This recipe was printed in our local paper. I was looking for recipes to use the soup bones I got when purchasing a side of beef from our local farmer. This is thick and rich and so easy to toss in the crock pot. Set your bread-maker to be ready when the soup is done, and dinner is served!

2 lbs soup bones with meat
3 carrots, peeled &, chopped
3 medium potatoes, peeled &, chopped
1 large onion, peeled &, chopped
3 stalks celery, chopped
1 (28 ounce) can chopped tomatoes, undrained
6 cups water
6 beef bouillon cubes, crushed
1/2 lb lentils, rinsed
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon marjoram
3 cups shredded cabbage

Steps:

  • In slow cooker (4-1/2 quarts or larger) combine all ingredients except cabbage.
  • Cover& cook on low 8 hours or until lentils are tender.
  • Remove beef from bones, shred and and return to pot.
  • Add shredded cabbage, turn pot to high setting, and cook 30 to 45 minutes or until vegetables are tender.

My husband gave this 5 stars. Very delicious! You can brown the beef a day ahead and assemble the next morning. Sometimes I'll add extra ground beef, onions and minced garlic or add ground red pepper for some spice.

1 lb ground beef
1 onion, diced
1/2 teaspoon chopped garlic
1 ounce dry onion soup mix (1 envelope)
2/3 ounce Italian salad dressing mix (1 envelope)
1/4 teaspoon pepper
1/4 teaspoon season salt
14 ounces beef broth (1 can)
14 ounces chicken broth (1 can)
1 1/2 cups water
8 ounces diced tomatoes (undrained)
8 ounces tomato sauce
1 tablespoon soy sauce (preferably lite)
1 cup celery, slices
1 cup carrot, slices (thinly sliced)
4 tablespoons butter
1/4 cup flour
2 tablespoons flour
1/2 teaspoon italian seasoning
1/4 cup grated parmesan cheese (or shredded-which will blend better!)
shredded parmesan cheese
cooked macaroni

Steps:

  • Brown beef, onions and garlic. Drain, and add 1/4 cup of flour and mix.
  • To crock pot add: beef mix, onion soup mix, salad dressing mix, pepper, season salt, beef & chicken broth, water, tomatoes, tomato sauce, celery, carrots, italian seasoning, and soy sauce.
  • Cook for 8 hours.
  • Cook macaroni.
  • In saucepan make roux: melt butter on low and add 2 tablespoons of flour. Add to crock pot.
  • Add 1/4 cup parmesan to crock pot.
  • Serve over macaroni.
  • Serve and top with shredded parmesan.

1 cup dried lentils
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion
2 cloves garlic, minced
1 ½ cups diced cooked ham
½ teaspoon dried basil
¼ teaspoon dried thyme
½ teaspoon dried oregano
1 bay leaf
¼ teaspoon black pepper
32 ounces chicken broth
1 cup water
8 teaspoons tomato sauce

Steps:

  • In a 3 1/2 quart or larger slow cooker combine the lentils, celery, carrots, onion, garlic and ham. Season with basil, thyme, oregano, the bay leaf and pepper. Stir in the chicken broth, water and tomato sauce. Cover and cook on Low for 11 hours. Discard the bay leaf before serving.

  • In a large skillet, heat the olive oil over medium high. Once the oil is hot, add the onion. Cook the onion, stirring often, until it is very soft and beginning to nicely brown and break down, about 8 minutes. Add the carrots, celery, Italian seasoning, salt, smoked paprika, and pepper. Sauté until the carrots and celery are barely soft, about 2 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Transfer to a 6-quart or larger slow cooker.
  • To the slow cooker, add the lentils, diced tomatoes, crushed tomatoes, and vegetable broth. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours, or until the lentils are tender and retain a slight amount of pleasant chew but are not mushy.
  • Remove the Parmesan rind (if using). Stir in the red wine vinegar and sugar. If the soup is too thick for your liking, thin with a bit of water or additional broth until you reach your desired consistency. Taste and adjust the seasonings as desired. Serve hot with a sprinkle of parsley, Parmesan (if using), and bread for dipping.
