Corned beef, potatoes and carrots are a delicious combo often served up on St. Patrick's Day. However, this recipe is so good we think you should make it any day of the year. Who wouldn't enjoy tender, spiced beef with steamed root vegetables in a flavorful broth? It's perfect as a cozy dinner in the winter, and corned beef leftovers are perfect for a Rebuen sandwich the next day. This corned beef and potato recipe is perfectly made in the slow cooker because brisket (the cut from which corned beef is made) needs a low and slow cook time to come out meltingly tender. With just 20 minutes of prep, it's easy to come home to slow-cooker corned beef with potatoes and carrots.

6 medium carrots, cut into 1-inch-thick slices (3 cups)
4 medium potatoes, unpeeled, cut into 1-inch pieces (4 cups)
1 large onion, cut into thin wedges
1 corned beef brisket (2 to 2 1/2 lb)
5 to 6 cups water
1/4 teaspoon coarse ground black pepper
6 whole cloves
1 dried bay leaf

Steps:

  • In 5- to 6-quart slow cooker, mix carrots, potatoes and onion.
  • If necessary, cut corned beef brisket to fit into slow cooker; place over vegetables. Add enough of the water to cover. If brisket is packaged with spice packet, add contents of spice packet and omit pepper, cloves and bay leaf. If not, add pepper, cloves and bay leaf.
  • Cover; cook on Low setting 10 to 12 hours.
  • Remove and discard bay leaf. Remove brisket from slow cooker; place on serving platter. Cut brisket into thin slices. With slotted spoon, place vegetables in serving bowl.

1 small onion, minced
3 cloves garlic, minced
½ cup Dijon mustard
2 tablespoons apple cider vinegar
3 bay leaves, crumbled
8 whole black peppercorns, crushed
1 tablespoon pickling salt
1 teaspoon chopped fresh parsley
1 teaspoon celery seed
1 (4 pound) beef brisket
1 cup water
4 carrots, peeled and cut into 1-inch chunks
½ small head cabbage, sliced into strips

Steps:

  • Stir together the onion, garlic, mustard, vinegar, bay leaves, peppercorns, salt, parsley, and celery seed in a bowl. Cover, and refrigerate for 24 hours.
  • Rub the brisket with the mixture, wrap tightly, and refrigerate overnight.
  • To cook the brisket, place it into a slow cooker along with the water. Cover, and cook on low for 5 hours. Add the carrots, and cabbage, and continue cooking until the brisket is tender, about 3 hours more.

Delicious Slow Cooked Corned Beef Silverside, only a few ingredients and tender fall apart meat.

1.5kg Corned Beef Silverside
2 teaspoons Brown Sugar
1 Tablespoon Malt Vinegar
Water to almost cover beef

Steps:

  • Rinse the corned beef well to remove all of the salty brine
  • Add this beef to the slow cooker, then add the brown sugar, vinegar
  • Pour over the water until it almost covers the meat
  • Cover with the slow cooker lid and cook for 7-9 hours on LOW or 4-6 hours on HIGH until the meat is tender and easy to pull apart at the edges
  • Carefully remove from the slow cooker onto a plate, leaving behind the liquid.
  • Slice and serve
  • Enjoy!
  • Store leftovers in the fridge for delicious sandwiches the next day.

1 1/2 kg corned beef (corned silverside)
10 peppercorns
3 bay leaves
2 tablespoons brown sugar
1 onion, chopped

Steps:

  • Take the meat out of it's packaging and rinse under the tap. Place in the crockpot.
  • Add the remaining ingredients and enough water to barely cover the meat. I leave the peppercorns whole.
  • Place on Slow setting and cook for 8 to 8.5 hours or on High setting for 4 to 4.5 hours.
  • When done, remove the meat from the crockpot and wrap in aluminium foil until ready to slice (this will keep your meat moist).
  • Enjoy!

1 (1 1/2-2 kg) corned beef (Silverside)
1 tablespoon balsamic vinegar
2 tablespoons golden syrup (or brown sugar)
1 small orange, quartered (or 1/2 large orange)
6 whole cloves
2 liters water (more if necessary)

Steps:

  • Place all ingredients into a slow cooker or crock pot. Make sure the meat is covered with water (top up if necessary). Cook on low for 8-10 hours or high for 5-6 hours.
  • Or for non crock pot:.
  • First, cover the meat in water (only) and boil for an hour to reduce the salt. Tip the water out then add fresh water and the rest of the ingredients to finish cooking. Bring back to the boil, then reduce heat and simmer for 2-3 hours or until meat is tender.
  • Serve with steamed carrots, broccoli, cauliflower, cabbage etc. with white sauce.

2-3 lbs corned beef brisket with seasonings ((point cut))
1 cup cooking liquid ((I used water))
4 Yukon gold potatoes (quartered)
1/2 lb baby carrots
1/2 head cabbage (quartered)

Steps:

  • Place a trivet (with handles for easy removal) in the inner pot and add 1 cup of water.
  • Put the corned beef brisket with any seasonings on top of the trivet. Close and lock the lid, turning the steam release valve to closed.
  • Press Meat and adjust time to 60 minutes. Press Start/Stop.
  • When cooking cycle has ended, allow for a full 30 minutes of natural pressure release.
  • After pressure is completely released, open the lid and add the potatoes, carrots and cabbage around the roast. Close and lock the lid again, turning the steam release valve to closed.
  • Press Steam and adjust the time down to 4 minutes. Press Start/Stop. (The pressure will come back up quickly because the pot and contents are already hot.)
  • When the cooking cycle is done, do a quick release and lift the whole roast and veggies up out of the pot. Plate together and serve hot!

Steps:

  • Add corned beef brisket and the spices to a slow cooker.
  • Pour 4 cups or enough water over brisket to just cover the whole roast.
  • Add onions, carrots and celery. Cover and slow cook on low for 6 to 8 hours or on high for 4 to 5 hours.
  • Add cabbage the last half hour of cooking time, Cover and continue to cook the remaining 30 minutes.

Steps:

  • Place the onion, carrot, peppercorns, cloves, bay leaves and the brown sugar into the slow cooker.
  • Add the silverside/bottom round on top of the onions and carrots.
  • Add the malt vinegar and fill with water until you completely cover the silverside.
  • Cook on low for 8 hours.
