1/2 lb pork tenderloin, ground
1/2 lb turkey breast, ground
1 teaspoon sage
1 teaspoon sugar
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon pepper
vegetable oil cooking spray

Steps:

  • Mix meat and seasonings together.
  • Shape into 12 patties.
  • Spray skillet with non-stick spray.
  • Brown patties on each side.
  • Add a few tablespoons water to pan, cover to reserve moisture, and cook till done.
  • NOTE: Use this recipe in place of pork sausage for a healthier sausage stuffing for your turkey.

1 lb ground pork
1 tsp salt
½ tsp black pepper
1 tsp sage
½ tsp paprika
¼ tsp ground thyme
½ tsp red pepper flakes
1 tbsp olive oil

Steps:

  • Mix all ingredients except the olive oil into a large bowl and massage with your hands until well combined. Divide the meat mixture into eight equally sized patties.
  • Put the olive oil in a large cast-iron pan or skillet over medium-high heat.
  • Pan-fry the patties for 2 to 3 minutes on each side or until golden brown, making sure there is enough space between each patty.

  • In a large saucepan, cook sausage over medium heat until no longer pink, breaking into crumbles; drain. Stir in the tomatoes, broth, thyme, rosemary and pepper. Bring to a boil. Stir in the beans; heat through.

2 Tbsp. brown sugar, packed
5 tsp. dried sage
5 tsp. salt
2 tsp. black pepper
½ tsp. garlic powder
½ tsp. dried thyme
¼ tsp. crushed red pepper flakes (optional)

  • Combine all ingredients in a small bowl.
  • Use immediately or store in a sealed container at room temperature for up to 2 months.

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes

Steps:

  • Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

COUNTRY WILD RICE WITH SAUSAGE

3 tablespoons canola oil
2 cups long-grain and wild rice mix, rinsed
3 cups low-sodium chicken stock
Kosher salt
1 tablespoon unsalted butter
1 large sweet onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
8 ounces pork breakfast sausage, removed from casing
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
2 tablespoons minced fresh chives

Steps:

  • Heat 2 tablespoons oil in a large saucepot over medium-high heat. Add the rice and cook, toasting until the rice begins to smell nutty, about 5 minutes. Add the chicken stock along with some salt and bring it to a boil, then reduce to a simmer and cover. Simmer until the rice is tender and has absorbed all the liquid, about 25 minutes
  • Meanwhile, heat the remaining tablespoon oil along with the butter in a large skillet over medium-high heat. Add the onion, pepper and a generous pinch of salt and cook until just tender and beginning to brown, about 5 minutes. Add the garlic, sausage, thyme and sage, and cook, breaking up with a wooden spoon until browned and cooked through, 4 to 5 minutes more.
  • When the rice is cooked and liquid is absorbed, turn off the heat, remove the lid and add the sausage and vegetables. Fluff and stir gently with a fork to combine. Add the rice to a serving dish and sprinkle with the chives before serving hot.

  • If using a meat grinder: Put your meat grinder parts or attachment in the freezer to chill at the same time you put the ingredients in the refrigerator. Set up your meat grinder with the smallest die according to the manufacturer’s directions. Working in batches, feed the meat mixture into the grinding tube and grind the sausage mixture into a separate bowl. If not using a meat grinder: See the note following the recipe about having your butcher grind the pork for you. Mix the pork with the remaining ingredients by hand. (Do NOT toss everything in a food processor or you’ll end up emulsifying the fat and meat proteins, which is a scientific way of saying you’ll end up with a very strangely textured sausage.)
  • Measure about 2 ounces (57 grams or about 1/4 cup) sausage and gently press it between your palms into a 2-inch (5 cm) patty that’s about 1/2 inch (12 mm) thick. Repeat until all the sausage has been used. [Editor’s Note: We prefer sausage patties for their ease of making and cooking. If you prefer sausage links and have the know-how, by all means, go ahead and put the sausage mixture in casings.] Place the sausage patties in a resealable plastic bag, separated by squares of wax or parchment paper, and stash in the fridge for up to 4 days or in the freezer for up to 6 months. (If freezing the sausage, be sure to safely thaw the meat prior to cooking.)
  • To cook the sausage patties, warm a cast-iron skillet or a sauté pan over medium heat for 1 minute. Add a few patties, being careful not to crowd the pan, and cook, turning every couple of minutes, until browned on both sides and cooked through in the center, about 10 minutes. The pork should register at least 145°F on an instant-read thermometer. Serve immediately.

  • Combine maple syrup, salt, pepper, dried sage, and marjoram leaf together in a small bowl then stir to create a slurry. Pour over pork in a large bowl then mix with hands until just combined - DO NOT OVERMIX or sausage will end up tough. Shape into 12 patties then place onto a plastic wrap covered baking sheet, and cover with more plastic wrap. Refrigerate overnight to let the flavors meld.
  • To saute: Let patties sit at room temperature for 10 minutes to take the chill off then saute in a large skillet sprayed with nonstick spray over medium heat (no higher,) for 4-5 minutes a side, or until cooked through.
  • To bake: Preheat oven to 400 degrees then line two baking sheets with foil and spray with nonstick spray. Transfer patties to prepared baking sheets then bake for 10 minutes, flip patties, and then bake for 7-10 more minutes or until cooked through.
