A creamy chicken and mango dish with a spicy curried mayonnaise dressing, is something fresh and different that always brings interest and recipe requests. Served cold with a crisp garden or rice salad. This also makes a wonderful sandwich filling.

6 skinless, boneless chicken breast halves
⅓ cup sultana raisins
1 (1 pound) large mango, peeled, thinly sliced
⅔ cup mayonnaise
1 teaspoon mild curry powder
1 tablespoon mango chutney
1 teaspoon fresh lemon juice
1 pinch salt and ground black pepper
¾ cup toasted cashews

Steps:

  • In a large pot, cook chicken in lightly salted boiling water for 20 minutes. Drain, cool, and cut into 1/2-inch strips.
  • In a large bowl, stir together chicken strips, raisins, and half of the mango.
  • In a medium bowl, mix together mayonnaise, curry powder, chutney, and lemon juice. Season with salt and pepper, then toss gently with chicken mixture. Stir in half the nuts. Transfer to a platter, and garnish with remaining mango strips and cashews.

3 medium eggs
2 tbsp mayo
½ tbsp Greek yogurt
½ tbsp mango chutney
½ tbsp korma curry paste
2 spring onions , sliced
2 tbsp chopped coriander
butter , for spreading
4 slices soft brown bread

Steps:

  • Bring a pan of water to the boil, add the eggs and simmer for 8 mins, then drain and cool under cold running water. Peel and chop the eggs, then tip into a bowl and mix with the mayo, yogurt, chutney, curry paste, spring onions and coriander. Season to taste. Butter the bread and spoon the egg mixture over two slices. Complete the sandwiches with the remaining bread, then halve.

3 Co-op British free range eggs
6 tbsp Co-op reduced fat mayonnaise
1 tbsp Co-op mango chutney
2 tsp curry powder
30 Co-op sultanas
1 tbsp chopped coriander
1 Co-op trimmed salad onions, finely sliced
4 slices Co-op farmhouse white bread
100g pack Co-op British mixed salad, to serve

Steps:

  • 1. Put the eggs into a pan of simmering water and boil for 8 mins
  • 2. Meanwhile, combine the mayonnaise, chutney, curry powder, sultanas, coriander and spring onion
  • 3. Once the eggs are cooked, run under cold water and peel
  • 4. Roughly chop and gently stir into the mayo mix
  • 5. Toast the bread, add a little salad and spoon in the egg filling
  • 6. Serve with remaining salad on the side

6 hardboiled eggs.
2 tablespoon olive oil.
1 onion finely chopped.
1 clove of garlic, crushed.
2 teaspoons of mild curry powder.
1/2 cup white wine or stock.
2 tablespoons mango chutney.
2 tablespoons mayonnaise.
2 tablespoons chopped coriander.
Salt and pepper.
To assemble:
16 slices thin sandwich bread.
Room temperature butter.
Alfalfa sprouts.

Steps:

  • Chop eggs and set aside. Heat oil in small saucepan and add onion and garlic with a good pinch of salt. Cover and cook until the onion is very tender. Add curry powder and cook 2 mins, stirring constantly. Add wine or stock and cook 8 mins or until the wine has evaporated and the mixture is very thick. Stir in the mango chutney. Cool. Transfer to a food processor and process until smooth. Tip into a bowl and stir in the mayonnaise and coriander. Season. Place chopped eggs in separate bowl and gently stir in just enough mayonnaise to bind the eggs stogether. Assembly: Butter one side of each slice of bread and cut into half to form triangles. Spread one triangle with egg mayonnaise and top with a layer of sprouts. Don't take the mayonnaise to the edges of the bread. Sandwich with the remaining triangle and press edges to seal. Repeat with remaining bread.

  • To make the piccalilli, put the vinegar in a large pan with the salt, whole spices and bay leaves. Heat over a medium heat until simmering, then add the vegetables. Simmer for 5 minutes, then add the chillies and mango. Cook for a further 2-3 minutes or until the veg is tender. Drain into a colander over a bowl, reserving the vinegar.
  • Return the vinegar to the pan, add the sugar and heat gently until dissolved. Mix the curry and mustard powders with the turmeric and cornflour in a small bowl, then add 4 tablespoons of cold water to make a paste; pour into the pan. Bring to the boil over a medium heat then simmer for 5 minutes, stirring continuously, until the mixture thickens. Stir in the cooked veg and continue to cook for a further 2 minutes. Remove from the heat and transfer to sterilised jars. Seal and leave to cool. Ideally leave for 3-4 days to allow the flavours to develop.
  • For the sandwiches, mix the mayo, curry powder and lemon juice together; add the sultanas and chicken, season well.
  • Butter the bread and top two of the slices with a handful of spinach leaves. Divide the chicken between the two and add a good amount of the piccalilli. Finish with the final two slices of bread. Serve immediately.
