CORNBREAD MUFFINS WITH A "KICK"

Cornbread Muffins with a

I usually make cornbread muffins as my husband tolerates them better than the traditional iron skillet version (he is not a big cornbread fan). Doesn't make sense to me, but I put these together one evening to go with a pot of chili.

Provided by Enro Gay

Categories     Other Breads

Time 20m

Number Of Ingredients 13

1 1/2 c yellow cornmeal
1 c unbleached all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp ground cumin
1 tsp chili powder
1 c corn kernels (thawed if using frozen)
1 can(s) 4 ounce chopped green chilies (can sub diced jalapeno for more kick)
1 c cheddar cheese, finely shredded
1 large egg, slightly beaten
1/4 c oil of choice
1 c buttermilk, little more or less

Steps:

  • 1. Preheat oven to 400 degrees; spray muffin tins (regular 12-muffin pan) with cooking spray.
  • 2. In a large bowl, mix together the corn meal, flour, baking powder, baking soda, salt, ground cumin and chili powder. To the dry mixture add in the chopped chilies (or jalapenos), corn kernels and the cheddar cheese. Mix together thoroughly.
  • 3. Pour in the egg, oil of choice and the buttermilk (starting with about 1 cup) and stir to combine. You want a fairly thick batter, so add buttermilk to get proper consistency. Scrape bottom of bowl and sides and stir just until thoroughly mixed. Let sit in the bowl for 5 minutes.
  • 4. Spoon the batter equally among the prepared muffin tins; they should be just about full. Place in the preheated oven and bake until golden brown, about 15 - 20 minutes.
  • 5. Remove from the pan immediately and serve or place on cooling rack if not using right away.

Time 33m

1 + 2/3 cup all-purpose flour
2/3 cup stoneground cornmeal ((finely ground))
1.5 TBSP reduced-sodium aluminum-free baking powder* ((see notes))
1/4 tsp salt

2 TBSP oil ((olive, coconut, avocado))
2 large eggs

Steps:

  • Preheat oven to 350 degrees F.
  • Combine flour, cornmeal, baking powder and salt in a medium bowl.
  • In a large bowl, cream together butter and sugar with an electric hand mixer.
  • Add milk and oil and mix on low. Add two slightly beaten eggs to the mixture and whisk or lightly beat to incorporate.

  • Spoon into a greased muffin tin and bake for 18-20 minutes at 350F, using a toothpick to test the center of the muffins for doneness.

JALAPEñO CORNBREAD MUFFINS

Jalapeño Cornbread Muffins image

Chopped jalapeño adds the perfect amount of kick to this delicious cornbread muffin recipe! Paired with the subtle sweetness of honey and brown sugar, these easy cornbread muffins are a wonderful snack and side dish. These muffins are mildly spicy with 1 jalapeño. Feel free to increase or reduce the amount of jalapeño based on your preference.

Provided by Sally

Categories     Side Dish

Time 1h5m

Number Of Ingredients 12

1 cup (120g) cornmeal (fine or medium ground)
1 cup (125g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup (115g) unsalted butter, melted and slightly cooled
2 Tablespoons (30ml) canola or vegetable oil (or melted coconut oil)
1/3 cup (67g) packed light or dark brown sugar
2 Tablespoons (30ml) honey
1 large egg, at room temperature
1 cup (240ml) buttermilk, at room temperature*
1-2 chopped jalapeño peppers*

Steps:

  • Preheat oven to 425°F (218°C). Line a 12-count muffin pan with liners or spray with nonstick spray. This recipe makes about 14 muffins, so there will be a 2nd batch. Set pan aside.
  • Whisk the cornmeal, flour, baking powder, baking soda, and salt together in a large bowl. Set aside. In a medium bowl, whisk the cooled melted butter, oil, brown sugar, and honey together until completely smooth and thick. Then, whisk in the egg until combined. Finally, whisk in the buttermilk. Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the peppers. Avoid overmixing.
  • Spoon batter into muffin liners, filling all the way to the top. Bake for 5 minutes 425°F (218°C) then, keeping the muffins in the oven, reduce heat to 350°F (177°C) and continue baking for another 16-17 minutes. The total time these muffins should be in the oven is around 21-23 minutes. Use a toothpick to test. If it comes out clean, the muffins are done.
  • Remove muffins from the oven and allow to cool in the pan for 5-10 minutes before enjoying. Store leftovers in an airtight container at room temperature or in the refrigerator for up to 1 week.

