Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Squeeze excess water out of thawed spinach; in a large bowl, mix spinach with onion and cottage cheese and set aside.
- Season chicken breasts with Cajun-style seasoning, then place 1/4 of cheese/spinach mixture in the center of each breast and fold in half. Secure with toothpicks and place in a lightly greased 9x13 inch baking dish.
- Drizzle with melted butter and bake at 350 degrees F (175 degrees C) for about 25 minutes, or until chicken is cooked through and juices run clear.

Steps:
- Cut tomatoes in half and gently squeeze, scooping out pulp and seeds. Dice.
- Mince green onions and chop Cilantro medium fine.
- Add onions, Basil, Cilantro, vinegar, oil and garlic powder to tomatoes and toss. Add salt and pepper to taste.
- Store in fridge until ready to use.
- Serve with 2 scoops low fat cottage cheese and gently mix.
COTTAGE CHEESE, CHICKEN & TOMATO SALAD
This is a very refreshing salad - you can vary the ingredients depending on what you have in the fridge. Use leftover chicken or some canned chicken. I like a bit of low fat Sundried Tomato Oregano dressing on it but use the dressing of your choice. Garlic croutons are nice too! This is one serving - repaeat for as many as you wish

- Preheat the oven to 300 degrees F (150 degrees C).
- Bring a large pot of salted water to a boil. Blanch potatoes, zucchini, and bell pepper separately in the boiling water for about 1 minute each. Remove and rinse under cold water, then drain on paper towels.
- Whisk eggs, cream, Parmesan cheese, and rosemary together in a bowl until well combined. Season with salt and pepper.
- Transfer cooled, blanched vegetables into a round, fluted tart pan. Spread egg mixture evenly over the vegetables. Spoon cottage cheese evenly over the egg mixture.
- Bake in the center of the preheated oven until the center is no longer jiggly and the edges are golden brown, about 40 minutes. Remove from the oven.
- Mix Greek yogurt, cucumber, radishes, garlic, lemon juice, salt, and pepper for dip together until well combined.
- Serve frittata over arugula with dip on the side.

- Wash and cut the tomatoes. Wash the cucumbers and seed if desired. Slice the cucumbers into small pieces or if using large cukes, slice long way, into fourths, so you have four long slices, then seed. Cut the cucumber into chunks. I like to leave the skin on for color.
