Deliciously soft, buttery, melt-in-your-mouth cookies that are infused with vanilla, super easy to make, and only requires 6 simple ingredients!

Steps:
- Preheat the oven to 170C/325F/Gas 3. Line a baking tray with parchment paper or a silicone mat, and set aside.
- In a large mixing bowl, whisk together the butter, vanilla, and sugar until creamy and combined.
- Add the cornflour, flour, and salt, and mix to form a smooth, soft dough.
- Roll the dough into small 0.7oz balls, and place them onto the prepared baking tray. Press them down with the tines of a fork. Freeze until solid - about 10 - 20 minutes.
- Bake for 15 - 20 minutes or until firm and just starting to colour around the edges (they'll still be very pale). Allow to cool for 5 - 10 minutes before transferring them to a wire rack to cool completely.

- Preheat the oven to 375 degrees F (190 degrees C).
- Whip butter with an electric mixer until fluffy. Stir in the confectioners' sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.
- Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don't brown too much. Cool on wire racks.

BEST EVER CORNSTARCH COOKIES
My Fiance has been telling me about these cookies forever so I finally decided to try it, And mmm mmm good. So here it is folks. It is my new favorite. Note: You can also add a 1/4 cup cocoa and 1 tsp of salt. Or instead of putting jam in the nest put a Hershy's Kiss or use your favorite pie filling. Enjoy

- 1. sift together flour cornstarch and icing sugar.
- 2. Beat butter until smooth add vanilla a teaspoon at a time and mix until well blended. Refrigerate for 1 hour or they won't hold a shape.
- 3. Shape into 1 inch balls and place them 1 1/2 inches apart on an ungreased cookie sheet. Now here you can either press them down with a lightly floured fork or I like to press the ball down with my thumb to make a nest and add a couple teaspoons of jam or a Hershys Kiss or if you like your favorite pie filling.
- 4. Bake at 350 for 8-10 minutes or until lightly golden on the edges. Cool and enjoy....

- Preheat the oven to 175 ºC / 350 ºF.
- Line a baking sheet with parchment paper and set aside.
- Add butter, sugar and vanilla into a bowl and mix until creamy.
- Add the egg and a pinch of salt and mix until well combined. The egg has to be fully incorporated into the butter.
- Add the cornstarch and mix until combined. You should be able to shape the dough into a ball and it should be soft and flexible enough to be able to be used in a cookie press. The dough shouldn't stick to your hands. If the dough does stick don't panic. A little bit of stickiness isn't a problem, as long as you can shape the dough into a ball. If it is too sticky just add a little bit more cornstarch till the dough stops sticking.
- The traditional way to make these cookie is by shaping the dough into little balls which you put on your baking sheet and flatten with a fork dipped in cornstarch. Keep dipping the fork into the cornstarch as needed.
- Sprinkle all cookies with hundreds and thousands.
- Put the cookies into the oven and bake for approximately 12 minutes. Be careful not to brown them too much, the cookies need to have a light, white/golden colour.

- Put the eggs in a mixing bowl with a whisk and beat them slightly frothy. Add the softened butter, sugar and vanilla sugar and mix on medium speed for 5 minutes. Sieve the cornstarch and add this little by little until you have a nice even dough.

- In a medium mixing bowl, whisk together the all-purpose flour, cornstarch, and confectioners' sugar.
- In a large mixing bowl or the bowl of your stand mixer cream the butter until smooth and lighter in color. Add the dry ingredients and mix until all of the dry ingredients are incorporated. Cover and chill for 1 hour.
- Preheat your oven to 300°F (150°C) and shape the dough into 1-inch balls. Place them onto a parchment paper or silicone mat lined baking sheet with about 2 inches of spacing between the cookies.
- Press down firmly to flatten the cookies using a dampened fork. Bake in the middle of your oven's center rack for 18-20 minutes or until the cookie bottoms just begin to turn a light golden color.
