These Southern fried oysters are coated with a simple cornmeal batter. Serve them in po'boy sandwiches, as an appetizer, or add them to a salad.

For the Fried Oysters
Vegetable oil (for frying)
1 quart oysters (about 2 cups drained oysters)
2 large eggs (beaten)
2 cups cornmeal
1 teaspoon sugar
2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons flour
For the Tartar Sauce
1 cup mayonnaise
1/3 cup dill relish (or finely chopped dill pickle)
2 teaspoons capers (drained and chopped)
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
Optional: 2 tablespoons green onion (finely chopped)

Steps:

  • Gather the ingredients.
  • Pat the drained oysters dry with paper towels or a clean kitchen towel.
  • In a medium-sized bowl, beat the eggs.
  • Add the oysters to the egg bowl and set aside for 10 minutes.
  • In a medium bowl, combine the cornmeal, sugar, pepper, salt, and flour.
  • Lift each oyster out of the egg mixture and allow the excess moisture to drip off before rolling them in the cornmeal mixture to evenly coat. Repeat the process with all oysters.
  • Pour about 3 inches of vegetable oil in a heavy, deep saucepan. Place the pan over medium-high heat and bring it to a temperature of 370 F.
  • Carefully add the oysters to the hot oil. Do not overcrowd the pan.
  • Fry each batch of 6 to 8 oysters for about 2 to 4 minutes, or until they are golden brown.
  • Use a metal slotted spoon to remove the oysters to paper towels to drain. Reserve.
  • Gather the ingredients.
  • In a bowl, combine the mayonnaise with the dill relish, capers, Dijon mustard, lemon juice, and black pepper. Mix well.
  • If using, add the green onion to the sauce and stir it into the mixture, or reserve the onion to garnish the finished oysters. Stir to blend thoroughly.
  • Serve the sauce alongside the fried oysters and enjoy.

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

3 tbsp butter
1 white onion, diced
1/4 cup garlic, whole or crushed cloves, skin off
1 cabbage, (use half if very large cabbage - whole head if small) sliced into thin strips
1 tsp salt, celtic sea salt preferred
1 lb polska kielbasa, sliced into thin rounds

Steps:

  • Heat butter in large pan on medium-high heat until melted and foamy.
  • Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
  • Add garlic to pan, cook until fragrant and soft, about 3 minutes.
  • Add cabbage to pan and toss well to coat in butter.
  • Generously season with salt.
  • Let cabbage reduce by half, about 10 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly.
  • Slice smoked polska kielbasa into thin rounds and add to pan with cabbage and onions.
  • When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits - and polska kielbasa has browned slightly (smoked kielbasa has been cooked already, so you're just adding some browning and flavor to it), it is ready to serve.
  • Remove from heat and plate with your favorite meat, casserole, fish, or other main dish!

Hearty, stick-to-the-ribs cabbage casserole. This goes great with pork chops or ham, although I could make a meal of just this alone. Whenever I make cornbread, I usually double the recipe so I have enough left to make this the next day.

5 cups coarsely chopped cabbage
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon black pepper
1 -2 clove garlic, minced
1 1/4 cups milk
1/2 cup yellow bell peppers or 1/2 cup green bell pepper
1/2 cup shredded cheddar cheese
1/4 cup chopped onion
4 cups prepared cornbread, crumbled

Steps:

  • Preheat oven to 375 degrees.
  • In medium saucepan, cook cabbage, covered, in small amout of boiling, lightly salted water for 5 min.
  • ,then drain.
  • In same saucepan melt margarine or butter.
  • Stir in flour, salt, pepper, and garlic.
  • Add milk.
  • Cook and stir over medium heat until thickened and bubbly.
  • Stir in bell pepper, cheese, and onion.
  • Stir until cheese is melted, then remove from heat.
  • Place 3 c.

16 large oysters
1 cup oyster liquor or a blend of oyster liquor and clam broth
1/4 cup finely chopped shallots
1/4 cup white-wine vinegar
2 teaspoons finely minced garlic
1 cup dry white wine
3/4 cup heavy cream
1/3 cup Dijon-style mustard
6 tablespoons cold butter
1 cup cornmeal, preferably stone ground, available in health-food stores
Salt to taste, if desired
Freshly ground pepper to taste
1 1/2 teaspoons paprika
1/2 teaspoon chili powder
1 cup vegetable oil
Spinach with pancetta (see recipe)

Steps:

  • The oysters may be shucked at home or by the fish dealer, reserving the liquor. If there is less than a cup of liquor, add enough clam broth to make a cup.
  • Combine the shallots, vinegar, garlic, oyster liquor and wine in a saucepan. Bring to the boil and cook 45 minutes or more, until the liquid is reduced to about a third of a cup. Add the cream. Bring to the simmer and cook about 20 minutes, until reduced to one cup.
  • Stir in the mustard and bring to the simmer. Add the butter in small pieces, stirring rapidly with a wire whisk. Line a bowl with a sieve, preferably of the sort known in French kitchens as a chinois. Strain the sauce, pressing with the back of a spoon to extract as much flavor as possible from the solids. There should be about one cup of strained sauce. Set the saucepan in a bowl of simmering water to keep it hot.
  • Blend the cornmeal, salt, pepper, paprika and chili powder in a shallow dish. Dredge each oyster in the mixture and shake off the excess.
  • Heat the oil in a skillet and add the oysters without crowding. Cook, turning the oysters, one to two minutes depending on the size of the oysters. Do not overcook. As they are cooked, transfer the oysters to paper towels to drain.
  • Divide the spinach with pancetta among four plates. Spoon the sauce to one side of the spinach and arrange four cooked oysters on the sauce.

2 quarts vegetable oil for deep-frying
1 quart shucked oysters, drained
2 cups cornmeal
2 tablespoons garlic powder
2 tablespoons Cajun seasoning
1 tablespoon ground black pepper
2 tablespoons seasoned salt

Steps:

  • RInse oysters and soak in fresh water. Heat deep-fryer to 375 degrees F (190 degrees C).
  • Combine cornmeal, garlic powder, Cajun seasoning, black pepper and seasoned salt in a large plastic bag. Place oysters in bag and shake until well coated.
  • Cook oysters 3 or 4 at a time in hot oil. Oysters will float and be golden brown when done. Drain briefly and serve warm.
