PORK & PARSNIP COBBLER
Sweet parsnips work well with pork in this one pot autumnal warmer - it really needs little or no accompaniment

Steps:
- For the filling, heat 2 tablespoons of oil in a large pan and fry the pork in small batches for 4-5 minutes until just browned, then remove with a slotted spoon and set aside. Add the onions to the pan and fry for 5-6 minutes until soft and golden. Return the pork to the pan and sprinkle in the flour. Cook for 1 minute, stirring well.
- Add the celery, apricots, lemon and orange zest, apples, garlic, herbs and spices. Pour in the wine and stock and bring to simmering point, then cover and gently cook for 11⁄4 hours or until the pork is tender. Remove from the heat.
- Meanwhile, preheat the oven to 200C/Gas 6/fan oven 180C. Peel and cut the parsnips into 2.5cm/1in dice. Put the remaining oil in a roasting tin and put in the oven for 5 minutes until hot. Tip the parsnip chunks into the roasting tin and coat in the hot oil. Roast in the oven for 30 minutes until cooked through and golden brown. Drain and set aside. When the pork is tender, stir in the parsnips. Spoon into a 2 litre/31⁄2 pint ovenproof dish and leave to cool completely.
- For the cobbler crust, sift the flour and season. Add the suet, butter and parsley and lightly mix in with a fork. Make a well in the centre, then add the lemon zest and juice and gently bring together to make a soft and pliable dough. If it is too dry, add a little cold water, but don't knead the dough or it will become tough. Reduce the temperature to 180C/Gas 4/fan oven 160C.
- Roll out the dough on a lightly floured surface to about 5mm/1⁄4in thick. Cut the dough into rounds using a 7.5cm/3in pastry cutter. Re-roll the trimmings and cut out more rounds until all the dough is used up. Arrange the circles of dough so that they slightly overlap on top.
- Brush the dough with beaten egg and bake in the oven for 45 minutes until the crust is golden.

- Preheat oven to 375°F. Mix 1 cup of the sugar, tapioca and cinnamon in large saucepan. Gradually add water. Stir in walnuts. Bring to full boil on medium heat, stirring constantly. Remove from heat; stir in apples. Pour into 8-inch square baking dish.
- Mix remaining 1/3 cup sugar, flour, baking powder and salt in medium bowl; stir in cheese. Mix butter and milk. Add to flour mixture; stir just until moistened. Spoon over apple mixture.
- Bake 35 to 40 minutes or until golden brown. Cool. Top each serving with 1/4 cup of the ice cream.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish and line a sheet pan with aluminum foil.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a plate and set aside, reserving drippings in the skillet.
- Melt sausage drippings and 3 tablespoons butter together in the skillet over medium heat. Add onion and mushrooms; cook until soft, stirring occasionally, 4 to 5 minutes. Stir in 1/4 cup flour and cook for 2 minutes; mixture will thicken as flour cooks. Stir in chicken broth and continue to cook and stir until flour lumps dissolve and mixture begins to bubble, about 1 minute. Remove from heat and add sage. Season with salt and pepper.
- Stir heavy cream into the mixture and add reserved sausage, turkey, and mixed vegetables. Adjust seasoning if necessary and pour into the prepared baking dish.
- Combine flour, baking powder, and salt in a large bowl for topping. Stir in 1 cup heavy cream at first; gradually add remaining cream to form a wet, sticky dough.
- Drop large tablespoon-sized dough balls on top of the meat and vegetable mixture, evenly spacing 15 to 16 balls in total.
- Combine melted butter, parsley, chives, and garlic powder in a small bowl. Brush mixture lightly over each dough ball. Place the baking dish onto the prepared sheet pan.
- Bake in the preheated oven until bubbly and topping is browned, about 45 minutes.
- Remove from the oven and let cool on a wire rack for about 30 minutes before serving.

PAPRIKA PORK COBBLER
Warm Spicy Pork Or Beef Casserole with dumpling type scone top.

- Preheat the oven to 180c/350f gas mark 4
- Heat the oil in a frying pan. Coat the pork in some of the flour and fry until browned, then put into a casserole dish.
- Fry the onions and carrots until lightly cooked, onions at the translucent stage, add to the casserole dish. Stir in the rest of the flour the toms, stock and paprika and tom puree mix well.
- Cover and cook for about an hour and a half. I check and stir a few times.
- Then....
- For the cobbler. Sift the flour and add the seasoning and anything else you want to add. Rub in the marg, until like bread crumbs then stir in the milk a little at a time until it is a smooth dough. Roll out into about 1 inch thick and cut into rounds. Arrange the rounds overlapping each other around the dish. Cook for a further 20-30 mins.
- Feeds about 4 people.
- I serve with Spuds and veg, but sometimes with have it in dishes with crusty bread.
- If doing a beef one instead....
- Change the stock to oxo's and gravy granules and omit the flour. Or just use Knorr Beef Stock Pots for more flavour.
