- Preheat oven to 450°. Place hen in a greased shallow roasting pan, skin side up. Combine butter, ginger and orange zest; rub under skin., In a small bowl, whisk preserves, vinegar, soy sauce and mustard. Reserve half of the mixture for basting. Spoon remaining mixture over hen; sprinkle with salt and pepper. Pour 1/2 cup chicken broth into pan., Roast 20-25 minutes or until a thermometer inserted in thigh reads 180°, adding broth to pan as necessary and basting with remaining glaze halfway through cooking. Serve with pan juices.

- In a small bowl, combine the first five ingredients; sprinkle over hen halves. In a small skillet, cook hen halves over medium-high heat in oil until browned on both sides. Transfer to an ungreased 11x7-in. baking dish; set aside and keep warm., In the same skillet, saute green onion and garlic until tender. Stir in broth and orange juice concentrate; pour over hen halves. Bake, uncovered, at 350° for 35-40 minutes or until meat is tender and juices run clear. To serve, drizzle with pan juices and sprinkle with almonds and parsley.

- Remove and discard backbone from Cornish hen; cut hen lengthwise in half. Brush with vinaigrette dressing; place, skin sides up, on half of parchment-covered rimmed baking sheet.
- Toss vegetables with MIRACLE WHIP; spread onto other side of prepared baking sheet. Place rosemary sprigs between chicken and vegetable pieces.
- Bake 45 to 50 min. or until chicken is done (165ºF) and vegetables are tender, turning vegetables every 15 min.

- Preheat oven to 450 degrees F.
- Spread the vegetables and orange out evenly in the roasting pans. Place the Cornish game hens over the vegetables. Drizzle with olive oil. Rub the oil into the hens and sprinkle with the seasoning mixture, remembering to season the cavity. Place some vegetables and an orange wedge in the cavity of the birds.
- Place in the oven and roast for 45 minutes or until the juices run clear and they are browned. Let the hens rest 10 minutes before carving.
- Place all ingredients in a bowl and mix to combine.

- Rinse hens, pat dry. If you like sprinkle cavity with salt. Pull neck skin to back and fasten with small skewer. Tie drumsticks to tail. Twist wing-tips under back. Place hens, breast up, on a rack in shallow roasting pan. Cover hens loosely with foil. Roast in 375 degree oven for 30 min. HONEY GLAZE: In small saucepan cook 1/2 c. finely minced red sweet pepper, and 1/4 c. finely minced onion in 1 Tbsp. margarine till tender. Combine 1/4 c. apple juice and 1/2 tsp. cornstarch. Add in to saucepan with 1 Tbsp. of honey. Stir in 1/2 tsp. each of dry crushed rosemary, marjoram, thyme, and pepper. Cook and stir over medium heat till thickened and bubbly. Cook 2 min more. Place mushrooms and zucchini in small baking dish. Spoon 1/2 c. of honey glaze over vegetables. Cover dish and place in oven. Remove foil from hens. Continue roasting 45 min more till vegetables are tender and hens are done. Remove vegetables from oven - spoon remaining glaze over hens and roast for 5 more min. Serve with rice. Notice this is NOT tuna fish

- Make the cornbread stuffing first. Brown the sausage in a pan, making sure to break it up into crumbles. Add the butter, along with the onion and celery. Cook for 5 minutes over medium-low heat, until softened. Add the chicken stock and thyme. Off the heat, add the chicken stock and thyme. Allow to cool slightly. Place the pieces of cornbread in a bowl. Add the chicken stock mixture to the cornbread. Add parsley, salt and pepper, and mix together until moistened.
- Adjust oven rack to middle position and heat oven to 400 degrees F. Place the sliced onion on top of a foil-lined rimmed baking sheet. Remove any giblets from the hens, and rinse them inside and out. Pat the outsides dry with a paper towel. Sprinkle the inside of the cavities with salt. Pack the cavities of the hens with the cornbread stuffing. All of it should fit.
- Tuck the wing tips under the body of the hens. Tie the legs together with kitchen string. Generously sprinkle the outsides of the hens with salt and pepper and use your hands to rub and evenly distribute the seasoning around the entire surface. Place the hens breast side down on top of the onions. Roast until backs are golden brown, about 25 minutes.
- Flip the hens breast side up and continue to roast for 15 minutes. Remove hens from oven and crank the heat up to 450 degrees F. Brush the tops with a little olive oil and pop back into the oven for 5-10 minutes, or until the skin is browned and the breasts register 160 degrees F and the thighs register 175 degrees F. Transfer hens to a serving platter or cutting board and allow to rest uncovered for 10 minutes before slicing into them.
