When it comes to Ohio comfort food, Cottage Ham cooked with cabbage, red potatoes, and carrots sits at the top of the list. It's a one pot meal that's full of flavor.

Number Of Ingredients 9

2 lb. smoked boneless pork shoulder butt
4 - 5 large carrots, peeled and cut into 2" pieces
1 medium sized green cabbage, cored and cut into chunks
1 - 2 bay leaves
2 TBSP. Cider Vinegar
1 tsp. whole black peppercorns
8 - 10 redskin potatoes, quartered
salt and pepper, to taste
prepared horseradish for serving, if desired

Steps:

  • In large stock pot, add cottage ham, carrots, and cabbage. Cover with water about an inch or two above the cabbage.
  • Drop in peppercorns and bay leaves. Add in the cider vinegar.
  • Bring pot up to boil, cover loosely, and simmer for about an 45 minutes.
  • Add in the potatoes. Loosely cover and cook another 45 minutes to an hour, or until vegetables and cottage ham are soft.
  • Remove vegetables and cottage ham to serving platter. Cover loosely with foil and let sit for 10 minutes. Slice the cottage ham. Season the vegetables with salt and pepper, as desired. Serve with prepared horseradish, if desired.

Sunday Comfort: Cottage Ham with Cabbage, Potatoes and Carrots image

Cottage Ham, 1.5-2 lbs.
8 -10 Redskin Potatoes, Halved
Large Cabbage, Quartered
1 bag baby carrots
8-10 Peppercorns
1.5 Tbsp. Brown Sugar
1 Bay Leaf

Steps:

  • Instructions Place cottage ham in a large stock pot and cover with water 2-3 inches above the ham (enough water to cook the vegetables) Add peppercorns, brown sugar, and bay leaf to water Bring to a boil the reduce to a simmer for 1 hour 15 min Add potatoes and carrots into pot with cottage ham simmer for about 15 minutes or until tender Add the cabbage cabbage and cook until all vegetables are fork tender, about 10-15 minutes Strain all the ingredients and allow the ham to rest for 5 minutes Before serving the ham, place vegetables in the bottom of a bowl or plate and single ham slices over the top of the veggies Serve with horseradish or stone ground mustard Recipe Created by Chef David Gutfranski Chef David Gutfranski, a Cleveland native grew up in a large family he first learned the art of cooking from his grandmother, mother and many other family members. It's a Midwest thing. If you can find a smoked pork shoulder roll/smoked butt/cottage roll/cottage ham, try this. It's not a ham, although it tastes a bit similar. It's not like pulled pork either, which is prepared differently.

1 smoked pork shoulder roll, 1 1/2 to 2 pounds
1 onion, peeled and quartered
4 -6 red potatoes, unpeeled, quartered
1 lb green beans, trimmed
1 bay leaf
1 1/2 tablespoons brown sugar
6 -8 crushed peppercorns
2 cups water
stone ground mustard (optional)

Steps:

  • Put the pork in a large crock pot and top with onion, potatoes and green beans.
  • Mix seasonings (not mustard) in water and pour over the top.
  • Cover and cook on LOW heat 6 to 8 hours or HIGH 3 to 4 hours.
  • Drain and serve with stone ground mustard, if desired.

3 lb cottage ham (Cottage Roll)
1 medium onion, chopped
5 carrots, peeled and sliced in 2 inch lengths
5 medium potatoes, peeled and cut in quarters
2 c largely chopped cabbage

Steps:

  • 1. Place cottage roll in roasting pan or crock-pot. Surround it with potatoes, carrots, onion and cabbage if you like. You can add as many as will fit or what you need for supper or use any size cottage roll that will fit. Sprinkle with pepper and cover roast 3/4 with water. cover and Bake at 300 degrees for 3 hours or in crockpot on high 6 hours or on low 8-10 hours. Cottage roll should fall apart like a pot roast. Serve with mustard. The leftover stock can be spiced up as a gravy

I grew up on the East coast and have fond memories of my Grandmother making the most delicious Cottage Ham and Cabbage. Cottage hams are virtually unheard of anymore, especially west of the Mississippi. After moving west, I searched high and low for a butcher that would sell me a Cottage Ham to no avail. Finally met someone that made them and he even told me how. This is unlike what most people think of when thinking of a ham. This ham ends being boiled with cabbage, onion, carrots and potatoes. It has a unique consistency. It sort of falls apart when cooked. Makes great sandwiches the following day. This is the technique for first making the Cottage Ham itself. Wish I could buy them still. Believe company in Chicago called Rose Packing handles different grades of them. Some have a lot of filler - yuck. If you live where Rose supplies Cottage Hams, get a good one. Makes my mouth water just thinking about them. Zaar won't allow the second ingredient to be properly listed. It's called Sweeter 'n Sweet. I did buy the Sweeter 'n Sweet at a local butcher. It's a sugary product used to make the brine.

