I love baking and thought about an apple pie or an apple crumble but decided to share with you one of my all time favorite apple cake recipes. This Country Apple Cake is a cross between a cake and a pie. It's simple to make and best of all, delicious!

8 large green apples, peeled, cored and coarsely chopped
2 tbs lemon juice
1/3 cup caster (superfine) sugar
2 tbs flour
1/2 tsp ground cinnamon
Cake
2 1/4 cups self-raising flour
2/3 cup corn starch
1/3 cup caster (superfine) sugar
7 oz unsalted butter, cut into pieces
1 large egg
2 teaspoons vanilla
1/3 cup milk
Garnish
Extra milk and caster sugar

Steps:

  • Filling
  • Place the chopped apples and lemon juice in a pan over a medium heat. Cover and cook gently for about 10 minutes or until the apples are just tender. Take the pan off the heat and add the sugar, flour and cinnamon. Stir to combine then place to one side and allow the filling to cool completely.
  • Cake
  • Preheat the oven to 350°F. Lightly grease a 9 inch spring form tin and line the base of the tin with baking paper. Sift the self raising flour with the corn starch.
  • Put the sifted flours, the sugar and the butter into the bowl of a food processor and process until the mixture resembles breadcrumbs.
  • In a small bowl combine the eggs, the vanilla and the milk. With the food processor running, gradually pour in enough of the milk mixture and process until the mixture wraps around the blades. The mixture will be quite soft so using floured hands, press half of the mixture into the base and up the sides of the tin.
  • Spoon in the apple mixture, which won't completely fill the tin. Fold over any overhang of pastry from the sides of the tin, then using floured hands, flatten the remaining mixture into a disc and cover the top of the cake. Don't worry if there are a few holes as they'll close over as the cake bakes. Brush the top of the cake with milk then sprinkle with a little extra caster sugar.
  • Bake the cake for 50-60 minutes at 350°F. If the cake is browning too quickly, cover the top with a piece of grease proof paper. Remove from the oven and cool on a wire rack before unmolding. As this is a cross between a cake and a pie, the bottom crust will always be a little soft but the top crust will be lovely and crisp. When cool dust with icing sugar and serve with ice cream.

1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

Our part of Pennsylvania is known as "Apple Country". This cake is one of my family's favorites. It's great for a lunch box treat.

3 cups all-purpose flour
1 tablespoon baking powder
2 cups plus 5 tablespoons sugar, divided
1 cup vegetable oil
4 large eggs, room temperature
1/3 cup orange juice
1/2 teaspoon salt
2-1/2 teaspoons vanilla extract
4 medium tart apples, peeled and thinly sliced
2 teaspoons ground cinnamon
Confectioners' sugar, optional

Steps:

  • In a large bowl, combine the flour, baking powder, 2 cups of the sugar, oil, eggs, orange juice, salt and vanilla. Beat until thoroughly combined. In another bowl, toss apples with cinnamon and remaining sugar. Spread one-third of batter in a greased 10-in. tube pan. Cover with half of the apples. Repeat layers. Spoon remaining batter over top. , Bake at 350° for 1-1/2 hours or until a toothpick inserted in the center comes out clean. Cool for 20 minutes before removing from pan to a wire rack to cool completely. Just before serving, dust with confectioners' sugar if desired.

2 medium tart apples, peeled and chopped, divided
1 tube (12 ounces) refrigerated buttermilk biscuits
1 egg
1/3 cup corn syrup
1/3 cup packed brown sugar
1 tablespoon butter, softened
1/2 teaspoon ground cinnamon
1/2 cup chopped pecans
GLAZE:
1/3 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 to 2 teaspoons 2% milk

Steps:

  • Place 1-1/2 cups apples in a greased 9-in. round baking pan. Separate biscuits into 10 pieces; cut each biscuit into quarters. Place over apples with point side up. Top with remaining apples. , In a small bowl, combine the egg, corn syrup, brown sugar, butter and cinnamon. Stir in pecans. Spoon over apples. Bake at 350° for 30-35 minutes or until biscuits are browned. , For glaze, combine the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Drizzle over warm coffee cake.

