This is how my Brazilian mom prepares pork ribs. Boiling the ribs with the seasonings ensures that the meat will remain moist and juicy, and that the flavors will fully penetrate the meat. I hope you like these as much as I always have! Serve with lime wedges, rice and a fresh green salad.

10 pork spareribs
½ cup soy sauce
10 cloves garlic, crushed
1 tablespoon dried rosemary
1 tablespoon dried oregano
2 bay leaves
1 lime, juiced
10 sprigs fresh parsley
ground black pepper to taste
2 limes, cut into wedges

Steps:

  • Place the spareribs into a large pot, and fill with just enough water to cover. Add the soy sauce, garlic, rosemary, oregano, bay leaves, lime juice and 3/4 of the parsley. Bring to a boil, then simmer uncovered over medium heat until the water has completely evaporated, about 25 minutes.
  • When all of the water is gone, remove the bay leaves, and allow meat to brown, turning occasionally. Use a spatula to scrape up browned bits and softened garlic from the bottom of the pot, and toss them with the pork. The garlic will dissolve onto the meat. Remove the meat, and drain on paper towels. Season with black pepper and garnish with lime wedges and remaining parsley.

1 cup ketchup
1/2 cup cider vinegar
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons prepared horseradish
2 tablespoons prepared mustard
2 teaspoons ground ginger
1 to 2 teaspoons hot pepper sauce
1/2 teaspoon garlic powder
4 to 5 pounds country-style pork ribs
1/4 cup honey
2 tablespoons brown sugar

Steps:

  • In a bowl, combine the first 10 ingredients; mix well. Pour 1-1/2 cups marinade into a large resealable plastic bag; add the ribs. Seal and turn to coat; refrigerate for at least 4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from the ribs. Grill, covered, over indirect medium heat for 20 minutes on each side. Meanwhile, in a saucepan, combine the honey, brown sugar and reserved marinade. Bring to a boil; cook and stir for 2 minutes or until slightly thickened., Baste ribs with some of the sauce. Grill 15-20 minutes longer or until a thermometer reads 160°, turning and basting occasionally. Serve with the remaining sauce.

Roasting pan (or rimmed baking sheet)
Silicone basting brush (optional)
Country-style pork ribs*
Salt and pepper
Your favorite BBQ sauce

Steps:

  • Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
  • Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
  • Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.
  • Turn oven down to 275°F and bake ribs, uncovered, for 1 hour more, or until you can pull the meat apart with a fork (if your ribs were small and already pretty tender when you put them back in the oven, start checking after 20 minutes). Brush with another coat of BBQ sauce, rest for 5 minutes, serve and enjoy!

2 teaspoons smoked salt ((available on Amazon))
1/2 teaspoon black pepper
2 teaspoons smoked paprika
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper

Steps:

  • Preheat your oven to 325 degrees F.
  • Arrange the ribs in a single layer in an ungreased 9 X 13-inch rimmed baking dish.
  • Mix together the dry rub ingredients, and sprinkle the rub on top of the ribs.
  • Cover the baking dish tightly with heavy duty foil (or a double layer of regular foil), and bake until the ribs are very tender, about 2 hours.
  • With a slotted spatula, remove the cooked ribs to a broiler-safe, foil-lined, rimmed baking sheet. Either flip them or place them on their side, so that the fat is exposed to the heating element. The goal is to brown it.
  • Switch the oven to broil on high ( 500°F) and set an oven rack 6 inches below the heating element (not directly below).

My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

5 pounds bone-in country style pork ribs
kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons canola oil
2 medium yellow onions (, sliced 3/8" thick)
3/4 cup ketchup
3/4 cup water
1/2 cup granulated sugar
1/3 cup dry sherry wine
2 tablespoons apple cider vinegar
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 cloves garlic (, pressed or minced)
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon chili powder

Steps:

  • Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  • Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  • Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  • While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  • Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  • Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  • Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

several sprinkles onion powder
1 lemon, sliced - used a mandolin
1 large onion, chopped
2 c water
1 c ketchup
2 Tbsp garlic, minced - i used from a jar
1/4 c brown sugar, firmly packed
1/4 c worcestershire sauce
1 1/2 Tbsp dijon mustard
1 Tbsp garlic powder
1/4 c honey
1 tsp red pepper flakes - optional
few drops hot sauce
1/4 c cider vinegar
1 1/2 tsp celery seed
1 1/2 tsp chili powder

Steps:

  • 1. Preheat oven to 450 degree F. Season both sides of ribs with salt, pepper and onion powder.
  • 2. Spread into a shallow baking pan or dish.
  • 3. Sprinkle onion and lemon atop the ribs.
  • 4. Bake for 45 minutes. Last 5 minuted of baking; combine all other ingredients in a saucepan and bring to a boil. Drain liquid from ribs.
  • 5. Pour the sauce over the ribs. Reduce oven to 350...bake for 1 - 1 1/2 hours longer, or until desired tenderness.

Stir together paprika, chile powder, garlic powder, onion powder, 3/4 teaspoon of the salt, and 1/2 teaspoon of the pepper in a small bowl until blended. Sprinkle all sides of ribs with spice mixture, and place ribs in a single layer in prepared sheet pan.
