EASY CHEESY GARLIC TOAST
This recipe is so ridiculously cheap and easy that it's almost embarrassing, but I'm posting it anyway for anyone who has picky little eaters or who is simply looking for a quick and easy fix. It is not gourmet by any stretch of the imagination but is just what it's title suggests: easy, cheesy & garlicy. My family said, "yum", and I hope yours does too!

Steps:
- Preheat oven broiler to lowest setting and position oven rack 8-10 inches from heating element.
- Place slices of bread on a baking sheet. Broil for 2-3 minutes or until lightly browned.
- Turn slices over and spread untoasted side evenly with butter/margarine. Then sprinkle lightly with garlic powder and black pepper. Then sprinkle with shredded mozzarella cheese and parmesan cheese.
- Return to oven and broil for another 2-3 minutes or until cheese is bubbly and browned to your liking.
- Remove from oven. Cool for 5-10 minutes and serve.

This is a great quick lunch. This toasted sandwich has corned beef, cheese, and mayonnaise on it, and it's a big hit with the kids.

- Preheat skillet over medium heat. Butter each slice of bread on 1 side only. Spread mayonnaise on the un-buttered sides. Place 1 slice of bread, buttered side down, in the skillet. Layer corned beef and cheese slices on bread. Cover with remaining slice of bread, buttered side up. Cook for 5 minutes on each side, or until toast is golden brown, and cheese is melted.

- In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.
- Cut the loaf in half lengthwise, then into thirds or fourths. Evenly spread the cheese mixture onto the bread pieces. Wrap each piece in a foil "purse," leaving a little room at the top between the cheese and the foil.
- The bread can either be frozen for later, or baked right away. If baking right away, place on a baking sheet and bake at 350 degrees F for 10 minutes. If cooking from frozen, bake on a baking sheet at 350 degrees F for 20 minutes.
