Country Quiche With Idaho Potato Hash Brown Crust image

An absolutely delicious brunch choice that can be made a day in advance & served at room temp or reheated. Found in The Times-Picayune where it was noted this recipe was adapted from Chef Lou Aaron of Westside Catering to suit Louisiana palates.

1 1/2 cups potatoes, peeled, diced (Idaho russet)
1/4 cup onion, minced
1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
1 egg, beaten
2 teaspoons parsley, chopped
salt, to taste
black pepper, freshly ground
hot sauce, to taste
2 teaspoons mozzarella cheese, shredded
1/4 cup onion, chopped
1 1/2 cups shrimp, boiled & chopped
1 cup half-and-half
4 eggs
1 teaspoon Dijon mustard (Creole fine too)
1 pinch of grated nutmeg
salt, to taste
black pepper, freshly ground, to taste
hot sauce, to taste
1 cup swiss cheese, shredded
6 tomatoes, slices

Steps:

  • To make the crust: Preheat the oven to 375 degrees. Coat a 9-inch quiche or pie pan with cooking spray. Combine in a bowl all the crust ingredients except mozzarella. Season with salt, pepper, and hot sauce. Stir to mix. Press the mixture evenly on the bottom and up the sides of the baking pan. Bake for 10 to 12 minutes. If the edges of the crust begin to brown, cover with a piece of aluminum foil.
  • Remove from the oven and immediately sprinkle the crust evenly with the cheese. Return to the oven and bake just until the cheese melts, about two minutes. Remove from the oven and set aside. (You may want to run a thin, small knife around the edges of the crust to loosen it a bit.).
  • To make the filling: Sprinkle the onions on the bottom of the crust. Arrange the shrimp evenly on the crust. Combine the half-and-half, eggs and mustard and whisk to blend. Season with salt, pepper and hot sauce. Pour the mixture into the prepared shell and top with the Swiss cheese. Bake for 20 to 25 minutes, arrange the tomatoes evenly over the pie filling and bake for another five to eight minutes, or until a toothpick inserted in the middle of the quiche comes out clean.
  • Cool a bit before slicing to serve.

1 large egg
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups frozen shredded hash brown potatoes, thawed
1/4 cup shredded Asiago cheese
FILLING:
3 large eggs
1 tablespoon minced fresh chives
1/3 cup shredded Colby-Monterey Jack cheese
1/3 cup fresh baby spinach, thinly sliced
2 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Grease 8 muffin cups., In a bowl, whisk egg, salt and pepper until blended; stir in potatoes and Asiago cheese. To form crusts, press about 1/4 cup potato mixture onto bottom and up sides of each prepared muffin cup. Bake until light golden brown, 14-17 minutes., For filling, in a small bowl, whisk eggs and chives until blended; stir in cheese and spinach. Spoon into crusts; top with bacon. Bake until a knife inserted in the center comes out clean, 6-8 minutes., Freeze option:Freeze cooled baked tarts for up to 3 months. To use, reheat tarts on a baking sheet in a preheated 350° oven until heated through, 5-10 minutes.

3 cups hash brown potatoes (country style, thawed)
1/4 cup butter, melted
1 cup ham, finely chopped
1 cup cheddar cheese, shredded
1/4 cup green bell pepper, chopped
1/4 cup green onion, chopped
3 eggs
1/2 cup milk
salt, to taste
pepper, to taste

Steps:

  • Form the potatoes into a shell in a quiche pan or pie plate.
  • Drizzle with the butter.
  • Bake at 425 for 25 minutes.
  • Remove from the oven. Decrease the oven temperature to 350 degrees.
  • Mix the ham, cheese, green pepper, and green onions in a bowl.
  • Spread over the potatoes.
  • Beat the eggs, milk, salt, and pepper in a bowl.
  • Pour over the ham mixture.
  • Bake for 30 minutes or until a knife inserted near the center comes out clean.
  • Let stand for 10 minutes before cutting.

This recipe is from Creme de Colorado cookbook and it is fantastic. Just as good on day 2 and 3.... Use whatever cheeses you have on hand, but the Swiss and pepper jack combo is excellent.

1 (24 ounce) package frozen hash browns
1/3 cup melted butter
1 cup shredded jalapeno pepper cheese
1 cup shredded swiss cheese
1/2 cup half-and-half
2 eggs
1/4 teaspoon seasoning salt

Steps:

  • Press thawed hash browns between paper towels to remove moisture.
  • Fit hash browns into greased 10-inch pie plate, forming a solid crust.
  • Brush crust with melted butter, making certain to brush top edges.
  • Bake at 425F degrees 25 minutes.
  • Remove from oven.
  • Sprinkle cheeses evenly over bottom of crust.
  • Beat half and half with eggs and seasoned salt.
  • Pour over cheeses.
  • Bake uncovered at 350F degrees 30-40 minutes or until knife inserted in center comes out clean.

1 pound ground pork sausage with sage
1 teaspoon baking powder
20 grape tomatoes, sliced in half and sprinkled with salt
6 large eggs
10 ounces sharp Cheddar cheese, grated (about 2 1/2 cups)
Salt and pepper
Two 9-inch unbaked frozen pie shells (set them out to thaw while preparing the other ingredients)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, cook the sausage until browned and cooked through, about 10 minutes. Then remove with a slotted spoon and reserve.
  • In a large mixing bowl, whisk the baking powder, tomatoes and eggs together. Add the cooked sausage and the cheese to the egg mixture and stir together with a large spoon. Add salt and pepper and divide the mixture between both unbaked pie shells. Bake until the filling is set, about 30 minutes. Serve warm or at room temperature.

⅓ cup butter, melted
seasoning salt to taste
1 cup diced cooked ham
¼ cup chopped onion
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown.
  • In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture.
  • Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.
