CORNED BEEF HASH RECIPE



Corned Beef Hash Recipe image

This easy Corned Beef Hash recipe is hearty, delicious and a great way to use leftover corned beef. Top with fried eggs and you have the ultimate breakfast of champions!

4 tablespoons unsalted butter (divided)
1 medium yellow onion (sliced)
4 cloves garlic
2 cups shredded cooked corned beef
1 pound Russet potatoes (peeled and diced small)
Salt and freshly ground black pepper (to taste)
1/4 cup heavy cream
1 tablespoon vegetable oil
4 large eggs
Chopped parsley for garnishing
Optional: chili oil for drizzling

Steps:

  • Heat 2 tablespoons of butter in a large cast iron skillet, over medium-high heat. Add the onion and cook until softened and starting to brown, about 3 minutes. Then, add the garlic and cook until fragrant, 1 minute.
  • Add the shredded corned beef and cook, stirring occasionally, until slightly browned, about 5 minutes. Remove with a slotted spoon and reserve.
  • Melt the remaining butter and add the diced potatoes, spreading them into a single even layer. Cook - stirring often - until tender and golden brown, 15-20 minutes.
  • Returned the corned beef and onion mixture to the skillet. Stir to combine and season with salt and pepper. Cook, undisturbed, until crispy and browned on the bottom. Flip the hash in sections until the bottom becomes the top.
  • Pour the heavy cream on the edges, letting it run down to the bottom of the skillet. Continue cooking until browned and crispy on the other side.
  • Taste and adjust seasoning as needed.
  • Heat the oil in a large non-stick skillet, over medium heat. Break the eggs, one by one, into a small bowl. Carefully add the eggs to the fully heated pan and let it cook until the whites are completely set and the yolks are done how you like them. (see notes)
  • Top the corned beef hash with the eggs, drizzle with chili oil and garnish with chopped parsley.
  • Serve immediately!

1-1/2 cups chopped onion
1/2 cup canola oil
4 to 5 cups chopped cooked corned beef
1/2 teaspoon salt
8 large eggs
Salt and pepper to taste
2 tablespoons minced fresh parsley

Steps:

  • In a large ovenproof skillet, cook hash browns and onion in oil until potatoes are browned and onion is tender. Remove from the heat; stir in corned beef and salt. , Make 8 wells in the hash browns. Break one egg into each well. Sprinkle with salt and pepper. Cover and bake at 325° for 20-25 minutes or until eggs reach desired doneness. Garnish with parsley.

1 large onion, cut into 3/4-inch pieces
1 large garlic clove, minced
1/4 cup unsalted butter
1 green bell pepper, chopped coarse
1 tablespoon all-purpose flour
3/4 cup beef broth
2 tablespoons bottled beet horseradish
1 tablespoon Worcestershire sauce
1/2 lb cooked corned beef, cut into 3/4-inch cubes (from a 3- to 4-pound corned beef brisket)

Steps:

  • Peel potatoes and cut into 1/2-inch dice. Add potatoes to a large saucepan of boiling water and boil 6 minutes, or until just tender. Drain.
  • In a large non-stick skillet cook onion and garlic in butter over moderate heat, stirring, until onion is golden.
  • Add bell pepper and cook, stirring, 5 minutes. Sprinkle flour over mixture and cook, stirring, 2 minutes. Stir in broth, horseradish, and Worcestershire sauce and simmer, stirring, 2 minutes. Add corned beef, potatoes, and salt and pepper to taste and cook over moderate heat, turning hash, until browned and crisp, about 15 minutes.

2 cups roughly chopped boiled red-skinned potatoes
2 cups diced cooked corned beef
1/4 cup corned beef cooking liquid or chicken broth
1/2 medium yellow onion, grated
1/2 clove garlic, minced
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon whole-grain mustard
1/4 teaspoon dried thyme
Pinch nutmeg
Freshly ground black pepper
1/4 cup plus 1 tablespoon unsalted butter
4 cups cold water
1/2 cup distilled white vinegar
1/2 teaspoon kosher salt
8 large eggs

Steps:

  • In a large bowl, mash 1 cup of the potatoes with a fork. Add the remaining potatoes, corned beef, cooking liquid, onion, garlic, mustard, parsley, thyme, and nutmeg. Season generously with pepper and mix well. Store in the refrigerator overnight or at least 3 hours.
  • Set up for poaching the eggs: Combine the water, vinegar, and salt in a large skillet and bring to a gentle simmer.
  • Preheat a large well-seasoned cast-iron skillet over medium-high heat. Add 1/4 cup of the butter and heat. When the foaming subsides, add the hash mixture and cook, stirring, for 30 seconds. Using a spatula, press the mixture down into a cake the size of the skillet. Cook, shaking the skillet occasionally, until the hash begins to brown, about 4 minutes. Reduce the heat to medium and continue cooking, shaking the skillet to loosen the hash occasionally, until the underside is browned and crusty, about 6 minutes more.
  • To flip the hash, set a plate the size of the skillet on top of the pan. Invert the pan so the hash falls on to the plate as an intact cake. Return the skillet to the medium-high heat; add the remaining 1 tablespoon butter. When the foaming subsides, slide the hash into the skillet cooked-side up. Cook, shaking the skillet occasionally, for 3 minutes. Reduce the heat to medium and cook, shaking the skillet occasionally, until the underside is browned and crispy, about 5 minutes more.
  • While the corned beef hash is cooking, crack an egg into a cup and carefully slide it into the hot poaching liquid. Quickly repeat with all the eggs. Poach the eggs, turning them occasionally with a spoon, until the whites are firm, or to the desired degree of doneness, about 3 to 5 minutes. Using a slotted spoon, remove the eggs and transfer to a kitchen towel. Lightly dab the eggs with the towel to remove any excess water.
  • Divide the hash among 4 plates and top with the poached eggs. Serve immediately.

The funny thing is, it's not the sliced corned beef and cabbage I'm dreaming of, it's the corned beef hash I'm going to be making with the leftovers. Garnish with green onions and a poached egg.

1 ½ pounds potatoes, peeled and quartered
1 ½ pounds cooked corned beef, finely chopped
1 bunch green onions, chopped
salt and ground black pepper to taste
2 cloves garlic, crushed
1 tablespoon butter
¼ cup roasted tomato salsa

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until almost tender but still firm, about 15 minutes. Drain and finely chop.
  • Cook beef in a large cast-iron or non-stick skillet over medium heat until fat begins to render. Stir green onions, salt, and pepper into beef. Add garlic and butter; cook and stir until butter is melted and garlic is fragrant, 1 to 2 minutes.
  • Stir potatoes, salsa, and a pinch of salt into beef mixture. Pat mixture down in the skillet with a spatula and divide hash into 4 sections. Cook, without stirring, until a crust forms on the bottom, about 5 minutes. Flip sections and cook until a crust forms on the bottom again, about 5 minutes more. Repeat cooking and flipping process, flipping every 5 minutes, until hash stays together and has a golden crust, 10 to 15 minutes.

I got this recipe from the food network and then tweeked it a bit. It is quite delicious. A little on the spicy side, so if that doesn't suite you then cut back on the seasoning blend a bit.

2 tablespoons beef broth

Steps:

  • Saute the peppers and red onion in a skillet sprayed with cooking spray just until soft (5-10 minutes.).
