In Amite, Louisiana, Audrey Lanier relies on her bread machine to fix this moist dark brown loaf. Satisfying slices get plenty of flavor from aniseed, caraway and fennel, along with bursts of sweetness from the raisins.

Provided by Taste of Home

Time 3h10m

Yield 1 loaf (2 pounds, 16 servings).

Number Of Ingredients 15

1 cup warm 2% milk (70° to 80°)
1/4 cup water (70° to 80°)
1/4 cup canola oil
1/4 cup molasses
1/4 cup packed brown sugar
1-1/2 teaspoons salt
1 teaspoon grated orange zest
1/4 cup quick-cooking oats
3/4 cup rye flour
2-3/4 cups bread flour
2-1/4 teaspoons active dry yeast
1/2 cup raisins
1/2 teaspoon aniseed
1/2 teaspoon caraway seeds
1/4 teaspoon fennel seed, crushed

Steps:

  • In bread machine pan, place the first 11 ingredients in order suggested by manufacturer. Select basic bread setting. Choose light crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , Just before the final kneading (your machine may audibly signal this), add the raisins, aniseed, caraway and fennel.

  • In a standing mixer fitted with a dough hook, combine both flours, the salt and the yeast. Turn the machine to medium low, add the water and mix until the flour is moistened, about 2 minutes, scraping down the side of the bowl with a rubber spatula as needed. Increase the speed to medium and knead until a soft dough forms, about 2 minutes longer. Add the raisins and knead just until evenly distributed.
  • Transfer the dough to a lightly floured work surface and form into a ball. Set the dough in a well-floured bowl, cover with plastic and let rise in a warm place until doubled in bulk, about 1 1/2 hours.
  • Preheat the oven to 450° and spray a 9-inch, enameled cast-iron casserole with vegetable cooking spray. Turn the dough out into the casserole. Cover with plastic wrap and let stand until the dough is doubled in bulk, about 1 hour.
  • Remove the plastic. Dust the top of the dough with all-purpose flour. Using a razor blade or sharp knife, make a shallow X in the top of the dough. Bake for about 35 minutes, until the loaf is risen, lightly golden on top and an instant-read thermometer inserted into the center of the loaf reads 200°. Tip the bread out onto a wire rack. Let the bread cool slightly before slicing and serving.

  • Dissolve sugar and yeast in warm water in a large bowl; let stand 5 minutes. Stir in oil. Lightly spoon flours into dry measuring cups; level with a knife. Combine 2 cups bread flour, whole wheat flour, and the next 5 ingredients (whole wheat flour through pepper) in a bowl. Add flour mixture to yeast mixture. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 10 minutes); add enough of remaining bread flour, 1 tablespoon at a time, to prevent dough from sticking to hands. Knead in raisins, walnuts, and rosemary.
  • Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in size. Form dough into a ball; place in a 9-inch pie plate coated with cooking spray. Cover and let rise 30 minutes or until doubled in size.
  • Uncover dough. Score top of loaf in a diamond pattern using a sharp knife. Bake at 400° for 50 minutes or until loaf sounds hollow when tapped. Remove from pan, and cool on a wire rack.

  • The next day, set the dough out at room temperature, give it another fold, and allow it to warm up for about 2 hours. This schedule may be adjusted to meet your needs. A long, cool fermentation will lead to more complex flavors, moister bread and longer shelf life, but the dough may be simply left out at room temperature for 4 to 5 hours and then shaped. Divide dough into 3 equal pieces, and shape into rounds or batards. Place in baskets or pans and let rise at room temperature for 1 to 2 hours.

  • Using two large glass measuring cups or pitchers, fill one 1/4 of the way with hot tap water and the other with cold tap water. Hold a thermometer in the pitcher with hot water and pour the cold water into the hot water until the thermometer reads 80 degrees F. Using a kitchen scale, weigh out the required water in a large bowl. Add the instant yeast to the water and give it a quick swirl with your finger. (Note: I am assuming a room temperature of 70 degrees F here. If your room temperature is higher you will need slightly cooler water, if you room temperature is lower you will need slightly warmer water.)
  • Weigh the spelt, einkorn and rye flour in a medium bowl and whisk or mix with your hands to combine. Add the flours on top of the water and yeast. Finally, add the salt on top of the flour. Mix the dough together with your hands until evenly combined. Cover with a kitchen towel and let the dough rest for 30 minutes so the flour can absorb the water.
  • Lightly flour your work surface and scrape the dough out on to it. Gently knead the dough for a couple of minutes until it has tightened up and feels smooth. Place the dough back in the bowl and cover with plastic wrap, beeswax wrap, a large dinner plate or something else that will keep the moisture from escaping and the top of the dough from drying out.
  • Let the dough rise on the counter for 12 hours or until it has doubled in size and the surface is dotted with bubbles.
