CORNISH GAME HENS AND RICE BAKE

Cornish Game Hens and Rice Bake image

This recipe makes a nice dinner and is from The Pillsbury Family Kitchens' Cookbook. I use 1 can (10 3/4 ounces) chicken broth and enough water to make 2 cups (and heat it in microwave) in place of water and bouillon cubes. This recipe can also be used with quartered or cut up frying chicken. I have only made it with the cornish hens.

CORNISH HENS WITH RICE PILAF

Cornish Hens With Rice Pilaf image

A recipe we've enjoyed for years. All you need is a salad and you've got a great meal. Note that one bird serves two people. We are old dudes, so if you have younger, heartier appetites you may want to adjust the recipe accordingly----both the hens and the pilaf.

Provided by northpointer2

Categories     One Dish Meal

Time 1h20m

Yield 2 serving(s)

Number Of Ingredients 13

1 1/2 lbs Cornish hens, split
1/8 cup brandy
1/2 teaspoon poultry seasoning
salt and pepper
1 teaspoon olive oil
1/4 cup minced onion
1 small garlic clove, minced
1 cup chicken broth
1/2 cup uncooked rice
1/2 bay leaf
1/4 teaspoon dried thyme
1/2 cup diced fresh tomato
1/2 cup frozen green beans, thawed

Steps:

  • Preheat oven to 350.
  • Saute onion and garlic in olive oil until soft, about 3-4 minutes. Add chicken broth, rice, bay leaf, salt, pepper and thyme. Cover and simmer for 20 minutes. Remove bay leaf and stir in tomato and green beans. Spread in bottom of greased 8 x 8" baking dish. Top with hens. Pour brandy over hens and sprinkle with poultry seasoning, salt and pepper. • Roasted Brussels Sprouts. Sure, they might not be everyone’s favorite vegetable (or even a vegetable at all) but roasting them with olive oil and salt is sure to change your mind.
  • Crispy Fried Onion Rings. These are a classic appetizer but can also be used as a side dish. The batter is typically made from flour and milk, with the onion rings battered in rice or corn starch before being fried for about three to four minutes at 350 degrees Fahrenheit.
  • Sautéed Mushrooms. Cook mushrooms by adding them to butter in a pan over medium heat until they release their liquid (this will help bring out all of their deep flavors).
  • Creamy Coleslaw. Again, this dish requires quite a bit more time than others on our list, but if you’re looking for something light yet flavorful, then creamy coleslaw will do nicely.
  • Butternut Squash Gratin. This one takes a little more work than the other dishes, but it is well worth the effort. Slice up some of that squash you love so much and add to stewed tomatoes before topping with a crusty breadcrumb or cheese-based topping and baking in an oven until bubbly and golden brown.
  • Delectable Eggplant Parmesan. This one is another dish that takes a bit of prep work and time in the oven, but once it’s ready, there are few dishes as satisfying.
  • Arugula, Radish, and Feta Salad. This salad takes just a few minutes to make but tastes like something you would find on the menu of an expensive restaurant.
  • Lemon Garlic Pasta. This easy side dish can be made in less than 20 minutes and will have your mouth watering with its tangy yet rich flavor that comes from the bright lemon juice mixed perfectly with garlic.
  • Sautéed Kale with Garlic. This side dish goes great with any meat but pairs exceptionally well with. Cornish hens because of its health benefits, like cleansing your system through toxins for a healthier you.
  • Asparagus and Goat Cheese Quiche. A quiche is usually not something you can make on the spur of the moment. Still, this recipe allows you to whip one together quickly without sacrificing quality or taste.
