COOKING WITH KIDS: CHOCOLATE CORNFLAKE CAKES
Everyone loves crispy cornflake cakes, whatever their age. Get the whole family in the kitchen to make these simple bites

- Children: Weigh out the ingredients. Older children can do this by themselves with supervision and little ones can help to pour or spoon ingredients into the weighing scales. Put 50g butter, 100g milk or dark chocolate, broken into chunks and 3 tbsp golden syrup in a saucepan or microwavable bowl. Put 100g cornflakes in another large bowl.
- Grown ups: Melt the weighed butter, chocolate and golden syrup in the saucepan over a low heat or briefly in the microwave. Allow to cool a little before pouring over the cornflakes.
- Children: Stir the ingredients together gently using a wooden spoon. Spoon the mixture into 12 cupcake cases arranged on a muffin tray (or baking sheet, if you don't have one). Grown ups will need to do this for younger children or simply arrange on a tray and let the mess happen. Put in the fridge to set.

PEANUT BUTTER CORNFLAKE CRUNCH BARS
A very simple to make bar cookie that kids love. Sort of like a peanut butter rice krispie treat, except made with cornflakes.

Steps:
- Cook syrup and sugar until mixture comes to a boil. Stir constantly; do not overcook.
- Remove from heat, add peanut butter, and stir until smooth. Pour mixture over cornflakes in a large bowl. Mix until cereal is thoroughly coated.
- Spread in a buttered 9 x 13 inch pan and press down lightly with buttered hands. When cool, cut into squares.

HONEY CORNFLAKE CRUNCH COOKIES
Steps:
- Preheat Oven to 165C (330F)
- Melt the butter, sugar and honey together in a large bowl (for the microwave) or pan for stove top, stirring often and allow to cool.
- Add the flour and baking soda (you can sift - I don't!) and stir well
- Add the cornflakes and mix until completely combined.
- The mixture will be a little sticky, but roll into Tablespoon sized balls and spread onto tray, I used two trays as this makes a large batch
- Bake for 10-12 minutes until cookies appear golden, they will still be soft to touch at this point.
- Allow to cool on the tray for 5 minutes then remove to a wire rack to cool completely.
- Store in an airtight container for up to 5 days.
CORNFLAKE CRUNCH

- Preheat oven to 275 degrees. Line a baking sheet with parchment paper or a nonstick baking mat; set aside.
- Place cornflakes in a medium bowl. Using your hands, crush to one-quarter of their original size. Add milk powder, sugar, and salt; toss to combine. Add butter and toss to form small clusters.
- Spread cornflake mixture in an even layer on prepared baking sheet. Transfer to oven and bake until clusters are toasted and smell buttery, about 20 minutes. Remove from oven and let cool completely.

- Put oven rack in middle position and preheat oven to 325°F.
- Toast almonds in a large shallow baking pan until pale golden, 8 to 10 minutes. Cool, then toss with cornflakes in a large bowl.
- Line bottom of cooled baking pan with foil, then lightly oil foil.
- Whisk together egg white, 3 tablespoons sugar, and salt in a small bowl, then add to cornflake mixture and toss gently to coat well. Arrange mixture in pan in a thin, even layer and sprinkle with remaining sugar. Bake until nuts and coating are golden, 15 to 20 minutes. Cool completely in pan on a rack. Peel off foil and break into pieces.

- Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with parchment paper, and set aside.
- Place the butter, sugar, cocoa powder, and salt into a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and combined. The mixture should very warm/hot to the touch.

- Before you start, I recommend you read the tips listed above in my blog post before proceeding. Every little step counts to ensure the perfect cornflake chocolate chip marshmallow cookie outcome.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars together on medium-high for 3 minutes. Stop the mixer, scrape down the paddle, the bottom, and sides of the bowl. Add the egg and vanilla and beat for another 7 to 8 minutes on medium-high speed. Yes, the full 7-8 minutes and not 1 minute shorter; making it a total of 10 minutes (see notes above). At this point, the butter should be light and fluffy and pale in color.
- Using a 1-ounce cookie scoop, portion the cookie dough into balls and place onto a parchment paper-lined sheet pan. Remember, it’s important to be mindful of the placement of the marshmallows. We want to avoid having any fully exposed marshmallows on the bottom or lower sides of the cookie dough ball otherwise they will burn during baking. If you mixed the marshmallows into the cookie dough along with the cornflake crunch and chocolate chips, then just be sure to scoop the marshmallow pieces first and press the marshmallows into the center if needed. Alternatively, if you didn’t add the marshmallows directly into the cookie dough, place 2 marshmallows into the cookie scoop first, then scoop some dough (about ⅓ of the scoop), add 2-3 marshmallows, and then scoop the remaining dough. It’s okay if the marshmallows are peeking out on the top or upper sides of the dough ball. We just want to avoid the lower sides and bottoms of the cookies.
