RUSTIC COUNTRY BREAD

A round loaf with a crisp crust--chewy, and great for sandwiches.

Number Of Ingredients 8

¾ cup spring water
¼ teaspoon bread machine yeast
1 ¾ cups bread flour
1 cup spring water
½ teaspoon bread machine yeast
2 cups bread flour
⅓ cup whole wheat flour
¼ teaspoon salt

Steps:

  • The day before making bread, place 3/4 cup spring water, 1/4 teaspoon bread machine yeast and 1 3/4 cup bread flour into pan of a bread machine. Select dough cycle and let knead for 5 minutes. Stop machine and let rise overnight.
  • The next day, pour starter from bread machine pan into a non-metallic container. Reserve 1/3 cup for this recipe and freeze remainder for later use.
  • In a large bowl, mix together 1/3 cup reserved starter, 1 cup spring water, 1/2 teaspoon yeast, 2 cups bread flour, whole wheat flour and salt. Select Dough Cycle; press Start. After 10 minutes, remove dough from machine and place in a lightly oiled bowl. Cover with a damp towel and let rise until doubled, about 2 hours. Deflate dough and let rise again until doubled, about 1 hour.
  • Turn dough out onto a lightly floured surface and form into a round loaf. Place loaf on a baking sheet that has been sprinkled with cornmeal. Cover and let rise until nearly doubled, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Spray loaf with water and place in preheated oven. Spray loaf again every two minutes during the first 10 minutes of baking. Bake for 40 minutes, until bottom of loaf sounds hollow when tapped.

I changed this from a basic whole wheat bread recipe I had. I hate hard crusts and this bread has a soft crust, stays fresh and tastes great. I've blogged about it and a lot of people have raved about it.

Number Of Ingredients 7

3 -4 cups whole wheat bread flour
1/2 cup vital wheat gluten
1 teaspoon salt
3 tablespoons olive oil
4 tablespoons honey
1 1/2 cups warm water
1 (1/4 ounce) package yeast or 4 teaspoons yeast

Steps:

  • Measure out the first three ingredients into a bowl, set aside.
  • Mix in a bowl the water (110-120 degrees), olive oil, honey and yeast.
  • Slowly mix in the flour (I use my Kitchen Aid mixer). Dough should be not sticking to the sides of the bowl. I usually end up using 3 1/2 cups of flour. I let my mixer knead the dough for 7-8 minutes. If you knead by hand, knead for 10-12 minutes. Wheat bread needs a longer knead time.
  • Place in oiled bowl in warm place, covered by a towel or plastic wrap,for about an hour or until about double in size.
  • Punch down, turn out of bowl. I make the dough into a ball and use a serrated knife to cut in half. Shape each half into a rectangular roll and place in loaf pans.
  • Cover and let rise about 45 minutes. Bake at 375 degrees for 25-30 minutes. Bread is done when it sounds hollow when tapped.

Number Of Ingredients 9

2 packages (1/4 ounce each) active dry yeast
1-1/4 cups warm water (110° to 115°)
1 cup Sourdough Starter
2 large eggs. room temperature
1/4 cup sugar
1/4 cup vegetable oil
1 teaspoon salt
6 to 6-1/2 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the Sourdough Starter, eggs, sugar, oil, salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in 2 greased 8x4-in. loaf pans. Cover and let rise until doubled, about 45 minutes. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool. Brush with butter.

  • To make the dough: Pour the water into a mixing bowl. Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Add the yeast and white whole wheat flour and let sit for several minutes until the mixture begins to bubble. , Stir in the salt and 1 cup of the bread flour and mix well. Gradually add the remaining bread flour until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a lightly floured surface and knead it for 4 to 5 minutes. Let the dough rest while you clean out and grease your bowl; then knead the dough a few more minutes. The dough should be on the slack side and a little tacky, but shouldn't be sticky. When the dough is well-kneaded, place it into the prepared bowl, cover, and let rise until doubled in size, 1 1/2 to 2 hours.
  • To use a brotform: When your dough has risen, flour your brotform heavily and sprinkle some seeds (sesame, flax, caraway, poppy...) or some rolled oats or rye flakes into the bottom. Gently deflate the dough, shape it into a ball and place it, smooth side down, into the brotform. Drape the dough with lightly greased plastic wrap and set it aside to rise for 45 minutes, or until it's crowned nicely over the rim of the brotform., If you're not using a brotform, simply round the dough into a ball and place it on a lightly greased or parchment-lined baking sheet. Let the dough rise for about 45 minutes, or until it's noticeably puffy., For dough shaped in a brotform: Have a lightly greased or parchment-lined baking sheet ready. Very gently, roll the dough from the brotform onto the baking sheet. It should slip out gracefully, without deflating. If it deflates totally (a small settling is OK), simply form it into a smooth ball, put it back in the brotform, and let it rise again (only this t
  • To bake the bread: Mist the loaf heavily with warm water; this will help it rise and enhance its crust. Bake the bread for 20 to 25 minutes. When it's done, remove it from the baking sheet, set it on the rack of the oven, turn the oven off, and crack the door open a couple of inches; let the bread cool completely in the oven. If you want a soft loaf, remove it from the oven, set it on a rack, and let it cool completely at room temperature.

  • Combine all the ingredients in a large bowl or extra large (6-quart) dough rising bucket. It's fine to use sourdough starter straight from the refrigerator if that's where you keep it, though it's best if you've fed it at least once in the past week.
  • Mix the ingredients by hand until the dough forms a shaggy mass and the flour is hydrated. Cover the bowl or bucket and let the dough rest at room temperature for 15 minutes.
  • Fold the dough by grabbing a section from one side with a wet hand, lifting it up, then pressing it down to the middle to seal. Repeat this with the remaining three sides of the dough.
  • Fold the dough two more times, giving it a 15-minute rest between the two, for a total of three sets of folds in 45 minutes. As you perform the folds you’ll notice that the dough smooths out, gaining strength and becoming elastic.
  • Cover the dough tightly after the final fold and leave it at room temperature (approximately 72°F) for about 12 hours. It's helpful to mark the height of the dough (use the markings on the bucket or a large rubber band around your bowl) to gauge how much it rises.
