2-inch plain border. Arrange plums in concentric circles on dough, leaving 2-inch plain border; drizzle with melted butter. Fold dough border in toward center. Brush border with egg glaze; sprinkle with 1 tablespoon sugar. Bake tart until plums are tender and crust is golden, about 45 minutes.
- Stir preserves in saucepan over low heat until melted. Brush over plums. Cool tart 1 hour on baking sheet. Run long thin knife under tart to loosen. Using 9-inch tart pan bottom, transfer tart to plate; serve at room temperature.

- Rinse the plums in cool water and allow to dry. Slice each plum in half lengthwise. Pluck the halves apart and remove the pit. I use the Early Italian variety of plums, which are small (about the size of a walnut) and oblong in shape. Due to the size of these plums, I only need to halve them in order for them to cook properly. If using larger plums, I advise slicing them into wedges.
- Roll out one disk pie dough into an 11-inch circle. Transfer the dough to a rimmed metal baking sheet.
- Arrange the plum halves in the center of the dough, leaving a 2-inch clear perimeter. Sprinkle the sugar evenly over the plums. Fold the clean perimeter of pie dough over about an inch of the plum filling all around. If choosing to adorn the tart with the optional garnish, then lightly brush the milk along the exposed flap of dough around the tart. Sprinkle raw sugar over the milk.
