2 Cornish game hens (20 to 24 ounces each), split lengthwise
1/4 teaspoon salt
1/8 teaspoon white pepper
1/3 cup apricot spreadable fruit
1 tablespoon orange juice

Steps:

  • Preheat oven to 350°. Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, 30 minutes. , In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens. Bake until golden brown and juices run clear, 30-35 minutes, basting several times with remaining apricot mixture. Let stand 5 minutes before serving.

1 tablespoon salt
2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

2/3 cup seedless raspberry jam
1/2 cup balsamic vinegar
16 bacon slices
4 (1 1/2- to 1 3/4-pound ea) cornish game hens

Steps:

  • Briskly simmer jam and vinegar in a small saucepan, uncovered, stirring occasionally, until glaze is reduced to about 1/2 cup, about 8 minutes. Cool to room temperature (glaze will thicken slightly as it cools). Preheat oven to 450 degrees F. Cook bacon in batches in a large heavy skillet over moderate heat, turning occasionally, until some of fat is rendered but bacon is still translucent and pliable, 5 to 7 minutes. Transfer to paper towels to drain. Cut out and discard backbone from each hen with kitchen shears, then halve each hen lengthwise. Pat hens dry and season with salt and pepper, then arrange, cut sides down, in a large roasting pan. Brush hens liberally with glaze, reserving remainder, and wrap 2 slices of bacon around each half hen, tucking ends under. Roast in middle of oven, brushing with pan juices and reserved glaze twice (every 10 minutes), until juices run clear when a thigh is pierced, 30 to 35 minutes.

1 1/2 lbs Cornish hens (2 hens)
1 teaspoon vegetable oil
1 1/2 cups low sodium chicken broth
3/4 cup sliced onion
1/2 cup Burgundy wine or 1/2 cup dry red wine, divided
1 garlic clove, thinly sliced
1 bay leaf
1/4 cup fresh lemon juice
2 tablespoons peeled grated gingerroot
1 garlic clove, minced
vegetable oil cooking spray
1 cup fresh raspberry, divided
1 tablespoon water
1 teaspoon cornstarch
2 tablespoons chopped fresh parsley
2 teaspoons sugar
1/4 teaspoon salt
fresh rosemary sprig (optional)

Steps:

  • Remove giblets and necks from Cornish hens, and set aside.
  • Rinse hens under cold running water, and pat dry.
  • Remove skin, and trim excess fat; split hens in half lengthwise.
  • Set aside.
  • Heat oil in a saucepan over medium-high heat; add giblets and necks.
  • Cook 5 minutes or until very brown.
  • Add broth, onion, 1/4 cup wine, and next 2 ingredients; bring to a boil.
  • Cover, reduce heat, and simmer 45 minutes.
  • Strain broth mixture through a sieve into a bowl, reserving 1 1/2 cups; discard solids.
  • Set aside broth mixture.
  • Combine remaining 1/4 cup wine, lemon juice, gingerroot, and minced garlic in a large bowl.
  • Add hen halves; cover and marinate in refrigerator 30 minutes, turning hens occasionally.
  • Remove hens from marinade, reserving marinade.
  • Coat grill rack with cooking spray; place hen halves on rack over medium heat.
  • Cook 15 minutes on each side or until juices run clear, basting occasionally with reserved marinade.
  • Set aside, and keep warm.
  • Combine reserved broth mixture and 1/2 cup raspberries in a saucepan; boil until reduced to 1 cup (about 5 minutes).
  • Strain and discard seeds; return puree to pan.
  • Combine water and cornstarch; stir well, and add to puree.
  • Bring to a boil, and cook 1 minute, stirring constantly.
  • Remove from heat; stir in parsley, sugar, and salt.
  • Spoon 3 tablespoons sauce onto individual serving plates; arrange hen half on each plate, and top with 2 tablespoons raspberries.

1 teaspoon dried thyme
2 tablespoons olive oil
4 shallots, chopped
2 cups canned low-salt chicken broth
2/3 cup dry red wine
2/3 cup frozen raspberries
2 teaspoons (or more) sugar
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to 500°F. Sprinkle hen halves with thyme, salt and pepper. Heat oil in heavy large skillet over medium-high heat. Add hen halves, skin side down, and cook until brown, about 6 minutes per side. Transfer hen halves to baking sheet (do not clean skillet). Roast until juices run clear when thigh is pierced, about 20 minutes.
  • Meanwhile, pour off all but 2 tablespoons fat from skillet. Add shallots and sauté over medium heat until soft, about 3 minutes. Add broth, wine, raspberries, 2 teaspoons sugar and allspice. Boil until sauce thickens enough to coat spoon, scraping up browned bits and crushing raspberries, about 12 minutes. Strain wine sauce into small bowl. 2 tbsp olive oil
1 lemon (cut into quarters)
4 garlic cloves
4-8 sprigs fresh thyme
1 tbsp kosher salt
1 tbsp fresh black pepper

Steps:

  • Preheat the oven to 350˚F.
  • Remove the innards from the cavity of the hen and discard (or freeze for later.) Pat the hens fry with a paper towel and place on a baking sheet.
  • Coat the hens, liberally, with the olive oil. Season the inside and outside with salt and pepper.
  • Stuff half the lemon, garlic and herbs into the cavity of the hens. Tie the legs together with kitchen twine and tuck the wing tips under the back of the hen. (This prevents the tips from burning.)
  • Roast the cornish hens for 40 minutes until the skin is golden crispy and the juices run clear. Your cornish hen is done when the temperature reaches 165˚F on an instant read thermometer.
  • Remove your cornish hens from the oven and cover with foil. Allow the hens to rest for 10 minutes prior to serving.

salt and pepper to taste
1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.
