An easy dish to throw together at the last minute. My family loves it and you can substitute chicken or tuna!

1 (12 ounce) package egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
⅓ cup milk
1 (15 ounce) can corned beef hash
1 small onion, diced
salt and pepper to taste
¼ pound processed cheese, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Meanwhile, preheat oven to 375 degrees F (190 degrees C).

  • In a large bowl, mix together soup, milk, corned beef hash, onion, salt, pepper and noodles. Spoon into prepared casserole and sprinkle with cubed cheese.

Number Of Ingredients 17

3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 to 1 1/2 cups whole milk
1/2 cup shredded Gruyere
2 tablespoons Dijon mustard
1/8 teaspoon grated nutmeg
Kosher salt and freshly ground white pepper
2 tablespoons olive oil
1 large shallot, diced
1 pound deli corned beef, sliced 1/4 to 1/2 inch thick and diced
Butter, for the English muffins
2 English muffins, split and lightly toasted
2 tablespoons honey
2 Roma tomatoes, sliced
Kosher salt
4 sunny-side up eggs
2 tablespoons minced chives

Steps:

  • For the Mornay sauce: Add the butter to a medium pot set over medium heat. Add the flour and cook, whisking, until blonde in color, 2 to 3 minutes. Slowly whisk in 1 cup of the milk until combined. Add the Gruyere, mustard and nutmeg and simmer, whisking occasionally, until thick, about 10 minutes. Season with salt and white pepper. Keep warm over low heat, whisking occasionally and adding up to 1/2 cup additional milk to thin if needed, until ready to plate.
  • For the corned beef hash: Heat a medium pan over medium heat. Add the oil and shallots and saute until translucent and slightly golden, about 10 minutes. Add the corned beef and saute until crispy and browned, 5 to 7 minutes more.
  • For serving: Butter the English muffin halves and drizzle with a bit of honey. Sprinkle the tomato slices with salt, then place a couple slices on top of each muffin half, followed by some hash. Top with a sunny-side up egg and ladle Mornay sauce on top. Garnish with minced chives.

  • Heat a large skillet over medium-high heat. Add a tablespoon of oil and the tablespoon of butter. Reduce the heat to medium, add the potatoes, salt and pepper. Cook for about 10 minutes, stirring every couple of minutes.
  • Fill a deep skillet or stock pot with enough water to just cover the eggs when added (2-3" of water) and bring to a gentle boil. Reduce heat so that it's at a gentle simmer. You don't want it boiling and creating too much turbulence.
  • While the hash is cooking you can make the sauce. Add the egg yolks, lemon juice, and Dijon mustard to a blender and blend for 4 minutes until well combined.
  • Spoon hash onto plates, top with 2 poached eggs, and pour or spoon a generous helping of Hollandaise sauce over the top of the eggs. Dig in!

  • For hash: Pour oil into a skillet and place over medium-high heat. Add corned beef and sauté for 2 minutes. Add potatoes and continue to sauté for an additional 5 minutes. Season with salt and pepper. Add remaining hash ingredients and cook together for 7 to 10 minutes. Adjust seasonings and set aside.
  • For hollandaise sauce: Place egg yolks and lemon juice into a stainless steel or heatproof glass bowl and whisk together until the mixture doubles in volume. Place mixture over a pot with simmering water (make sure the water from the pot does not reach the bottom of your bowl) and begin whisking. While whisking, begin to add melted butter, in a slow and steady stream, until fully incorporated and the hollandaise is thick and smooth (the sauce should gradually thicken as you add the butter) Add cayenne and season with salt and pepper. Remove from heat and cover with plastic wrap, directly over the surface and set aside.
  • For poached eggs: Crack each egg into its own ramekin and set aside. Fill a medium pot with about 4 inches of water; add vinegar and bring to a boil. Using a whisk, create a small whirlpool in the water and carefully add eggs, one at a time, into the center of the whirlpool. (it’s best to do this in batches of 2) Cover and remove from heat. Allow eggs to poach for about 4 to 6 minutes before removing with a slotted spoon. Bring water back to a boil and repeat until all eggs have been poached.
  • To assemble: Place an English muffin half onto a plate, cut-side up. Top with a heaping amount of hash followed by a poached egg. Finish with a generous drizzle of hollandaise (if hollandaise has thickened too much while sitting, just stir in chicken stock (1-3 tablespoons) until desired consistency has been reached) and a sprinkle of chives. Serve immediately.
