This simple recipe makes the most amazing custard. It thickens as it cools. In some countries, cornstarch is called corn flour. My (American) cornstarch has a very fine powdery texture, resembling powdered sugar. - Jenny Jones

Number Of Ingredients 4

1/2 cup sugar
2 Tablespoons cornstarch (not corn flour)
2 cups milk (whole milk or low fat)
2 egg yolks

Steps:

  • In a medium saucepan, combine the sugar & cornstarch.
  • Slowly whisk in the milk & egg yolks.
  • Place over medium heat and bring to a boil. Cook about 1 minute, stirring constantly, until thickened. (it will thicken more as it cools)
  • Pour into serving cups and let stand to cool or refrigerate, UNDISTURBED, until it's set - about an hour.

3 tablespoons cornstarch
1/3 cup sugar
1/8 teaspoon salt
1/2 cup cold milk
2 cups scaled milk
1 teaspoon vanilla

Steps:

  • In the top of a double boiler, mix cornstarch, sugar, and salt
  • Add the cold milk to the cornstarch mixture, set aside
  • In another saucepan, scald 2 cups milk; slowly add to cold milk mixture
  • Cook in the top of a double boiler stirring until thick
  • Cover and cook 15 - 20 minutes
  • Add vanilla, stir in well.
  • Pour into large dish or in divided dishes. Placing plastic wrap directly on the surface while cooking prevents a skin from forming. Serve slightly warm or chill.

3 eggs, beaten
2 cups milk

Steps:

  • Fold flour through corn thoroughly.
  • Mix sugar, eggs and milk.
  • Pour liquid mixture over corn and flour and mix thoroughly.
  • Add salt and pepper to taste.
  • Bake 1 hour in 375 degree oven.
  • Let set for 10 minutes before serving.

3 tablespoons cornstarch
1/8 teaspoon salt
1/3 cup sugar
1/2 cup milk
1 1/2 cups milk
1 teaspoon vanilla

Steps:

  • Place cornstarch, salt, and sugar in mixing bowl, and mix well.
  • Add 1/2 cup milk, and stir until smooth.
  • Scald 1 1/2 cups milk in top of double boiler, and add cornstarch mixture slowly, stirring constantly.
  • Place over boiling water in bottom of double boiler, and cook slowly, stirring constantly until smooth and thickened.
  • Cover, and cook for 15 minutes longer, stirring occasionally.
  • Add vanilla and stir.
  • Pour into individual molds which have been rinsed in cold water.
  • Chill until firm.
  • Unmold and serve with maple syrup, cream, chocolate sauce, sliced peachs, or sliced apricots as desired.
  • Chocolate: Add 1 square unsweetened chocolate, melted, at the same time vanilla is added.
  • Coconut: Add 1/2 cup shredded coconut to scalded milk.

3 tablespoons unsweetened cocoa powder
¼ cup cornstarch
⅛ teaspoon salt
2 ¾ cups milk
2 tablespoons butter, room temperature

  • In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. 1 tablespoon flour
1/2 teaspoon salt
3 cups milk
3 egg yolks, beaten
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Combine sugar, cornstarch, flour and salt in 2-qt. glass bowl. Slowly stir in milk.
  • Microwave on HIGH, uncovered, for 8-9 minutes, or until mixture comes to a full boil; stirring 2 or 3 times.
  • Blend a small amount of the hot mixture into egg yolks; return to hot mixture, blending well.

My grandma has used this recipe since she was a little girl. It makes a very good, rich pudding to use in cream pies, trifles, or just for eating. If you want to reduce the richness substitute some of the evaporated milk for skim milk. You should use at least 1/2 cup of evaporated milk though. Variations: Maple Pudding: replace 1/2 cup sugar with 1/2 cup real maple syrup and omit the vanilla.

2 -3 tablespoons cornstarch
1/2 cup sugar
3 eggs
1 (12 ounce) can evaporated milk
1 cup skim milk
1 teaspoon vanilla

Steps:

  • Mix together the sugar and cornstarch, then add the eggs. Beat until the mixture is well combined and pale colored.
  • In a large saucepan, bring the milk to a boil over miedium-high heat. Stir frequently to keep it from sticking.
  • Add a little of the hot milk to the egg mixture, and stir until combined. Then pour the egg mixture into the milk.
  • Cook the mixture until it reaches desired thickness, stirring constantly.
