Peanut Butter Cornflake Crunch Bars image

A very simple to make bar cookie that kids love. Sort of like a peanut butter rice krispie treat, except made with cornflakes.

1 cup light corn syrup
1 cup white sugar
1 cup smooth peanut butter
10 cups cornflakes cereal

Steps:

  • Cook syrup and sugar until mixture comes to a boil. Stir constantly; do not overcook.
  • Remove from heat, add peanut butter, and stir until smooth. Pour mixture over cornflakes in a large bowl. Mix until cereal is thoroughly coated.
  • Spread in a buttered 9 x 13 inch pan and press down lightly with buttered hands. When cool, cut into squares.

½ cup unsalted butter, softened
½ cup sugar
½ cup firmly packed light brown sugar
1 egg
½ teaspoon vanilla extract
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup rolled oats
1 cup cornflakes
½ cup sweetened flaked coconut
½ cup coarsely chopped pecans

Steps:

  • Preheat oven to 350° F. Line baking sheets with parchment; set aside.
  • In a large mixing bowl with an electric mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream butter; add the sugars, beating well. Add egg and vanilla; beat well.
  • In a medium bowl, combine the flour, baking powder, baking soda, and salt. Add to the butter mixture, beating well. Stir in the oats, cornflakes, coconut, and pecans.
  • Use a cookie scoop to drop the dough onto the prepared baking sheets 2 inches apart. Bake for 10-12 minutes. Remove to wire racks to cool completely.

One tip: try to work fairly quickly after removing from heat because the mixture gets harder to work with as it cools. Having all the ingreds. pre-measured before starting makes this a lot easier.   • Heat sugar and corn syrup in large saucepan until mixture reaches a boil.
  • Remove from heat.

4 cups Corn Flakes
1 cup peanut butter (can use any nut or seed butter)
1 cup pure maple syrup (can sub for honey)

Steps:

  • Line an 8 x 8 pan with parchment paper and set aside.
  • Add your corn flake cereal into a large mixing bowl and set aside.
  • In a microwave safe bowl or stovetop, melt your peanut butter with pure maple syrup. Pour over the corn flakes and mix until fully combined. For ultra gooey corn flake crunch bars, add an extra tablespoon or two or maple syrup.
  • Pour mixture into the lined pan and lightly wet your hands. Press bars firmly into place and refrigerate for at least 30 minutes, or until firm. Cut into bars.

1/2 (12-ounce) box cornflakes (about 5 cups)
1/2 cup milk powder
3 tablespoons sugar
1 teaspoon coarse salt
9 tablespoons melted butter

Steps:

  • Preheat oven to 275 degrees. Line a baking sheet with parchment paper or a nonstick baking mat; set aside.
  • Place cornflakes in a medium bowl. Using your hands, crush to one-quarter of their original size. Add milk powder, sugar, and salt; toss to combine. Add butter and toss to form small clusters.
  • Spread cornflake mixture in an even layer on prepared baking sheet. Transfer to oven and bake until clusters are toasted and smell buttery, about 20 minutes. Remove from oven and let cool completely.

1 cup sliced almonds (4 oz)
4 cups cornflakes (4 oz)
1 large egg white
3 tablespoons plus 2 teaspoons sugar
1/4 teaspoon salt

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Toast almonds in a large shallow baking pan until pale golden, 8 to 10 minutes. Cool, then toss with cornflakes in a large bowl.
  • Line bottom of cooled baking pan with foil, then lightly oil foil.
  • Whisk together egg white, 3 tablespoons sugar, and salt in a small bowl, then add to cornflake mixture and toss gently to coat well. Arrange mixture in pan in a thin, even layer and sprinkle with remaining sugar. Bake until nuts and coating are golden, 15 to 20 minutes. Cool completely in pan on a rack. Peel off foil and break into pieces.
