Healthy Cheesecake with Cottage Cheese image

Surprise yourself with a Healthy Cheesecake made with cottage cheese and Greek yogurt. It's much higher in protein than a classic cheesecake, but you'll never be able to taste the difference. Serve it with blackcurrant jam for a beautiful sweet tang.

1 1/2 cups graham cracker crumbs ((140 grams) (also works with digestive crumbs))
1/4 cup caster sugar ((50 grams))
6 tablespoons unsalted butter ((85 grams) melted)
1/2 teaspoon ground cinnamon
2 1/3 cups cottage cheese ((500 grams))
1 cup Greek yogurt ((200 grams))
2 large eggs
1/4 cup plus 1 tablespoon maple syrup ((75 grams))
2 teaspoons all-purpose flour
1/2 bourbon vanilla bean
3/4 cup blackcurrants ((150 grams))
1/2 cup granulated sugar ((100 grams))
3 tablespoons water ((50 milliliters))

Steps:

  • Line an 8-inch springform pan with parchment paper on the bottom. Oil the sides of the pan if it is not non-stick.
  • Preheat oven to 350°F / 176°C.

1 package orange Jell-O, (or any other flavour)
1 can crushed pineapple, drained
1 container Cool Whip

Steps:

  • In large bowl mix Cottage Cheese, Jell-o crystals and crushed pineapple together.
  • Cover and refrigerate over night.
  • Just before serving add Cool Whip and mix thoroughly.

½ cup peeled and diced red potatoes
½ cup diced zucchini
½ cup diced red bell pepper
8 large eggs
1 cup heavy cream
8 teaspoons grated Parmesan cheese
1 tablespoon chopped fresh rosemary
sea salt and freshly ground black pepper to taste
1 cup cottage cheese
1 cup Greek yogurt
¼ cup diced cucumber
¼ cup diced radishes
1 teaspoon minced garlic
1 teaspoon lemon juice
sea salt and freshly ground black pepper to taste
2 ½ cups arugula

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Bring a large pot of salted water to a boil. Blanch potatoes, zucchini, and bell pepper separately in the boiling water for about 1 minute each. Remove and rinse under cold water, then drain on paper towels.
  • Whisk eggs, cream, Parmesan cheese, and rosemary together in a bowl until well combined. Season with salt and pepper.
  • Transfer cooled, blanched vegetables into a round, fluted tart pan. Spread egg mixture evenly over the vegetables. Spoon cottage cheese evenly over the egg mixture.
  • Bake in the center of the preheated oven until the center is no longer jiggly and the edges are golden brown, about 40 minutes. Remove from the oven.
  • Mix Greek yogurt, cucumber, radishes, garlic, lemon juice, salt, and pepper for dip together until well combined.
  • Serve frittata over arugula with dip on the side.

  • Zapekanka (Cottage cheese pudding) This dessert has been eagerly gobbled down by several generations of Russian children at home and school, even if they don’t particularly like calcium-rich tvorog (cottage cheese).
  • Paskha. Paskha is a traditional dish made of tvorog (cottage cheese), usually prepared once a year at Easter time. The pyramid shape symbolizes the Holy Sepulcher, while the letters imprinted on the side stand for “Christ is Risen!”
  • Vareniki (Curd dumplings) These cousins of pelmeni are filled with cottage cheese and egg yolk. Preparation is straightforward, but care needs to be taken not to boil for more than 3-4 minutes, otherwise they will fall apart.
  • Sochnik. Soft pastry and tender curd filling are a combination familiar to many from Soviet childhood. In the 1980s, sochnik was found in almost every canteen.
  • Syrniki. Every Russian babushka knows how to cook the most delicious syrniki (curd pancakes) in the world. They believe that healthy grandchildren need to consume as many as possible, and who would argue.
  • Krupenik. An age-old pie made from cottage cheese and buckwheat or any other cereal (krupa in Russian, hence the name). Krupenik can be cooked for breakfast or as a main dish, since the buckwheat makes it quite nourishing.
  • “Goose Feet” pastries. Crispy pastries with curd filling that melt in the mouth, ideally washed down with tea or a glass of warm milk. A plate of these will soon be empty.
  • Glazed cottage cheese bites. Chocolate-coated cottage cheese bites became popular in the USSR way back in the 1950s. It was a dessert that resembled ice-cream on a stick, but could be eaten even with a sore throat.
  • Vatrushki. These round tarts with curd filling are very popular in East Slavic cuisine. Mashed potato or jam are less common fillings. The dough can vary, but is usually yeast-fermented, unleavened, or sweet pastry.
  • Tvorozhnik. Tvorozhnik resembles American cheesecake or German käsekuchen. Russian curd cheesecake consists of a layer of tvorog plus a thin layer of dough, sometimes without the latter.
