BEST SAUSAGE STUFFING
This stuffing has lots of flavor and is nice and moist. You can also change the ingredients to your liking. I quadruple this recipe and make the extra in my electric roaster, that's how much everyone loves it. This recipe is very adaptable, you can change it around anyway you like and it will still be delicious!

Steps:
- Place sausage in a large, deep skillet; cook over medium-high heat until evenly brown, about 10 minutes. Remove sausage from the skillet and let drain on paper towels. Combine melted margarine with the sausage drippings until there is 1 cup of drippings and margarine combined.
- Cook and stir onion and celery in the margarine-dripping mixture in the same skillet over medium heat until onion is tender but not browned, about 10 minutes . Stir in about 1/3 of the bread cubes. Pour onion mixture into a large bowl and stir in remaining bread cubes, sausage, poultry seasoning, and pepper. Watch your hands, it's hot. Mix well. This stuffing is ready for baking.

GOOD OLD COUNTRY STUFFING
A classic country style bread-and-sausage stuffing with a mushroom gravy.

- Preheat oven to 350 °F.
- Crumble dried white bread into a large bowl. Add cooked white rice and crushed saltines. Sauté pork sausage. Add celery and onion and sauté until transparent - 5 to 10 minutes. Pour over bread and rice mixture. Add stock - mix, add salt, pepper, sage and poultry seasoning. Add 3 beaten eggs and mix well. Reserve 2 tablespoons of mix for gravy. Add slices of 1/4 stick of butter on top. Pour into greased pan and bake until done - 45 minutes.
- Mushroom Giblet Gravy:
- Bring stock and giblets to a boil. Add bouillon and 2 tablespoons reserved stuffing mixture. Make a slurry by whisking together the cornstarch and water and add to the boiling stock; cook 2 to 3 minutes. Meanwhile, sauté mushrooms until browned in 3 tablespoons butter. Add mushrooms to gravy with egg and salt and pepper, to taste.

SAUSAGE-STUFFING CASSEROLE
I developed this recipe, it is really a wonderful moist casserole. Adjust the jalapeno peppers and the cayenne pepper (if using) to taste. To save time you can prepare the stuffing mixture and/or cook the sausages up to a day in advance, the remainder of the recipe is very easy, just layer and bake! Do not add any salt to any part of this recipe as the sausage meat, soups and stuffing mix already has salt added. If desired the sausage meat can be replaced with cooked diced chicken or turkey.

- Butter a 13 x 9-inch casserole dish.
- For the stuffing; melt butter in a large skillet, add in onions, garlic, celery, green bell pepper and jalapeno peppers, saute, stirring with a wooden spoon for about 6-7 minutes or until well softened.
- Season with black pepper and cayenne (if using, do not add in any salt to the mixture the stuffing mixture already has added salt in it).
- Add in the mushrooms, then the 2 cups chicken broth and 1 cup water (or use 3 cups water) bring to a boil; remove from heat.
- Add in the 3 packages stuffing mix; toss with a fork to blend, cover and let sit for 10 minutes.
- After 10 minutes toss again with a fork.
- Layer half of the stuffing mix into the bottom of the buttered baking dish.
- Then top/sprinkle with the cooked sausage; push the mixture down with a back of the spoon to pack evenly.
- In a bowl whisk together eggs with milk and one can undiluted mushroom soup; drizzle over the sausage in the dish.
- Sprinkle/top with remaining half of the stuffing mixture.
- Sprinkle with grated Parmesan cheese, then spoon and spread the remaining undulted mushroom soup on top (the soup does not have to cover the top completely, just use a spoon to spread out as best you can).
- Bake uncovered for about 1 hour or until the middle is set.

- Prepare cornbread stuffing mix according to package directions. Preheat oven to 350 degrees F (175 degrees C).

STUFFING CASSEROLE
This Stuffing Casserole with sausage and green beans can be made up to 3 days ahead of time and baked in the oven or heated in the Crock Pot!

- Preheat oven to 350 degrees F.
- Brown the sausage in a large pan (at least 10") over medium heat.
- Remove the sausage and melt 4 Tablespoons butter.
- Add the onions, fresh green beans, and celery. Cook until softened, about 5 minutes.
- Add the garlic, salt, and pepper. Cook for an additional minute.
- Add the chicken broth.
- Use a silicone spatula to scrape up any brown bits on the pan into the chicken broth for added flavor.
- Turn off the heat. Mix in the cream of chicken soup, sour cream, and dried cranberries.
- Add the sausage back to the pan along with the stuffing and stir until well-combined.
- Add to a lightly greased casserole dish. (At least 13" x 9")
- Bake, covered, for 1 hour.
- Remove cover and bake for 5 additional minutes to brown the top.
- Add the crispy fried onions and bake for 5 additional minutes.
- Top with fresh parsley and serve!
- Cook, crumble and drain the sausage first. (Or use precooked sausage links and dice them up.)
- Combine the sausage with remaining uncooked stuffing ingredients.
- Add the stuffing mixture to a lightly greased Crock Pot instead of a casserole dish.
- Cook on low heat for 6-7 hours or on high for 4 hours.
- Brown the top in a 350 degree oven for 5 minutes, add the crispy fried onions, and bake for 5 more minutes.
- This Stuffing Casserole can be assembled in the casserole dish up to three days ahead of time and refrigerated until ready to bake. Let it sit out for 10-15 minutes prior to baking.
- You can also freeze it for up to three months and let it thaw in the refrigerator overnight prior to baking it.

- Gather the ingredients. Preheat oven to 425 F.
- In a large bowl, combine the cornmeal, baking powder, salt, and baking soda.
- Mix in the buttermilk, egg, and 2 tablespoons of the vegetable oil. Stir until thoroughly combined.
- Pour the remaining 2 tablespoons of vegetable oil into the bottom of a 9-inch cast iron skillet. Heat the skillet in the oven for 10 minutes.
