2 1/3 cups cottage cheese ((500 grams))
1 cup Greek yogurt ((200 grams))
2 large eggs
1/4 cup plus 1 tablespoon maple syrup ((75 grams))
2 teaspoons all-purpose flour
1/2 bourbon vanilla bean
3/4 cup blackcurrants ((150 grams))
1/2 cup granulated sugar ((100 grams))
3 tablespoons water ((50 milliliters))

Steps:

  • Line an 8-inch springform pan with parchment paper on the bottom. Oil the sides of the pan if it is not non-stick.
  • Preheat oven to 350°F / 176°C.

Blintz batter:¾ cup King Arthur Unbleached All-Purpose Flour¼ teaspoon salt1 cup nonfat milk2 large eggs1 tablespoon Cabot Unsalted Butter
melted Filling:1 cup Cabot Cottage Cheese¼ cup Cabot Lowfat Vanilla Bean Greek2 fresh peaches
chopped (or other favorite fruit)Vegetable oil1 tablespoon confectioner's sugar

Steps:

  • To Make Batter: WHISK together flour and salt in medium bowl; add milk and eggs and whisk until smooth. Whisk in melted butter. Pour mixture through fine strainer set over second bowl to remove any lumps. Cover and refrigerate for 2 hours. To Cook and Fill Blintzes: PREHEAT oven to 375°F. Lightly oil baking sheet. COMBINE cottage cheese, Vanilla Greek Yogurt and fruit in small bowl; set aside. BRUSH crepe pan or small skillet lightly with oil or use nonstick pan and place over medium heat; when hot, add small amount of batter to pan, tilting to cover bottom. Cook until set on top and golden on underside. Transfer blintz to small plate and repeat with remaining batter. PLACE about 1/4 cup filling down center of each blintz; fold in ends, roll up into cylinder and place seam-side-down on prepared baking sheet. BAKE blintzes until heated through, about 10 minutes. Serve warm, dusted with confectioner's sugar.

½ cup peeled and diced red potatoes
½ cup diced zucchini
½ cup diced red bell pepper
8 large eggs
1 cup heavy cream
8 teaspoons grated Parmesan cheese
1 tablespoon chopped fresh rosemary
sea salt and freshly ground black pepper to taste
1 cup cottage cheese
1 cup Greek yogurt
¼ cup diced cucumber
¼ cup diced radishes
1 teaspoon minced garlic
1 teaspoon lemon juice
sea salt and freshly ground black pepper to taste
2 ½ cups arugula

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Bring a large pot of salted water to a boil. Blanch potatoes, zucchini, and bell pepper separately in the boiling water for about 1 minute each. Remove and rinse under cold water, then drain on paper towels.
  • Whisk eggs, cream, Parmesan cheese, and rosemary together in a bowl until well combined. Season with salt and pepper.
  • Transfer cooled, blanched vegetables into a round, fluted tart pan. Spread egg mixture evenly over the vegetables. Spoon cottage cheese evenly over the egg mixture.
  • Bake in the center of the preheated oven until the center is no longer jiggly and the edges are golden brown, about 40 minutes. Remove from the oven.
  • Mix Greek yogurt, cucumber, radishes, garlic, lemon juice, salt, and pepper for dip together until well combined.
  • Serve frittata over arugula with dip on the side.
