POLENTA POPOVERS WITH LEMON BUTTER



Polenta Popovers with Lemon Butter image

1 stick (8 tablespoons) unsalted butter, at room temperature
2 tablespoons mascarpone cheese, at room temperature
1/2 teaspoon freshly grated lemon zest (from about 1 lemon)
1/4 teaspoon kosher salt
1 cup all-purpose flour
1/2 cup fine cornmeal
1/2 teaspoon kosher salt
1/4 teaspoon ground fennel seed
1 3/4 cups whole milk
3 large eggs
4 tablespoons unsalted butter, melted

Steps:

  • For the lemon butter: In a medium bowl using a rubber spatula, combine the butter, mascarpone, lemon zest and salt. Set aside.
  • For the popovers: Position an oven rack in the lower third of the oven and preheat to 450 degrees F. Once preheated, place a 12-cup muffin tin on the lower rack for at least 10 minutes.
  • In a medium bowl, whisk together the flour, cornmeal, salt and fennel seed. Make a well in the center of the dry ingredients and add the milk, eggs and 2 tablespoons of the melted butter. Starting with the wet ingredients in the center, whisk together to combine. Whisk until smooth. Allow the mixture to sit for 10 minutes to allow the cornmeal to soften.
  • Remove the muffin tin from the oven, brush the cups with the remaining 2 tablespoons of butter and divide the batter among the cups, filling them three-quarters of the way. Return to the oven and bake until puffed and deep golden brown, about 20 minutes. Serve immediately with the lemon butter.

Steps:

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

4 large eggs
4 tablespoons unsalted butter, 1/2 stick, melted, plus 2 tablespoons, softened for greasing
2 teaspoons kosher salt
3 ½ cups milk
1 ½ cups all-purpose flour
1 cup cornmeal, finely ground

Steps:

  • In a large bowl, combine the eggs, melted butter, salt, and milk. Whisk well.
  • Sift in the flour and cornmeal and slowly whisk to incorporate. Let the batter sit for at least 30 minutes, or up to 4 hours.
  • Preheat the oven to 400˚F (200˚C). Place 2 12-cup muffin tins in the oven as it preheats.
  • Remove the hot muffin tins from the oven and brush with butter, then return to the oven for 5 minutes.
  • Remove the muffin tins from the oven and distribute the batter evenly among the muffin cups, filling them almost to the rim.
  • Bake for 15 minutes, then reduce the oven temperature to 350˚F (180˚C) and bake for 15 minutes more, until the popovers are lightly browned and puffed.
  • Serve immediately.

1 c unseasoned Panko bread crumbs
1 c corn, canned
3 small mini red bell pepper
1/4 c green onion stems, finely chopped
16 oz jumbo lump crabmeat, drained
3/4 c Duke's mayonnaise
1 egg, lightly beaten
1 tsp coarsely ground black pepper
1/2 tsp salt
1 lemon
1/8 tsp cayenne pepper

Steps:

  • 1. Heat oven to 425 degrees. Spray cups of a mini-muffin pan with non-stick cooking spray. Sprinkle cups with 1/2 cup of the bread crumbs, gently tapping and rotating to coat.
  • 2. Finely chop bell pepper. Blot peppers dry with a paper towel. Finely chop onion tops setting aside 1 teaspoon for garnish.
  • 3. Combine corn, bell pepper, remaining green onions, crabmeat, 1/2 of the mayonnaise, egg, black pepper, and salt. Mix well but gently to not break up the crabmeat too much. Sprinkle lightly with remaining Panko crumbs.
  • 4. Divide mixture evenly among cups of pan. Bake 10 minutes or until golden brown. Remove pan from the oven. Cool in pan 2 minutes and then remove from pan to cooling rack.
  • 5. Meanwhile juice lemon for the sauce. Combine juice, cayenne pepper, and remaining mayonnaise. Mix well. Brush tops of crab cakes with sauce.
  • 6. Top with reserved finely chopped green onion tops.

3 large eggs, room temperature
1 1/2 cups whole milk, room temperature
1 1/2 cups all-purpose flour
1 1/4 teaspoons coarse salt
Vegetable-oil nonstick cooking spray

Steps:

  • If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
  • After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
  • Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
  • Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
  • Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
  • Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
  • Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.
