- Preheat oven to 400 degrees. Rinse chicken, and pat dry. Season generously with salt and pepper.
- In a small bowl, whisk egg with 1 tablespoon water. In a large bowl, mix cornflakes with oil, cayenne, and 1 teaspoon salt.
- Working with one piece at a time, dip chicken in egg mixture, then coat with seasoned cornflakes, pressing flakes to help them adhere. Transfer coated pieces to a rimmed baking sheet.
- Bake until golden brown and crisp, about 30 minutes. Sprinkle with salt and pepper before serving.

- Preheat oven to 425°F. Combine garlic powder, 1 1/2 cups buttermilk, and 1/2 teaspoon each celery seed, cayenne, and salt in a bowl. Add chicken and marinate in refrigerator for 30 minutes.
- Fit a rack over a large rimmed baking sheet lined with heavy-duty foil. Combine flour, pinch of cayenne, and remaining 1/2 teaspoon celery seed in a bowl. Season with salt and pepper. Place remaining 1 cup buttermilk in a second bowl; season with salt and pepper. Place cornflakes in a third bowl.
- Remove chicken from marinade, letting excess drip off; discard marinade. Coat chicken with flour mixture, dip in buttermilk, then coat with cornflakes, pressing gently to help adhere. Arrange chicken on prepared baking sheet. Bake until cooked through, 25 to 27 minutes. Serve with pickles alongside.
CORNFLAKE MOZZARELLA STICKS

- Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper. While the cornflakes are still in the bag, smash them with a pan or measuring cup until they are the consistency of breadcrumbs. Set up a breading station: put the flour in one bowl and season with the salt and pepper; put the eggs in another. Put the bag of cereal crumbs on the side.
- Cut the string cheese in half crosswise so they are the length of regular mozzarella sticks. Dip each piece in the flour to coat, shake off the excess, drop in the eggs and then drop in the bag of cornflake crumbs and shake to coat. Drop the coated cheese back in the egg and then cover with another layer of cornflakes. Place on the prepared baking sheet. Bake the sticks until the cheese melts, 5 to 7 minutes.

- Preheat your oven to 450°F As the oven is preheating, place the 8 tablespoons butter in a 9" x 13" pan, and put the pan in the oven to melt the butter. When the butter is melted, remove the pan, and sprinkle in the minced garlic, stirring gently to distribute.
- Stir together the flour and milk to make a soft dough. Gather the dough into a ball, and gently fold it over three or four times.
- Place the dough on a well-floured surface, and roll/pat it into a 10" x 8" rectangle; it'll be fairly thin.
- Cut the dough in half crosswise, into two 8" x 5" rectangles. Cut each rectangle into 16 sticks, about 5" x 1/2" each.
- Lay the sticks close together in the pan, turning them to coat with the butter; you'll need to snug them right up against one another.
- Bake the sticks for 15 to 20 minutes, until they're a light golden brown. Remove them from the oven, and as soon as you can handle them, gently pull them apart and place on a plate or in a basket. Serve warm.

- Preheat oven to 350°F.
- Line a shallow roasting pan with aluminum foil.
- Spray with cooking oil spray.
- In a large bowl, mix corn flake crumbs, salt, parmesan cheese, black and cayenne pepper and mix well.

- Mix together egg and water in a shallow bowl. Combine cornflake crumbs, garlic powder, onion powder, 1/2 teaspoon salt, Cajun seasoning, chili powder, and paprika in a second shallow bowl.
- Preheat the air fryer to 400 degrees F (200 degrees C).
- Season drumsticks on both sides lightly with salt. Dip each drumstick into the egg mixture, followed by the cornflake mixture, rolling drumsticks and pressing down to ensure all surfaces are coated.