1 pork butt (shoulder)
3 3/4 lbs seasoning
5 gallons water

Steps:

  • Choose a very lean pork butt and trim all remaining fat. Remove the bone and tie in a net.
  • Mix Sweeter 'n Sweet 3/4 lb to 1 gallon water. Make up 5 gallons. With a needle, inject this mixture into the pork until it is doubled in size. Soak in remaining cure for 5 days. Be sure it is weighted down if it floats.
  • Smoke at 135 degrees for 1 hour, then increase temperature to 180-185 degrees for 3-4 hours or until internal temperature of ham reaches 145 degrees.

I grew up eating cottage ham. It's definitely comfort food for me. Cooking it in the crockpot is super easy and it turns out juicy and delicious!! This was all that was left when I remembered to take a picture:)

2 lb cottage ham (cottage butt)
3 can(s) green beans (not french style)
1/2-1 yellow onion, medium
salt and pepper

Steps:

  • 1. Drain green beans and place in bottom of crockpot. Chop onion in big chunks and spread out over green beans. My family doesn't eat the onion so I make them big enough to take out at the end. Salt and pepper.
  • 2. Place the ham on the green beans and onions. Add enough water to have about an inch of it in the bottom. I add a half of a cup to my 4qt oval crockpot.
  • 3. Cook on high for 4 hours. Good served with potatoes and corn bread. Enjoy!!

Have fond memories of my grandma making this on her stove. Is comfort food at its best. See my recipe for Cottage Ham. This recipe utilizes that recipe first. Not normally a white-bread lover, but reminds me of my childhood to make this ham into the best leftover sandwich ever. White bread, cottage ham, and Miracle Whip. Like it best with the ham warmed up. Don't salt until you taste it. The ham is salty. Might be good served with a horseradish sauce on the side or a grainy mustard. Unsure of yield.

3 lbs cottage ham
1 medium onion, quartered
5 carrots, peeled, cut bite-size
5 potatoes, peeled, quartered
1 head cabbage, cut large wedges
pepper

Steps:

  • Place the Cottage Ham in a large pot. Cover with cold water and cook at medium heat for 30 minutes. Add the onion, carrots, potatoes, cabbage and pepper. Cover with more water if necessary. Cook until the vegetables are fork-tender. You could drain off the first water that the ham is cooked in if it's too greasy. Add new water if you like.
  • Serve in a bowl with buttered bread along side.

I have made cottage rolls often but couldnt find a recipe here on Zaar so I thought I would post my old standby. It is like a corned beef flavour wise but it is a ham made from pork shoulder. It is much cheaper than pork roast, ham or corned beef usually.

SPICED HONEY MUSTARD COTTAGE HAM WITH PURPLE CABBAGE

After both cooking processes, the cottage ham comes out very tender and juicy, and the honey mustard glaze adds an incredible contrast of flavors. Purple cabbage adds a nice pop of color and is a classic side to pair with pork. Garnish with fresh flat-leaf parsley leaves and serve with roasted or boiled potatoes and dinner rolls. Leftovers are great for ham sandwiches later in the week!

3 pounds cottage ham
4 cups apple cider
2 yellow onions, quartered
6 fresh thyme sprigs
4 cloves garlic
2 dried bay leaves
2 cinnamon sticks
1 tablespoon whole black peppercorns
2 teaspoons whole cloves
water to cover
1 (3 pound) purple cabbage
1 tablespoon olive oil
1 teaspoon kosher salt
1 teaspoon ground black pepper
⅓ cup honey mustard
¼ cup stone-ground mustard
¼ cup dark brown sugar

Steps:

  • Place cottage ham in a large Dutch oven. Add cider, onions, thyme, garlic, bay leaves, cinnamon sticks, peppercorns, cloves, and enough water to cover cottage ham entirely. Cover, and place on high heat; bring to a boil, about 10 minutes. Once boiling, reduce heat, and cook on a low simmer for 1 hour and 30 minutes.
  • While ham is simmering, preheat the oven to 350 degrees F (175 degrees C). Cut cabbage into quarters, remove core, and cut into 1-inch slices. Place cabbage slices in a large bowl. Add olive oil, salt, and pepper; toss to coat.
  • Stir together honey mustard, stone-ground mustard, and brown sugar in a medium bowl. Once cottage ham has simmered, transfer ham to a roasting pan. Brush honey mustard mixture over entire cottage ham.
  • Bake in preheated oven until glaze has melted and a thermometer inserted in thickest portion registers 145 degrees F (63 degrees C), 20 to 30 minutes.
  • While ham is baking, reserve 1 1/2 cups of the cooking liquid in Dutch oven; discard solids and remaining liquid. Place Dutch oven over medium-high; add sliced cabbage, and stir to combine. Cover, and cook until cabbage is tender, about 15 minutes. Arrange cabbage on a platter.
  • Remove cottage ham from oven, and let rest for 10 minutes. Carve slices and serve on top of cabbage.
