I've been making this for years it's a huge family hit. Not sure where I gathered the recipe from but I remember right before I got married I made this folder of recipes I wanted to try on the new hubby. Well this is one that has stuck. It's still in the orginal folder and I use it all the time.

1 1/2 lbs ground beef
1/2 cup tomato ketchup
3/4 cup tomato juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
2 eggs, beaten
1/4 cup onion, chopped
1 tablespoon italian seasoning
2 teaspoons prepared mustard
1 tablespoon liquid smoke
1 tablespoon Worcestershire sauce
3/4 cup fresh breadcrumb
1/4 cup long grain rice
1/4 cup tomato ketchup
1/2 teaspoon prepared mustard
3 teaspoons brown sugar

Steps:

  • In a large bowl, combine first 12 ingredients. Mix until thoroughly blended.
  • Add bread crumbs and rice. Mix again.
  • Line a 9 x 5 in loaf pan with foil. Press in beef mixture and shape.
  • In a seperate bowl mix topping ingredients, mixing well. Spread over top of meatloaf.
  • Bake 400 degrees for 45 minutes or until done.
  • Drain off fat. Let meatloaf rest for 5 minutes before serving.

1 ½ pounds lean ground beef
½ cup ketchup
⅓ cup tomato juice
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon crushed red pepper
2 eggs, beaten
¾ cup fresh bread crumbs
¼ cup diced onion
2 teaspoons prepared mustard
½ cup ketchup
1 teaspoon prepared mustard
4 teaspoons brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9x5-inch loaf pan with aluminum foil.
  • In a large bowl, combine ground beef, ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, and mustard for meatloaf until well mixed. Press meat mixture into the prepared pan.
  • In a separate bowl, combine ketchup, mustard, and brown sugar for topping until smooth. Spread brown sugar mixture over meatloaf.
  • Bake in preheated oven 35 to 45 minutes, until no longer pink. Drain off fat. Let rest 5 minutes before serving.

Individual meatloaves bake more quickly than one loaf. You can make them ahead of time, freeze them, and pop them into the oven for a speedy no-work dinner on a busy day.

1 lb ground beef
1/2 teaspoon salt
2/3 cup cracker crumb
2/3 cup milk
1 egg, beaten
3 tablespoons onions, minced
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
1/4 teaspoon black pepper
2 tablespoons brown sugar, packed
1/3 cup catsup
1/2 teaspoon ginger powder
1/2 teaspoon garlic salt
2 tablespoons soy sauce
1 teaspoon dry mustard

Steps:

  • Crumble beef into large bowl. Add salt. Sprinkle crumbs and milk. Let stand a few minutes until crumbs are soft. Blend together.
  • Mix in egg and onion, sage, thyme, nutmeg and black pepper, mixing well. Shape into 4 loaves. Place on foil-lined baking sheet about 3 inches apart.
  • Mix brown sugar, catsup, ginger and garlic salt, soy sauce and mustard. Spread mixture over tops of loaves.
  • Bake at 350 for 35 minutes.

My family loves this meatloaf recipe. My husband and his friends are always asking me to make it for dinner. Our son can almost eat a whole mini meatloaf to himself he enjoys it so much! A must for families and a comfort food.

1 1/2 lb lean ground beef
1/2 lb ground italian sausage
1/3 c tomato juice
1/2 tsp salt
1/2 tsp black pepper
2 eggs, beaten
1/8 tsp crushed red pepper flakes
3/4 c bread crumbs, italian seasoning
1/2 c ketchup
4 Tbsp worcestershire sauce
1/4 c diced white onion
1/4 c diced carrot
1/4 c diced celery
4 tsp fresh chopped parsley
2 tsp yellow mustard
TOPPING SAUCE
1/2 c ketchup
1 tsp yellow mustard
2 Tbsp worcestershire sauce
4 tsp brown sugar
4 pinch fresh chopped parsley

Steps:

  • 1. Preheat oven to 400 degrees F (200 degrees C)
  • 2. In a large bowl combine: ground beef, sausage, 1/2 cup ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, carrot, celery, 4 Tbsp worcestershire sauce,4 tsp parsley and, 2 tsp mustard until well mixed. Either line a 9x5 inch loaf pan with foil or use 4 mini pans. Then press mixture in.
  • 3. In a separate bowl combine 1/2 cup ketchup, 1 tsp mustard, 2 Tbsp worcestershire sauce and, brown sugar until smooth. Spread brown sugar mixture over meatloaf. Sprinkle with parsley.
  • 4. Bake in preheated oven 45 to 55 minutes, until no longer pink. Drain off fat. Let rest for 5 to 10 minutes before serving.

1/2 cup milk
1 egg
2 teaspoons Worcestershire sauce
1/4 cup finely chopped onion
1 teaspoon salt

Steps:

  • Combine croutons & milk in a large mixing bowl.
  • Let stand about 5 minutes or till croutons are softened.
  • Add egg, Worcestershire sauce, onion and salt.
  • Beat well.
  • Add ground beef and mix until combined.
  • Shape into loaf and place in greased or foil lined shallow pan.
  • Score loaf by making several grooves across top.
  • Fill with catsup (I frost the whole loaf with catsup).
  • Bake in oven at 350° about 45 minutes to an hour or till well glazed.

COTTAGE CHEESE MEATLOAF FROM 1968

The recipe comes from the Sunset Ground Beef Cookbook 1968 and has been one of our all-time favorite meatloaf recipes because of the taste as well as how quickly everything is put together and baked. To up the taste I have included 1 clove of garlic minced. It's a very light textured meatloaf in a shallow pan instead of the typical loaf pan style. I am mostly putting this recipe here for safekeeping since my book is getting more and more stained after 4 decades of use. I normally eat this meatloaf with a side of ketchup and I suppose I should come up with a topping that goes on before Parmesan cheese but haven't done that yet. There is already a very similar recipe posted on zaar that uses a microwave to cook the meat.

1 cup cottage cheese
1 egg
1/2 cup quick-cooking rolled oats
1/4 cup ketchup
1 tablespoon prepared yellow mustard

1 garlic clove, minced

1 teaspoon salt
1/8 teaspoon pepper
1/3 cup parmesan cheese

Steps:

  • Combine all ingredients except the Parmesan cheese until well blended.
  • Press the mixture into a shallow baking pan about 8 inch square.
  • Baked in a 350 degrees F oven for 20 minutes. Remove from oven and sprinkle the Parmesan cheese evenly over the top.
  • Return to the oven and continue to bake for 15-18 minutes longer. Let stand for about 5 minutes before cutting in squares to serve.