2 eggs
1 teaspoon vanilla extract
1/2 cup oil
1/2 cup sugar
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups apples, peeled and sliced
1/2 cup pecans, chopped
1/2 cup brown sugar, packed
4 tablespoons butter or 4 tablespoons margarine
1/4 cup milk
1/2 teaspoon vanilla extract
pecan halves

Steps:

  • Beayt together eggs, vanilla and oil until well combined. Stir in half of the following; sugar, flour, salt and baking soda. Mix remaining half with the apples and chopped nuts. Combine the 2 mixtures by hand until well mixed.
  • Grease a 9" pie plate and spread mixture into pan. Bake at 350 degrees for 30-35 minutes.
  • Topping: Combine brown sugar, butter and milk in a saucepan; bring to a boil over medium heat. Remove from heat and stir in vanilla. Drizzle topping over cake and garnish with pecan halves.

5 medium eggs
200g granulated sugar
100ml vegetable oil
175g plain flour
2 tbsp cocoa powder
1 tsp baking powder
½ tsp cinnamon
½ tsp mixed spice
½ tsp ground ginger
5 eating apples , peeled, cored and diced, about 600g
1 tsp each icing sugar and ground cinnamon, for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 23cm loose-bottomed cake tin with baking parchment. In a large bowl, beat together the eggs and sugar until thick and pale, about 5 mins. Pour in the oil and stir well to combine.
  • Sieve in the dry ingredients and fold through until the mixture is smooth and well combined before adding the apples.
  • Carefully pour the mixture into the tin and bake for 45-50 mins. Leave to cool slightly before turning out onto a cooling rack. Once the cake is cool, dust with icing sugar and cinnamon.

250 g plain flour
1 teaspoon baking powder
125 g sugar
125 g butter
3 -4 cooking apples, peeled cored and roughly chopped
1 egg, beaten
1/3 cup milk

Steps:

  • Preheat oven to 180°C.
  • Grease a 20cm round cake tin.
  • Sift together the flour, baking powder and the sugar.
  • Cut in the butter roughly with a knife (do not rub it in).
  • Add the apples.
  • Stir in the egg and milk to make a fairly stiff mixture. The batter will appear fairly lumpy.
  • Pour the mixture into the prepared cake tin.
  • Bake for about 1 hour.
  • Serve hot with custard or ice-cream.
  • This cake can be cooked ahead and reheated in the microwave as needed.

Pork is a natural pairing for anything apple. More like a slightly sweet bread than a dessert, Big Mama's Apple Nut Cake is perfect with any pork main course, although it can also be served to end the meal. It can be made either in a loaf pan or in a traditional tube pan, depending on how you plan to serve it. The spiced fruit aroma this cake emits made it one of Big Mama's favorites. With six kids and Big Bob to look after, she was entitled to a little aromatherapy. Because it was not overly sweet, the kids were allowed to snack on it during the day. After viewing this recipe I asked Ruth, the youngest daughter of the Gibson clan, what kind of nuts should be used. She said the nut of choice was either hicka nuts or scaly barks, two varieties you are unlikely to find at your local grocer. "Hicka nuts" is turn-of-the-century Southern country slang for hickory nuts, and "scaly barks" are the nut from the shagbark hickory tree. Hickory nuts are tough to crack, and getting the meat out is very difficult, but they must be superior in flavor because Big Mama would walk past three pecan trees to get to the scaly barks. You can substitute whatever nut you prefer.

  • Preheat the oven to 300°F. Grease a 10 x 5-inch loaf pan or a 10-cup tube pan. In a medium bowl, combine the flour, sugar, cinnamon, and baking soda and mix well. Stir together the eggs and oil and then add to the dry ingredients. Stir in the apples, nuts, and vanilla extract. Pour the mixture into the prepared pan. Bake for 1 hour and 15 minutes before testing the cake for doneness. Remove it from the oven when the cake tester comes out clean. Let the cake cool slightly before removing it from the pan.
