Crunchy Baked French Toast image

This is a great alternative to regular French toast. My husband and kids love it!

2 eggs
¼ cup milk
1 tablespoon white sugar
1 ½ teaspoons vanilla extract
1 teaspoon ground cinnamon
2 cups corn flakes cereal, crushed
4 slices bread, toasted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs, milk, sugar, vanilla extract, and cinnamon in a bowl; dip toast into egg mixture and press into crushed corn flakes until coated. Arrange coated toast in a single layer in a baking dish.
  • Bake in the preheated oven until lightly browned and crispy, 6 to 8 minutes per side.

2 large eggs
½ c 2% milk
½ tsp salt
½ tsp vanilla extract
1 c cornflake crumbs
6 slice texas toast
¼ c butter, melted
CINNAMON SYRUP:
2/3 c sugar
1/3 c light corn syrup
2 Tbsp water
½ tsp ground cinnamon
1/3 c evaporated milk or 2% milk
1½ tsp butter
¼ tsp almond extract

Steps:

  • 1. In a shallow bowl, whisk eggs, milk, salt and vanilla until blended. Place cornflake crumbs in another shallow bowl. Dip both sides of bread in egg mixture, then in cornflake crumbs, patting to help coating adhere.
  • 2. Place in a greased 15x10x1-in. baking pan. Drizzle with melted butter. Bake in a preheated 450º oven for 10-12 minutes or until golden brown.
  • 3. For syrup,in a small saucepan, combine sugar, corn syrup, water and cinnamon; bring to a boil. Cook and stir 2 minutes. Remove from heat. Stir in milk, butter and extract. Serve with French toast.

1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 cup cornflake crumbs
6 slices Texas toast
1/4 cup butter, melted
CINNAMON SYRUP:
2/3 cup sugar
1/3 cup light corn syrup
2 tablespoons water
1/2 teaspoon ground cinnamon
1/3 cup evaporated milk or 2% milk
1-1/2 teaspoons butter
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 450°. In a shallow bowl, whisk eggs, milk, salt and vanilla until blended. Place cornflake crumbs in another shallow bowl. Dip both sides of bread in egg mixture, then in cornflake crumbs, patting to help coating adhere., Place in a greased 15x10x1-in. baking pan. Drizzle with melted butter.   • Preheat the oven to 375 degrees F. Combine 1 tablespoon butter, the bananas and maple syrup in a small saucepan and bring to a bare simmer over medium heat; keep warm.
  • Whisk the eggs, milk and sugar in a shallow dish. Put the crushed cornflakes in another shallow dish. Soak the bread in the egg mixture, turning once, about 45 seconds. (Remove before the bread is soggy.) Let the excess egg mixture drip off, then dredge the bread in the cornflakes, pressing gently to help them adhere. Set aside on a plate.
  • Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add half of the bread and cook until golden brown, about 3 minutes per side. Transfer to a baking sheet. Add the remaining 1 tablespoon butter to the skillet and repeat with the remaining bread. Transfer to the oven and bake until cooked through, about 10 minutes. Top with the banana syrup.
