STREET CORN CHICKEN

2 15 oz cans sweet corn
1/4 cup mayo
1/4 cup sour cream
1 tsp chili powder
2 Tbs lime juice
3 chicken breasts or 1.5 pounds
1/2 tsp garlic powder
Dash of salt and pepper

Steps:

  • In a large bowl, add drained corn, mayo, sour cream, chili powder, lime and give it a really good stir.
  • Grease a baking dish and toss the chicken in. Season with garlic powder and pepper.
  • Pour mixture from step 1 over chicken
  • Bake at 350 ℉ for 35 - 45 minutes or until chicken is fully cooked.
  • It goes great over white rice with queso fresco, tomatoes, jalapeños or any other garnishes you like!

Number Of Ingredients 9

1 pound boneless and skinless chicken breasts (or thighs)
1 teaspoon taco seasoning
6 cups corn (fresh or frozen)
1/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons lime juice
salt, pepper and chili powder (or cayenne) to taste
1/2 cup cotija (or feta), crumbled
2 tablespoons cilantro, chopped

Steps:

  • Place the chicken in a large baking dish, such as an 8×12 pan, and sprinkle on tha taco seasoning.
  • Mix the corn, mayonnaise, sour cream, lime juice, salt, pepper and chili powder and pour over the chicken in the pan before topping with cheese.
  • Bake in a preheated 350F/180C oven until the chicken is cooked through, about 25-35 minutes, before sprinkling on the cilantro and enjoying!

We discovered Mexican street corn at a festival. This easy one-pan version saves on prep and cleanup. Every August, I freeze a lot of our own fresh sweet corn, and I use that in this recipe, but store-bought corn works just as well. -Erin Wright, Wallace, Kansas

6 cups frozen corn (about 30 ounces), thawed and drained
1 cup mayonnaise
1 teaspoon ground chipotle pepper
1/4 teaspoon salt
1/4 teaspoon pepper
6 tablespoons chopped green onions, divided
1/2 cup grated Parmesan cheese
Lime wedges, optional

Steps:

  • Preheat oven to 350°. Mix the first 5 ingredients and 4 tablespoons green onions; transfer to a greased 1-1/2-qt. baking dish. Sprinkle with cheese., Bake, covered, 20 minutes. Uncover; bake until bubbly and lightly browned, 15-20 minutes longer. Sprinkle with remaining green onions. If desired, serve with lime wedges.

3 cups crushed corn bread stuffing
1 can (14-3/4 ounces) cream-style corn
1/3 cup finely chopped onion
1 celery rib, chopped
4 boneless skinless chicken breast halves (4 ounces each)
1/4 cup packed brown sugar
1/4 cup butter, melted
3 tablespoons spicy brown mustard

Steps:

  • In a large bowl, combine the stuffing, corn, onion and celery. Spoon into a greased 11x7-in. baking dish. Top with chicken. , In a small bowl, combine the brown sugar, butter and mustard; spoon over chicken. Bake, uncovered, at 400° for 25-30 minutes or until a thermometer reads 170°.
