SAUSAGE PIE
This is an old Italian family recipe that has been handed down for three generations. Recipe makes 2-10" pies.

Steps:
- To make filling-.
- In a large pan, brown sausage meat until no longer pink. Place in colander and rinse with water to remove excess fat. Drain well and cool.
- In a large bowl, mix ricotta and eggs until well blended. Add grated cheese, mozzarella and parsley. Add cooled sausage meat. Mix well and set aside while making crust.
- To make crust-.
- Mix flour, margarine and 8 eggs until dough is formed. Knead a few minutes until dough is smooth and elastic. Divide dough into four pieces. Roll out each piece large enough to fit a 10" pie plate. Fill pie shells with sausage filling and cover with top crust. Seal top and bottom crust with beaten egg; pinch and seal crust. Brush top of pies with beaten egg and bake at 350F for 50 minutes. Pie should be deep golden brown.
- This pie tastes best served at room temperature or chilled. (Do not re-heat in microwave, pie becomes watery).

SAUSAGE PIE IN CRISPY POTATO CRUST
Any kind of sausage works in this versatile pie, so choose your favorite pre-cooked variety, or cook, grill or roast them up if they are raw. Don't be afraid to let the potato crust get really brown -- it will be deliciously crisp!

- For the crust: Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with nonstick spray.
- Spread the hash browns over a layer of paper towels to air-dry for 10 to 15 minutes (alternatively, you can press them vigorously between layers of paper towels 2 to 3 times).
- In a medium bowl, stir the dried hash browns, melted butter, Parmesan and pepper together. Press the mixture into the base and evenly up the sides of the prepared skillet. Transfer to the oven and bake until the potatoes begin to become golden brown and crisp, about 15 minutes.
- Meanwhile, for the filling: Toss the sausage, scallions and 3/4 cup of the Cheddar in a medium bowl to combine.
- In another medium bowl, whisk together the eggs, half-and-half, salt, pepper and hot sauce, if using.
- Carefully press the sausage mixture into the browned crust. Pour the egg mixture over the sausage and sprinkle with the remaining 1/4 cup Cheddar. Carefully transfer the skillet to the oven. Bake until the crust is deeply browned and very crisp and the filling appears set when you gently shake the skillet, 35 to 40 minutes. Cool at least 10 minutes before slicing and serving. Serve warm or at room temperature.

- Preheat the oven to 375°.
- In a heavy skillet over medium heat, crumble the sausage with a fork.
- Sauté the sausage until completely cooked.
- Drain off the fat, remove the sausage, and set aside.
- Melt the butter in another skillet over medium heat.
- Sauté the onions in the butter until tender.
- Add the milk and heat until steam rises, but do not boil the milk.
- Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.
- In a large bowl, beat the eggs, then add the cheddar, the onion mixture, the Worcestershire, salt, and pepper.
- Mix thoroughly and pour this into the pie crust.
- Top with cooked sausage, and bake for 30 minutes, or until set.
COUNTRY DIJON SAUSAGE PIE

Steps:
- 1. In large skillet, cook sausage, onion and garlic until sausage is crumbly.
- 2. Drain, reserving 1 tablespoon drippings.
- 3. Place mixture in large mixing bowl.
- 4. To drippings in skillet, add spinach.
- 5. Cook, covered, 2 minutes or until wilted.
- 6. Cool slightly.
- 7. Chop.
- 8. Add to sausage mixture.
- 9. Mix in oregano, eggs and mustard.
- 10. Pour in pastry-lined pie shell.
- 11. Sprinkle with cheese.
- 12. Top with pastry.
- 13. Cut vents.
- 14. Bake in preheated 400 oven 35 minutes or until browned.
ZUCCHINI & SAUSAGE PIE
This recipe comes from Picnic! by Edith Stovel. Even if you're not a fan of zucchini you'll enjoy this. I like using hot Italian sausage for the sausage.

- Heat oil in a large frying pan over medium heat and sauté the zucchini and onion for 5 minutes or until soft. Put the zucchini and onion in a large bowl.
- Add the sausage to the pan. Break up the sausage and cook over medium heat until no longer pink. Drain the sausage and add to the bowl. Mix zucchini, onion and sausage. Then add the remaining ingredients.
- Mix well and pour into a 9x9 inch baking pan. Bake for 40 minutes at 400 degrees F. Cut into squares. Serve warm or cold.

SAUSAGE PIE (EASTER PIE)
This is the traditional family recipe from my grandmother. Although when I made it, I added a little easter ham in it as well for some extra flavor. This recipe is very very tasty, but not the most figure friendly dish. This is a large recipe which is freezable. I froze about 1/2 the recipe for a few months later and it still tasted just as good.

- Preheat oven to 350.
- Prepare crust as you would for any pie. Divide the pastry into 2 balls. Roll out one ball of pastry and put into a 9in pie plate. Set other ball of dough aside until filling is done.
- Cut the basket cheese into about 1/2in squares and put into a large mixing bowl with cooked and cooled sausage. Beat the 9 eggs, sausage grease and parmesan cheese until combined. Mix the egg mixture into the sausage and cheese mixture until well combined. Pour into the pie plate.
- Roll out other dough ball the was set aside and put it on top the sausgae egg mixture and close the edges with a fork.
- Bake at 350 for about an hour and the crust is golden brown.

MONTEREY SAUSAGE PIE

- In a large skillet, cook the sausage, onion, and bell pepper, mushrooms, and garlic over medium heat until sausage is no longer pink, drain.
- Stir in 2 cups cheese, and transfer to a greased 9 inch deep dish pie plate.
- In a small bowl, combine the milk, eggs, bisquik, sage, and pepper, and pour over sausage mixture.
- Bake at 400 degrees for 20-25 minutes or until a knife inserted comes out clean.
- Sprinkle the remaining 1/2 - 1 cup cheese and bake 1-2 minutes longer, or until cheese is melted.
- Let stand 10 minutes before serving.

- Preheat oven to 375.
- Lightly grease/spray a pie dish.
- Unroll crescent dough and scatter triangles in the pie dish. Spread dough around bottom and halfway up the sides with fingers and press seems together to form a crust in the pie plate; set aside.
- In a skillet, brown the sausage with the garlic, onions, and green pepper. Cook, breaking up sausage with a spatula until no longer pink. Drain off fat.