EASY MEXICAN CORNBREAD {WITH JIFFY CORN MUFFIN MIX}

EASY Mexican Cornbread {with Jiffy Corn Muffin Mix} image

Get all the homemade flavor with minimal effort with this quick and easy loaded Jiffy Mexican Cornbread recipe!

Provided by Alexa Blay

Categories     Side Dishes

Time 45m

Number Of Ingredients 8

2 eggs
2 Tablespoons vegetable oil
1/2 cup sour cream
1 (14.75 ounce) can cream style corn
1 (4 ounce) can green chiles (I used the Old El Paso brand)
1 cup freshly shredded sharp cheddar cheese*
2 (8.5 ounce) boxes Jiffy Corn Muffin Mix
1 medium jalapeno (optional - for topping, sliced)**

Steps:

  • Preheat the oven to 400 F (204 C). Lightly coat a nonstick 8 x 8 pan with cooking spray.
  • In a large mixing bowl, whisk the eggs and oil together. Add in the sour cream, cream style corn, diced chiles, and most of the cheddar cheese (save a pinch of the cheese if you want to sprinkle some on top) and mix until combined. Add in the 2 boxes of Jiffy Corn Muffin Mix and stir until the mix is just wet. Don't over mix it. The batter should look slightly clumpy.
  • Pour the batter into the pan, place the sliced jalapenos on top of the batter and bake for about 40 - 45 minutes. You can test to see if it's done by inserting a toothpick into the center. If the toothpick comes out clean, or with just a few crumbs, it's done. If it comes out a bit wet, put the cornbread back in the oven for another few minutes, or until a toothpick comes out clean.

CORNBREAD MUFFINS

Cornbread Muffins image

Ubiquitous on southern tables, cornbread is a versatile side dish that can be cut into pieces from a cast-iron skillet or, as done in this recipe, portioned as individual muffins. This recipe by Alexander Smalls, a chef, author, restaurateur and former opera singer, uses finely ground cornmeal and two types of milk to create a savory batter, which also gets a kick from coriander. Fresh corn kernels add texture to the dense quickbread. Serve warm alongside a spread of vegetables or a meat dish, with plenty of butter.

Time 25m

Yield 6 muffins

Number Of Ingredients 12

Nonstick cooking spray (optional)
1/2 cup/70 grams fine cornmeal, preferably white (see Tip)
1/2 cup/64 grams all-purpose flour
3 tablespoons light brown sugar
1 1/2 teaspoons ground coriander
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 cup/60 milliliters whole milk
1/4 cup/60 milliliters buttermilk
2 tablespoons vegetable oil
2 large eggs
3/4 cup/90 grams fresh or thawed frozen corn kernels

Steps:

  • Heat oven to 400 degrees. Line 6 cups of a muffin pan with paper liners or coat with nonstick spray.
  • In a large bowl, whisk together the cornmeal, flour, brown sugar, coriander, baking powder and salt. Whisk in the milk, buttermilk and oil, then whisk in the eggs until the batter is smooth. Stir in the corn until well combined. Divide the batter among the prepared muffin cups. (The cups will be full.)
  • Bake until a toothpick inserted into the center of a muffin comes out clean, 15 to 17 minutes. Serve warm.

  • Preheat the oven to 350°F degrees. Line a muffin pan with paper liners or spray with non-stick cooking spray. (I prefer to use non-stick cooking spray so the muffins get nice and crisp on the edges.)
  • In a medium bowl, break up the eggs with a whisk. Whisk in the honey, and then the milk. Set aside.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add the milk mixture and the melted butter to the dry ingredients. Whisk until just blended. Do not overmix; it's okay if there are a few lumps. Spoon the batter evenly into the prepared muffin pan, filling each cup about 3/4 full. Bake for 17 to 20 minutes, or until the tops are set and golden. (Note that the muffins will not dome.) Cool the muffins for a few minutes in the pan, then serve warm.
  • Note: If you'd prefer to make this as cornbread rather than muffins, spray an 8-inch square pan with non-stick cooking spray and bake at 350 degrees for 25 to 30 minutes.
