CORNMEAL WAFFLES
These delicious whole wheat and cornmeal waffles have a light crunchy texture. Serve hot with syrup, or fruit and whipped cream.

Steps:
- Preheat a waffle iron, and coat with cooking spray.
- In a medium bowl, stir together the whole wheat flour, cornmeal, sugar, baking powder and baking soda. Make a well in the center, and stir in the buttermilk just until smooth. In a separate bowl, whip egg whites with an electric mixer until thick enough to hold a soft peak. Carefully fold the egg whites into the batter.
- Spoon batter onto the hot waffle iron in an amount appropriate for your iron. Close, and cook until the iron stops steaming, and the waffles are golden brown.

- Whisk all the ingredients in a large bowl, taking care that the baking powder is evenly distributed throughout. Spoon or pour the whole kit and caboodle into a large container and seal tightly. Store up to 3 months in a dark, cool pantry.
- NOW WHAT?
- To make 3 waffles, scoop 1 cup plus 3 tablespoons of the mix into a bowl. Whisk in 1 large egg, 1/2 cup plus 1 tablespoon milk (whole, 2%, 1%, or even fat-free), 1/2 teaspoon vanilla extract, and 2 tablespoons nut oil (walnut, hazelnut, or pecan) or 2 1/2 tablespoons melted and cooled unsalted butter. Mix well and set aside for 10 minutes while the waffle iron heats. Then make the waffles in the iron according to the manufacturer's instructions.
OATMEAL WAFFLES
These Oatmeal Waffles are such a delicious breakfast. Light, fluffy, and full of flavor. Also, these healthy waffles are packed with oats and made without unhealthy processed sugar. Super simple and taste amazing.

- Start with preparing and measuring all the ingredients. I like to use measuring cups.
- Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
- Mix everything at high speed until you get a smooth texture.
- Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
- Let the batter rest for a few minutes.
- Turn on the waffle maker and let it heat until it's hot (the green light must be on).
- Coat waffle plates with cooking spray or melted coconut oil using the brush.
- Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
- Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
- Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
- Transfer cooled waffles to a plate.
- Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
- Serve and enjoy!

- PREHEAT waffle iron to medium.
- IN A LARGE BOWL, combine oats, flour, cornmeal, brown sugar, baking powder and salt. Add eggs, cream, milk and butter, stirring to combine. Let stand for 2 minutes.
- POUR approximately 1 cup batter onto hot waffle iron. Bake until waffles cease to steam, approximately 2-3 minutes. Keep an eye on waffle iron; these waffles crisp up quickly.
- SERVE with maple syrup, yogurt, and fresh fruit on the side, if desired. I like sweetened ricotta and fresh fruit on top with the syrup.
CORNBREAD WAFFLES
These cornbread waffles with maple mascarpone topping are a hearty way to breakfast or brunch, weekend-style; they're also naturally gluten free.

- Preheat a waffle maker to medium high heat; grease it if necessary.
- In a small bowl, mix the mascarpone with 2 tablespoons of the maple syrup, then set aside.
- In a large bowl, mix together the masa harina, cornmeal, oat flour, baking powder and kosher salt.
- In a medium bowl, whisk the egg, then whisk in the milk, melted butter, and maple syrup. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Let sit undisturbed for 7 minutes. After sitting, the batter becomes very thick and unpourable.
- Scoop half of the batter onto the heated waffle maker and gently spread it into an even with a spatula. Cook until golden brown. (The resulting waffle will be golden brown and soft, but it will firm up a bit as it cools. If the waffle maker is too hot, this may prevent the inside from cooking fully).
- Serve immediately with maple mascarpone. To store leftovers, let cool fully and freeze in an airtight plastic bag; reheat in a toaster or oven. (This recipe makes 2 large waffles or 4 small; if you scale it up, place the cooked waffles in a 300F oven to keep warm while cooking the remaining waffles.)

- Mix dry ingredients in a large bowl.
- Beat egg and add to buttermilk.
- Add egg and buttermilk to dry ingredients and mix to incorporate.
