A yummy mix of veggies and eggs, topped with cheese and hot sauce. You may also use Indian curry spice or garam masala instead of cayenne and omit the cheese if you like.

Steps:
- Bring a small pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
- Saute the onion and garlic in a lightly oiled skillet over medium high heat. When onion is soft, stir in the spinach and cook until wilted, about 2 minutes.
- Reduce heat to medium and pour in the eggs. Cook until the bottom has set, about 2 minutes. Stir in the potatoes and tomatoes; sprinkle on the salt, pepper, cayenne and hot sauce. Cook, stirring occasionally, until eggs have set. Sprinkle with grated cheese and serve warm.

- Heat 1 inch water to boiling in 2-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat to medium-low. Cover and cook 6 to 8 minutes or until potatoes are tender; drain.
- Beat eggs, milk, salt and pepper with fork or wire whisk until a uniform yellow color; set aside.
- Melt butter in 10-inch skillet over medium-high heat. Cook potatoes in butter 3 to 5 minutes, turning potatoes occasionally, until light brown. Stir in onions. Cook 1 minute, stirring constantly.
- Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist. Sprinkle with bacon.

TOFU EGG BREAKFAST SCRAMBLE
This is a great protein loaded breakfast dish that works well on its own with toast or as filler for a wrap.

- Whisk the eggs, salt and pepper together well in a mixing bowl and set aside.
- Preheat a medium or small fry pan on medium heat. Add the butter and once melted add the onion and tofu. Sauté, breaking the tofu into small pieces until everything is lightly browned all over.
- Add the garlic and sauté for 2 minutes more and then add the spinach. After spinach has wilted (about 30 seconds) add the egg.
- Using a spatula stir the eggs until they are cooked through and then serve with your favourite breakfast accompaniments.
COUNTRY-STYLE SCRAMBLED EGGS
This is a recipe that my sisters and I often made for breakfast/brunch on the weekends, but we didn't measure the amounts. To make things easier, we used Ore Ida's Potatoes O'Brien Hash Browns, so no cleaning or dicing of the potatoes, onions and peppers, and we loved that it was a one dish meal. This recipe was found in my Taste Of Home Magazine, and uses fresh ingredients and lists the amounts. I would cut down the amount of green peppers for our taste, so adjust to your tastes.

- 1. How to Make it: Brown sausage in a large skillet; drain most of fat. In this skillet you will scramble your eggs so just set it aside.
- 2. In a pot Mix gravy cook till thick or as directions on gravy, add sausage to gravy and keep warm. Heat another skillet and put some oil in, when hot Combine potatoes with Anaheim pepper,onions and spread evenly across the bottom of the skillet and cook till nice and brown. - PREP: Coarsely chop the onion and red pepper; we don't want these finely diced but chopped to about 1/2 inch pieces. Wash and dry the red potatoes. Peel if desired ( I leave the peel on). Cut into small pieces; about 1/2 inch. The potatoes need to be small to get tender in time and onions/pepper large enough they don't burn in the time it takes to cook the potatoes.
- ONION, PEPPER, AND POTATOES: In a very large nonstick skillet (12 inches) heat 4 tablespoons butter to medium heat. When the butter has melted, add in the prepared red pepper, onion, and potatoes. Season to taste with salt and pepper, and cook over medium heat for about 10-12 minutes, stirring occasionally. If anything begins to burn, turn down the heat, if it's not sizzling and cooking, slightly increase the heat. Once done (crisp on the outsides, tender on insides), empty the veggies onto a plate to sit while we cook the eggs.
- EGGS: Combine the eggs, milk (or half-and-half or heavy cream), Cajun seasoning, and salt and pepper to taste. Briskly whisk with a fork to beat air into the eggs and mix until smooth and combined. In the empty skillet, add the remaining 1 tablespoon butter and heat to medium high. Use a silicone spatula to spread the butter to coat the skillet. As soon as the butter is melted, pour the eggs into one even layer. Let stand for 30 seconds without touching. Then use the spatula to push the eggs from one side of the skillet to the other, tipping the skillet so uncooked eggs fill the empty space of the skillet. Continue this process until eggs are cooked, but still slightly wet and shiny. Do not over-cook/over scramble. As soon as the eggs are set, empty on top of the potatoes. Let pan slightly cool and then return to the burner at low heat.
